Cornflakes Chiwada 【印式花生玉米片小零食】


When I was living in India years back, I liked bringing some spicy snacks from the supermarket, one of them was similar to this peanut cornflakes snack that I make today.

Trader Joe's organic cornflakes is very suitable to make this snack, since it is low in sugar. I bought a box of it when I last shopped for my grocery and asked for some fresh curry leaves from my neighbor to make this delicious snack, it is such a good treat.

在印度居住的时候非常喜欢到超市买一些香辣小零嘴吃,其中就有这款花生玉米片小零食。

前几天在Trader Joe's 看见低糖版的有机玉米片,很适合拿来做这款零食,买一盒回家,再向隔壁邻居要来一点新鲜的咖喱叶,几分钟就做出好吃的小零食,真是太棒了。

【印式炸豆圈】Medu Vada/Vadai (Deep Fried Lentil Donuts)



小时候每个午后都会有个老人推着脚踏车来到住宅区叫卖。脚踏车后座有个超大的玻璃箱子,里边是一格一格的各式各样的印度零食小吃,有花生,有粗的细的油炸香辣面条。给两毛钱老人会拿一张报纸,卷成火炬状,然后让你选格子里的零嘴往里头装,直到“火炬”装满为止。

这些零嘴都是素的,大部分是豆粉或豆子做成的香口零食,除了脆口的炸面条,老人也卖这个叫Vadai外层松脆,内部软嫩的像甜甜圈的糕点。

以前一直不知道它是什么材料做的,后来问了朋友,查了些食谱才发现这个饼居然是全豆做成的,不必小苏打,也没有面粉,自自然然的全由一个豆子,完成了外脆内嫩的好东西。一想到在没有搅拌器的时代,用石磨慢慢的磨出豆糊,然后在没有小苏打和膨化剂的帮助下,做出好吃爽口的小食,我就觉得非常的感动。

When I was a student, there was this old Indian man who goes around selling deep fried snacks or"muruku" back home. He has a big wooden/glass box attached to the back of his bicycle, where you could find small compartments that filled with different kinds of savory tidbits.

One of them is a little fried bean cake shaped like a mini donut, it is called "vadai", I love that stuff and did not know what it was made off until I moved to stay in India.

I was thrilled to learn that this snack is made of only legume, a snack higher in protein I presume. It goes very well with Coconut Chutney and can easily turn into Dahi Vada later.

【爆浆脆酥球】Golgappa/Pani Puri



今天我们来做电影《摔跤吧,爸爸》里面女主爱吃的脆球饼,也是我家LD特别爱吃的一款点心。这种空心球,电影里叫 Golgappa,它还有另外一个名字叫 Pani Puri (पानी पूरी)Pani 的意思是水,指的应该是灌入的香料水;Puri 指的是炸好的空心小面球。这种小球球可是印度街头热卖的小吃,只要有街头小吃摊的地方,就有它。

它的吃法是在油炸的空心面球里塞入土豆泥或者煮软的豆子,放入一点的酸子沾酱薄荷沾酱再灌入辛辣的绿色香料水,一口放进嘴里咬破,口感味道特别丰富,是个很特别的味觉体验!

Years back, when I was still dating my husband, he brought me to a roadside stall in Delhi and brought 6 tiny puffs full of spice water and seasonings. That was my first encounter with this interesting snack called Golgappa/Pani puri.

When I popped the puff into my mouth the very first time, the burst of flavors and the combination of liquid and crunchiness of the fried puris is really a very unique experience.

Since there is no roadside stall selling this snack here in the United States, and the local Indian supermarkets are selling freshly made puri puffs for this snack, I have learnt to make it at home, and have since perfected the recipe.

【素炸三明治】Stuffed Bread Pakora


最近因为Covid-19 冠状病毒肆虐,州长两周前就下了禁足令,好多餐厅和超市都暂时关门了。呆在家里没事,就做点想做很久的小点心。

以前在印度的时候,租住的小区门口有个小咖啡馆,这款素炸三明治是他们家的招牌点心,很多人排队买来吃,俊爹也很喜欢。

很多年没吃这款小点心了,材料家里都有,就给因在家上班一直开会的男主人做一次吧!

We have been ordered to Stay-At-Home by the authority to combat spreading of COVID-19,  since staying home means I have to make three meals a day. I decided to make a few dishes that I have been wanting to make for a long time.

This Stuffed Bread Pakora is one of them, we used to order this pakora as late afternoon snack at a small cafe near our rented apartment in Bangalore, it has been years since I tasted it.

我每年排灯节前只要不太忙都会做几款传统的印度糕点或小点心过节。今年做了这款米豆脆条和鹰嘴豆甜球。

I have always make a point to make some traditional treats for Diwali every year during the Diwali season. This year it is Ribbon Pakora and Besan Ladoo.

Onion Pakora 【印式炸洋葱】


印式炸洋葱是我们家最喜欢的小吃之一,做法很简单,也非常美味。

冷天时煮上一小锅香料奶茶,吃几块酥炸洋葱(丸),真的很惬意满足~~

Onion Pakora/Pakoda is one of our favorite snacks in cold winter days, it is easy to make and very delicious to go with a cup of hot Masala Chai. 

A sure effective way to warm the body and to satisfy the stomach!

Jelebi 【印度油炸甜甜圈】


I have made a point to make one or two types of Indian sweets every year during the Diwali time in the past years. 

This year, it is Jelebi, a type of sweet similar to funnel cakes, it is just much smaller in size comparing to funnel cake.  It is made by deep-frying the batter in circular shapes and then soaked in sugar syrup until it is all coated with syrup. 

This sweet is particularly popular in the Northern part of Indian. it can be served warm or cold. 

过去十年间只要我工作不是特别忙碌,我都会在排灯节(Diwali)前自己做一两种印式甜点过节拜拜用。

今年排灯节前两天刚好我不上班,就做了这款比较复杂的油炸甜甜圈Jelebi。这款甜点材料其实很简单,却是非常难做的一个甜点,两天里我做了三次才算是比较满意了。它的难度在于熬制糖浆的温度和炸圈圈时的手势,完全的纯手艺要求呢!

这道甜点可以冷热两吃,各有各的风味。

Aam Papad/Mango Fruit Roll-Ups 【日晒芒果卷】


The weather forecast is showing a 3 day continuation of hot sunny days, I make sure to take advantage of the power of nature and sun-dried a couple of snacks for us. 

The Ataulfo mangoes I bought this time were not very sweet, maybe it is still early in the season, together with the Sun-dried Sweet Potatoes I posted earlier, I also made this Mango roll ups.

It turned out so tasty the whole family likes it!

今年美东的夏天来的比较晚,一直到上一周天气才升温到九十华氏度以上。上周看见气象预测里说了会有连续三天的九十度高温艳阳天,正适合利用阳光进行食物脱水和日晒。  

于是和之前上过帖子的日晒红薯干一起,我还晒了这款日晒芒果卷,两天半晒出QQ甜甜很有嚼劲的芒果卷,装瓶密封就是很健康又美味的零食啦!

【硬麦蒸糕】Rava/Rawa Idli (Semolina Steamed Cake)


Semolina 是把麦磨成面粉的过程中产生的一种类似胚芽的颗粒,一般用来做意大利面,蛋糕,和很多其他的糕点。

今天做的这个硬麦蒸糕是一个营养丰富,味道很好的小点心,可以当早餐,或下午茶。也是素食者可以考虑的一个食谱喔!

Semolina is the coarse wheat middling of durum wheat -- a kind of hard wheat, it is normally used to make pasta in the west.

It is also used a lot in India to make different kind of Indian snacks such as this Rava Idli, Rava dosa, Kesari (A kind of dessert.).

Rava Idli is easy to make, very healthy and tasty!

Aloo Tikki (Potato Cutlets) 【马铃薯块】


We had a Chaat party over the weekend, our friend Iena helped boiled some potatoes for the Papdi Chaat and left me with two.

Since my husband N has been in the Chaat mood lately, I turned the potatoes into these cutlets, N enjoyed it in the afternoon with a cuppa hot Chai.

上周末我们家和几个朋友聚在一起做Chaat派对,Chaat是印度街头小点心的统称,用很多不同的脆饼,土豆,酱料混合配搭而成。

派对上用的土豆还剩下两只,我今天就拿来做了这个马铃薯块,下午就着热热的Masala chai吃,很是不错!

Mumbai Tawa Pulao 【孟买平底锅炒饭】



This pulao is made in the same Tawa/frying pan that the hawker prepared the world famous snack-- Pav Bhaji in Mumbai, with the same spices/masala. It has the fragrant of Pav Bhaji yet is so much more filling.

I made this for hubby's classmate gathering, it turned out so well and they finished it all!



“Tawa”在印度语里是”平底锅“的意思,所以此款炒饭全名的意思就是平底锅炒饭。它的名字来源是孟买街边小贩在制作有名的小吃“Pav Bhaji”(蔬菜和煎面包)的平底锅上用相同的香料和蔬菜加米饭炒制而成的。它即带有Pav Bhaji的香气,又比小吃更饱肚。渐渐地名气也和Pav Bhaji不相上下了。

俊爸前几天有几个大学同学从瑞士来探望我们,他约上了几个在美的老同学聚餐。我就做了这款炒饭和几道家常菜。炒饭很是受欢迎,一大锅的吃得一点都不留哦!

Samosa (Indian Fried Pastry) 【印度咖喱角】


Samosa is a stuffed pastry, a common snack in India, we have a similar version in Malaysia called "curry puff" made in different shape, but tasting as good. Nothing is more enjoyable to have some hot samosa with a cup of tea in a cold, cozy afternoon.

A few friends decided to come over and visit this weekend, I made this samosa for snack, and our friends love it very much!

Samosa也称为咖喱角,是印度和南亚地区很有名的小食。在印度定居时每逢下雨天我们都喜欢来一杯热茶,再加上两只热辣辣炸得酥脆的咖喱角,一边享用一边赏雨,非常的悠闲惬意。

今天俊爹几个大学朋友和家人约好一起来看望俊爹,我趁俊宝和俊爹午觉的时候做了这个咖喱角,等下午朋友们来了一起喝茶吃咖喱角

【孟买小吃】 Pav Bhaji (Mumbai Pav Bhaji)



Pav Bhaji就字面上来翻译直接就是蔬菜和包子一起吃的意思,是印度中部孟买一带的小食。刚到印度的时候我一直以为pav (念pao)是中国包子翻译过去的,一直很好奇到底一个中国包子的名字是怎么传到印度去的呢?

后来一位孟买的朋友解释说Pav在Marathi(印度中部语文)的意思是四分之一的意思,以前在印度面包店做的小餐包一般都是四个成一块的。因为Pav Bhaji不是正餐,是小点,所以一般卖的时候就是一个小餐包,一点蔬菜沾着吃,所以就有了四分之一餐包和蔬菜(Pav Bhaji)的叫法了。

Pav Bhaji literally means sweet bread and vegetable curry, it is a fast food dish native to Maharashtrians, it is also very famous in most of the cities in india.

A very good snack over hot tea in the afternoon!

Oven Baked Chicken Tikka


Chicken Tikka is my favourite dish to make for party, all I need to do is marinate the chicken day before, and put it into oven 45 minutes before my guest arrive, it spares me plenty of time to prepare other dishes during the party day.

Not to mention it taste great. I could also turn the leftover it into Chicken tikka masala or butter chicken the next day!! Talking about time saving and versatility!

【油饼与土豆马萨拉】Poori Bhaji (Fried Flat bread with Potato Curry)


土豆咖喱/马萨拉是印度街边摊卖油饼的标配。是很多人乘搭长途火车或巴士时休息站必点的点心。也是我家LD非常喜欢的一道小吃。

搬到美国后我鲜少炸东西,昨天家里起了油锅做柠檬鸡,就索性顺便做了俊爹喜欢的这款油饼,就连俊宝都吃了两块呢!

Poori was the very first Indian bread that caught my attention and fancy, it was from there that I venture into making different types of Indian Rotis and Parathas.

The potato curry that I made today is the standard serving with Puri in road side stalls in India, hubby's all time favourite!

The Best of Both Worlds -- Home Made Soy Milk and Soy Bean Idli



I recently joined a chat-room formed by a group of Chinese-Indian couples, and came to know that many of them who stayed in China have problem finding Urad dal (small black bean). The main ingredient for Idli the south Indian Steamed Rice cake.

So I came up with the idea to make this steam cake from Soy and black bean, the common legumes used in China to make soy milk and tofu.

This way I could have my soy milk and my idli at the same time!

Masala Dosa/மசால் தோசை【米豆糊馅饼】


Masala Dosa (மசால் தோசை) is a very famous snack/breakfast in Southern part of India.

When I made homemade Idli/Dosa batter at home, I will use it for Idli the first two days as the batter is at its fluffiest form and is less sourish. Dosa/Tosai or Uttapam will be on the menu third day onward when the batter turned a little more sourish and less fluffy.

这款馅饼/Masala Dosa是印度南部的小食,有好几位网友写信问我会不会做,刚好前几天做了一罐的米豆蒸糕/米豆煎饼面今天就做了这款馅饼做早饭。

【印度米豆发糕】Idli/Idly (Idli/Dosa Batter recipe)


这个米豆蒸糕是我在印度的时候很喜欢的一个早餐,健康营养,全天然发酵的做法对肠胃非常的好,很容易消化,是素食很好的一个选择。发酵过的米豆糊带有天然的酵菌,容易消化,对肠胃很好的哦!

Idli used to be my breakfast everyday for a long time when I first visited India, I find it very light and nutritious. I was also amazed by the way the dough was prepared when I started preparing it at home, it is so natural and simple, yet the result is so intriguing.

Homemade idli/Dosa dough is so useful and could be made into different kind of snacks easily, the mix could be used for :Dosa,Uttapam, Besan Uttapam and Fried Idli.

Boondi Raita (Chick Pea Crisp in Yogurt)


Raita is a good thing to have during summer, especially summer in India.

There are many ways to prepare raita and this is one of them. It is easy to prepare with ready made Boondi from the shop, it is also a good side dish to go with rice or Chapati.
