Earlier this week (4am, Tuesday morning), Brian happened to catch the lunar eclipse. I decided I liked sleeping better.

Let them eat cake

New recipe from Cooking Light! We tried this over the weekend... delicious!!

Blueberry Pound Cake

2 c. granulated sugar
1/2 c. light butter/margarine, softened
4 oz. lowfat cream cheese, softened
3 large eggs
1 large egg white
3 c. flour, divided

2 c. blueberries, fresh or frozen
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 (8 oz.) carton lemon lowfat yogurt
2 tsp. vanilla extract
1/2 c. powdered sugar
4 tsp. lemon juice

  1. Beat first 3 ingredients at medium speed of a mixer until well-blended (about 5 minutes).
  2. Add eggs and egg white, 1 at a time, beating well after each addition.
  3. Measure flour into bowl.
  4. Take 2 tablespoons flour and combine with blueberries in a small bowl - toss well.
  5. Combine remaining flour, baking powder, baking soda, and salt.
  6. Add flour mixture to sugar/egg mixture alternately with yogurt, beginning and ending with flour mixture.
  7. Fold in blueberry mixture and vanilla.
  8. Pour cake batter into a 10" tube pan or bundt pan coated with cooking spray.
  9. Bake at 350F for 1 hour and 10 minutes, or until a toothpick inserted in center comes out clean.
  10. Cool cake in pan 10 minutes; remove from pan.
  11. Combine powdered sugar and lemon juice in a small bowl; drizzle over warm cake.
  12. Cut with a serrated knife.

Let them use cake

We had a small shower today for a girl at work who's expecting her first baby. One of my co-workers made this adorable cake out of diapers and pacifiers, etc. So cute!

Do fish ever get thirsty?

Brian got a new hobby and a 25-gallon aquarium for his birthday. He's taking his time to research various aquascapes and freshwater fish.

Any ideas or suggestions?

Mary, Mary, quite contrary...

I picked up a unique house plant at Trader Joe's last week... a Kalanchoe luciae - or as we like to call it, a paddle plant.

Elvis has left the building...

And we spotted him at the gas station!!
