  1. Om nom nom: Chocolate Mint Cookies

    Whenever Kerwyn returns his empty container to me, it means its time to bake so that he has something to munch in hall! This time round, I decided to bake...
    I tried baking chocolate mint cookies a long long time ago but the mint taste didn't come out. Tried a different recipe this time round, and the mint taste is there but not too strong! It's a lil chewy, not too dry which makes you wanna have more! Mum said it was too sweet for her but so I guess I'll cut down the sugar next time round.

    Sweetness is alright for me. If anything were to resemble the texture it would be Subway cookies! The mint flavour only comes out after a little bit of chewing, but that could be because I have a flu. It isn't too strong and complements the chocolate really well! No wonder people make chocolate chip and mint ice creams to go together!



    Do cool the cookies completely before coating them with chocolate. Double boil the chocolate and butter, stirring until chocolate is smooth. Mix in the peppermint extract and the chocolate dip is ready!

    Don't be fooled by the appearance of the cookies! I know they don't exactly look appetizing but they're really yummy! :D

    As my family and Kerwyn's family really loved the blueberry cheesecake that I baked, I decided to share the recipe!
    Mum's birthday cake
    Some tips for baking cheesecake:
    1. Make sure the cream cheese mixture is really well-beaten so that there's no clumps. It makes the cake softer.
    2. Bake in a water bath - Fill water in tart moulds and place ~4 of them in the oven. This is a tip that I read online and it helps to make the texture more fluffy. Apparently, it seems to prevent the top of the cake from cracking too. I'll experiment this method with other cakes and see if its helps.
    The cake was really yummy! It's so delicious that Kerwyn said it's starbucks standard! Hee~
    It's true! The blueberries we got were really sweet on their own. The jam also adds to the great taste combination. Eating the cheescake when chilled is the best. Since the slices are pretty thin, it's not as "jelat" as other cheesecakes. Furthermore, the cheese, being Philadelphia cheese cannot go wrong. The base of the cake is digestives, which makes gives another texture to it. I wonder how it'll taste with Oreos!

    What's a birthday without a cake isn't it? Every year, I would bake a cake for my boy to celebrate his birthday because I can add a personal touch to it as well as customizing it to his taste because he's a chocolate lover. This makes the cake unique and one of its kind in this world! So... it's all the more special! (:
    Have you eaten cakes that have a crispy layer? I really like the wafer alike layer in cakes so I decided to do it to make this chocolate cake more special.


    My recipe is a combination of several ones that I got online because I can't find a recipe that fulfills what I have in mind.

    Took at least an hour for the cake to bake because I did a wrong step which caused the top to crack! ): However, the cake tasted really good. My mum commented that this is a higher standard cake than the ones I usually make. My brother loved it! My boy wanted more after just eating one mouth! Hee~

    As the saying goes "The way to a man's heart, is through his stomach". And definitely true for me! Luckily, Smallhello is a wonderful cook as well as an avid baker! Western, Chinese, Japanese styles of vegetarian cooking, cookies, cakes, pastries are also under her belt! We are by no means lacking in terms of gastronomical delight in our lives.


    Since we seldom see each other during school term, she tries her best to cook for me every weekend! And even though I always suggest the same old dishes, she insists on cooking new ones! Some of the "repeated" dishes are...
    Fried rice and Bee Tai Mak
    A combination of dishes which increases your appetite for rice! Breaded fried fish on the top left, tom yum on the top right, marinated chicken on the bottom left and the last one a combination of fish slices, egg tofu, and curry vegetables!


    Some of the more epic dishes whipped up on special events like monthsaries include...
    A lot of hard work and creativity put into a Japanese set meal!
    Pizza and Potato Gratin

    I have a role to play in that pizza too! Isn't it hard to believe that all these dishes are actually vegetarian? Well they are, and pretty delicious too! Since young she has been obligated to cook, and that's why she has experience in this area, and she enjoys it too. As mentioned, she doesn't just enjoy cooking but baking too! She continuously searches for recipes online and modifies it to suit my taste. Birthdays, anniversaries, or even when I just have a craving, a cake, cookie is definitely going to show up.

    All these goodies only come with one undesirable side effect - weight gain! Nevertheless I'm super lucky to have a capable chef/baker/patissier in my life! Om nom nom will never be a problem =)
