How Do I Make - Egg Rolls

- 1lb ground pork(not sausage) shopping list
- 1 bag Cole Slaw Mix shopping list
- 3-4 cloves garlic, minced shopping list
- 1/2 bag bean sprouts(I think this would be about 4oz or so) shopping list
- 4-6 green onions, sliced(depending on size of each onion :) shopping list
- 2T soy sauce(unless you are in the south and can get Dale's, then get that ;) shopping list
- 2t Chinese 5 spice blend shopping list
- dash of red pepper flakes or hot sauce shopping list
- dash sesame oil(optional, but it's a huge flavor boost---a couple tsp sesame seeds can be toasted and subbed, too) shopping list
- 1-2t each salt and fresh ground pepper(more to taste, PLEASE taste the filling before assembling the egg rolls...add seasonings as desired and for taste) shopping list
- 1 package egg roll wrappers(15-20) shopping list
- peanut oil for frying shopping list
How to make it
- Brown pork in small amount of oil adding garlic and green onions about halfway through cooking.
- Once done, add cabbage mix and cook about 3-5 minutes until cabbage cooks down and is tender.
- Add remaining ingredients(other than the wrappers and frying oil, of course ;) and continue to cook on low heat another few minutes to blend flavor.
- Again, PLEASE taste filling mixture before proceeding...egg rolls can be sooooooo good, but if you are just a bit short on seasoning, they will be very bland. If you aren't afraid of MSG, add a dash of it, too! :)
- Egg Rolls aren't hard to roll, but if you've never done it, it can be intimidating. I will try to give the best directions I can, and I am including photos, but if there are any questions, please ask!
- Place one egg roll wrapper in front of you, with a corner facing you directly.
- Put several T filling about 1 inch in front of that corner and extend toward both edges. See Photo
- Fold close corner up and just over filling. See Photo
- Tuck and fold one end over corner that just covered filling, then repeat with other side. See Photo
- Then, just roll the whole thing away from you until you get to end. See Photo
- Just at the end, before folding final corner over roll, WET edge of that corner then, fold over. See Photo
- Repeat with remaining filling and wrappers.
- Now, you can freeze these, as is, by wrapping tightly in freezer paper or cling and placing in good freezer bag.
- Or, heat about 3-4 inches peanut oil in dutch oven(I use my cast iron, of course ;), to about 350 degrees and fry 2-3 at a time, about 2 minutes on each side, or until golden brown. See Photo
- Drain on brown paper or paper towels
- Serve with various dipping sauces, like Hot Chinese Mustard, Sweet and Hot Thai Chili Sauce, soy, sweet and sour, etc.
