    Hi there, pleased to meet you. I am blown away by your list of crafts, I can barely sew a button on, lol. I wish we did have the right respect and appreciation for all those "homely" talents that our mothers and grandmothers had. Thankfully I can cook and love making up new recipes. If I remember I try to take a pic and post them here. You will see I transitioned from being a sometimes meat eater to being totally vegetarian. Keep happy and healthy xxxx

    Southern Fried Salmon Patties

    About This Recipe

    "Salmon patties are quick and easy. I got this recipe from my son's babysitter many years ago. My son is now 20 and we still eat these at least a few times a month. These are very moist when done."

    Ingredients

    1 (14 3/4 ounce) canned salmon


    1/4 cup onion, finely chopped


    1/4 cup cornmeal


    1/4 cup flour


    1 egg


    3 tablespoons mayonnaise

    Directions

    1. Open salmon and drain thoroughly. Place drained salmon in mixing bowl and flake evenly with a fork.


    2. Add onion, corn meal, flour, mayonnaise, and egg. Stir until well blended.


    3. Shape the mixture into patties about the size of an average burger or less.


    4. Cook in oil in skillet over medium heat until browned on each side. Turn once while frying.


    5. Note: The mayonnaise helps the patties hold their shape and keeps them from being too dry.

    Crab Cakes:
    Time 30mn.
    Serves 6




    Ingredients
    Crab Cakes:
    Ingredients
    6 ounces claw meat
    3 ounces bread crumbs
    3 green onions, diced
    1 tablespoon Old Bay seasoning
    2 whole eggs
    1 pound lump crab meat


    How to make it
    Directions
    Crab Cake Sauce
    1 teaspoon olive oil
    1 roasted red pepper
    7 fresh basil leaves
    1 cup mayonnaise
    1 lemon
    Salt and freshly ground black pepper
    Garlic, to taste
    For the crab cakes:
    Mix all ingredients together, except for the lump crabmeat. Fold in lump crabmeat. Portion crab cakes using a round cookie cutter into 4 to 6 servings. Sear crab cakes in saute pan for 2 minute on each side.
    For the sauce:
    Saute roasted red pepper and basil leaves in olive oil until the basil leaves become wilted. Using a food processor, combine the sauteed pepper and basil leaves with the mayonnaise and lemon. Add salt, pepper and garlic to taste while processing.
    Serve with crab cakes.
