I'll be spending my lunch hour at the delightful TC's Rib Crib, a fabulously homey place owned and operated by a family of Louisiana transplants. They'd been driven here by Katrina, so eating there feels like a good cause, too.
It doesn't hurt that their BBQ kicks butt. Pork butt. With lots of sauce.

Oh yeah. I had cow for lunch. Spaghetti. Lovin' it. Having tacos tonight. Wish I had planned ahead and had a steak thawed out.

I had steak last night. Ribeyes on the grill. So very tasty.

We got a great tip from Cook's Illustrated about aging meat at home. If you get beef at the store and want to dry-age it a little, unwrap it, set in on a wire cooling rack set on a paper-towel-lined cookie sheet and put it on the bottom shelf of the fridge for up to three days before cooking.
It really works! We've noticed a huge difference in tenderness even after one day of aging.
I was wondering if someone was going to bring up Steak and blow job day. I couldn't remember when it was. Is it the 14th or the 16th?
Either way, it seems as if one of you was celebrating ;)
