    Delicious! I love salads and always looking for new ways to make them.I used mixed greens and also added some chicken to give it some protein, i added some tomato also as i ate it as my main meal.
    i did not add pine nuts, because i did not have any.
    I found this very versatile in being able to add or subtract vegetables.
    Made for the July 2020 Cold dish challenge.

    Thanks for the comment on my Ultimate Meaty Spaghetti Sauce. I hope you had the opportunity to try it. And it tastes delicious without mushrooms, too! The mushrooms and olives were always 'luxury' ingredients at our home growing up; we were a low-income family. So oftentimes, Mom would improvise the sauce and use what she had on hand. The results were always delicious! I do the same thing now; I've made it plenty of times with missing or substituted ingredients. You can't go wrong - that's what's so fun about cooking!     Thanks for being a fan of my My Favorite Mexican Rice. It can easily be doubled or tripled, just depends on the size of your pot ;-)
