I booked marked this recipe from Ann’s blog a long time ago and finally try them out during summer when there were plenty of berries in my fridge. I baked them into cupcakes and gave them to two of my ex-colleagues. They like it a lot and told me that their family ate them all in no time. I am glad that they like it and thanks Ann for sharing the recipe.

Vanilla Cupcakes
I am back from my super long vacations. First I would like to apologize for not replying to all your comments. I will get to it soon. It was great spending time with my family, friends, ex-classmates which I have not met for over 30 years and also some blogging friends. It was nice meeting up with all of you.
I am having so many backlogs in my posting. I baked these cupcakes over in 2012 for Carlos office Halloween party. Thank God I recorded all my recipes so that I don’t forget. His department Halloween theme was Bumble Bee so I decorated cupcakes to fit the theme. The cupcakes were light, fluffy and really moist. Carlos said these cupcakes were gone within minutes. I used my previous recipe but I am posting it here again. As for the frosting you can decorate it with any type of frosting you like.

Vanilla Cupcakes with Raspberry Buttercream Frosting
I am babysitting my friend Emily little girl this month and so happen Isabel (Bella) birthday was last week. I decided to bake her some cupcakes. I made a batch of vanilla cupcakes but with different frosting. I frosted her cupcakes with Cotton Candy flavor while for the adults I made the raspberry frosting. I think we like the latter better but for Bella she prefers the Cotton Candy frosting.

Red Velvet Cupcakes with Mascarpone Cheese Frosting
Love is definitely in the air and you can see many bloggers posting all kinds of dessert for the occasion. That got me motivated to bake something too. This homemade Valentine’s treats are the sweetest way to say ‘I Love You’ to everyone special in your life and not only that as I am sure your valentine will appreciate the effort you’ve put into it. Happy Valentine's Day Everyone!!
Ingredients:
1 stick/113 gram soft butter
3/4 cup sugar
2 eggs
1/2 cup buttermilk
1 tsp vanilla
1/2 tsp red gel paste food coloring
1 1/4 cups cake flour
1/2 tsp baking powder
1/4 tsp salt
1 tbsp dark unsweetened cocoa powder
1/2 tsp baking soda
1 ½ tsp distilled white vinegar
