Meal Plan Monday


Well this week we are kinda flying by the seat of our pants. We had some car repairs so we are eating from our pantry and freezer. Then our church small group blessed us with a delivery of meat, cheese, milk, rice, beans and more! God is so faithful.
Hillbilly Housewife 30 minutes Rolls
Monday: Ham, mashed potatoes, veggie, homemade dinner rolls & snickers cake
Tuesday: King ranch chicken casserole with garden salad
Wednesday: Beans, Rice & Cornbread
Thursday: Sweet & Sour pork, egg drop soup with egg rolls
Friday: Hawaiian Ham Sandwiches (from Monday's left overs), Homemade oven fries, corn
Saturday: Bean Tostadas with corn
Sunday: Left-overs
garden fresh lettuce & yard eggs
Finally, we are eagerly awaiting the harvest from the garden. We are slowly starting to get lettuce and we have abundant radishes but I cannot wait for our turnips to be read to eat!

Menu Plan Monday or Tuesday!

Please join us for feed your family for $5 on Fridays in September!

From reading the Amish Money Makeover I am enthusiastically making a few changes to our grocery shopping habits. One thing I have decided to stop doing is buying the Clearance Bread even though we never pay more then .90 per loaf . I can make bread so much healthier bread more cheaply at home. I should gain about $120/year for fresh veggies & fruits!

Monday- Rosemary White Bean Soup & Bread
Tuesday - Tuna Fish Casserole and sweet bread
Wednesday- Beans, Rice & Cornbread
Thursday - Mexican Lasagna
Friday - Homemade Pizza
Saturday - Meatball Sandwich

All of the meals listed above were made from items in our pantry. I am trying to avoid an official grocery trip over the next couple of weeks and eating from our pantry. I would like us to start getting to the "bottom" of our freezer and pantry each month. Thus, living the proverb waste not want not!

Right now, I am getting ready for a monthly shopping trip at the end of this month where we play see how quickly & how  much stuff you stuff into a Chevy Suburban along with 5 kids & a husband.

Sunday - Super easy Duggar Mexican Frito Pies


Slow Simmered Green Beans
from Gooseberry Patch's Slow Cooker Meals
  • 1 1/2 pounds of green beans
  • 1 stalk of celery diced
  • 1/4 cup onion chopped
  • 1/4 cup margarine sliced
  • 4 beef bouillon cubes
  • 1 tablespoon sugar
  • 1 teaspoon garlic salt (I use 2 teaspoons of minced garlic)
  • 1/4 t dill seed (I didn't use it because we didn't have it)

Place ingredients in a slow cooker ; stir to mix. Cover and cook on low setting for 3-4 hours it serves 6 to 8. But these green beans are so good I'm going to start cooking two times as much!  To find out what other meal planning maniacs are up to check out Orgjukies Menu plan Monday.

Tuesday - Sweet & Sour Chicken with egg fried rice & egg rolls
Wednesday- Beans, Rice & Cornbread
Thursday - Out to Dinner for Mama's Birthday
Friday - Simple Bean & Cheese Tostada with Mexican rice and corn
Saturday - Sloppy Joe's, Fruit Salad & fries

So my husband has requested we eat more fish. So you will see more fish worked into out meal plan here at Rooster even though fish is not budget friendly. If you have any good inexpensive fish recipes please leave a comment with a link or the recipe. Thank you all so much!

Menu Plan Monday: Frugal Spaghetti Sauce


Monday: Dinner at the Coles!
Tuesday:  Rosemary Bean Soup w/ bread & salad
Wednesday: Eating out in Houston
Thursday:Spaghetti & meatballs,green beans,garlic bread
Friday: bean & cheese burritos, corn
Saturday: Pulled Pork Sandwich, fruit salad & baby carrots
Sunday: Church Fellowship -Split Pea Soup, mac&cheese, Pineapple Pie


Quick, Cheaper & Easy Tomato Sauce

Adapted from the Hillbillyhousewife
.40 cents for 36 ounces (cans in the store are 26oz)
■2 tablespoons olive oil
■3 tablespoons dry onion 1/2 cup diced onion
■1 teaspoon garlic powder
■12 oz can tomato paste (.40/each =.80)
■up to 6 cans filled with water
■1 1/2 teaspoon basil
■1/2 teaspoon oregano
■1 1/2  tablespoon honey
■1 1/4 teaspoon salt

This sauce is so easy, so cheap and so good, you won’t believe it. Heat the oil in a 2 quart size saucepan. Add the dried onion and garlic. Stir the onion and garlic around in the oil for about 30 seconds, or until they start to smell good. Add the tomato paste. Now fill the empty can with fresh water and add it to the pot. Do it again, so two cans of water have been added. Stir it all up until the sauce is smooth and thick. Add the seasonings. Cover and simmer for about 5 or 10 minutes depending on your time and fuel situation. After the flavors have mingled long enough to know each other better, you are done.

All the other ingredients are really just a few pennies each, especially if you buy your spices from Sam's Club. My estimated cost for this is .70 which is .19 or 21% less then the cheapest sauce at Wal-Mart. Plus it tastes much better then the prepacked sauce.

Menu Plan Monday: Butternut Squash Soup

Tuesday: Breakfast for Dinner

Friday: Chicken pot pie & salad
Saturday: Left Overs from Parker's Birthday Taco Buffet
Sunday: Frozen Homemade burritos, Mexican corn

 (Make you want to ...) Slap your Mama Butternut Squash Soup

 Please be aware this website advises you not to slap your Mama!

INGREDIENTS
  • large onion chopped
  • 4 tablespoons margarine
  • 6 cups steamed butternut squash (when you steam it you can add it peel and all!)
  • 3 cups water
  • 4 cubes chicken bouillon
  • 1/2 teaspoon dried marjoram
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon ground cayenne pepper
  • 1 (8 ounce) packages cream cheese
  •  1 cup of milk

 DIRECTIONS

In a large saucepan, saute onions in margarine until tender. Add squash, water, bouillon, marjoram, black pepper and cayenne pepper. Bring to boil; cook 20 minutes, or until squash is tender.

Puree squash, milk and cream cheese in a blender or food processor in batches until smooth. Return to saucepan, and heat through. Do not allow to boil.

Simple Frugal Mexican Style Corn
Frozen Corn
1/2 can mild Rotel (diced tomatoes, peppers)
1 teaspoon of minced garlic (optl)
salt & pepper to taste
Mix and cook!
We make about 10 servings of corn with the 1/2 can of rotel.

Frugal Tip & Menu Plan Monday: Crock Pot Hot Wings

One of the reasons I used to spend so much money at restaurants is that I was not a good cook. So if wanted something tasty we had to go out to get it!  Thanks to my Mother-in-Law I learned how to cook. Though I still find myself going out to eat if a specific craving hits. In order to curtail this I try to add foods to our menu that we all crave as a result I have become a pretty good Mexican & Chinese food cook!  Well, my budget is too tight for such indulgences to spend $40 to feed cravings! The most recent craving is for Hot Wings!  So in order to avoid  the wings places I ended up making these two recipes and they at the end. (They are both crock pot recipes because our oven is broken, we are saving up to fix it or buy a new one. )

Sunday: Last week of Rosemary and white bean soup
Monday: Toscana Soup with bread
Tuesday: Chicken Spaghetti
Wednesday: Beans Rice & Corn bread
Thursday - Chicken strips, waffle Fry & Broccoli (Faux Chick-fil-a)
Friday - Hamburger, French fries and tossed salad
Saturday - Left overs

1st wing recipe was not any good so I deleted!


Chicken Wings Recipe

2 cup of brown sugar
1 cup of Dijon mustard
4 Tbsps of soy sauce
5 lbs of chicken wings; tips removed & cut into 3 parts
1 cup of butter
Place a large nonstick skillet with butter. When the butter melts, fry the chicken wings ’til golden. Transfer to a crock pot.Combine the sugar, soy sauce and mustard in a small bowl. Stir ’til smooth. Heat it using same skillet used for frying chicken.Simmer for approximately 5 minutes. Pour this over the chicken. Mix well. Cover with lid. Set heat to low. Cook for 6-8 hours, stirring occasionally.

This recipe was outstanding! Give it a try we give it a double yummy!

February 8-13th
I just thought I'd show you all what it looks like to have an intimate dinner at our home just the 5 children my husband and me. Well of course the servants too! Ha!!

Monday - Chili with Tamales & cornbread
Tuesday - Breakfast for Dinner
Wednesday -Beans, Rice & Corn bread
Thursday -Duggar Crock pot Lasagna, salad & garlic bread
Friday -Hamburger, French Fries
Saturday -Left Overs or Grilled Cheese Sandwiches
Sunday - Split Pea Soup & chocolate chocolate chip cookies for the fellowship meal!

We had to buy a new (to us) car last month so now our finances are a little bit tight so I am reverting to some of my least expensive meals for the rest of this month. This is unfortunate because I have planned meals through May. I praise the Lord that the majority of the meals I plan are pretty frugal so with just minor adjustments we are able to streamline! We are doing the same thing to our 2 week lunch and breakfast rotation so we can hopefully manage this month with half of our grocery budget.

January 31st to Feb7th , 2011

This is the meal plan for a frugal cook from scratch family. We are a Christian Homeschooling Family of 7 (4 girls & 1 boy).

Fellowship Meal Tip: Make your meal ahead of time. Preferablly make 4 identical items and freeze them to use each week. That way on Saturday night you just pull it out of the freezer and let it defrost. Put it in the crockpot and enjoy a restful Sunday morning.

This is the meal plan for a frugal cook from scratch family. We are a Christian Homeschooling Family of 7 (4 girls & 1 boy).


Weekly Church Fellowship Tip:  If you have a weekly church fellowship just make the same things pretty much every week! Every week we take macaroni and cheese and every week it is gone! Each month we switch between a couple of soups I can afford to double (Split Pea, Potato Chowder & Tomato Basil).

Tuesday – Homemade Pizza with Tossed Salad (NGC)

January 10th -16th

Tip: Double a recipe when you are planning to make it anyway. So don’t just make today’s meatballs make 2-5 batches of meatballs for future meals! I do not have time to set aside a day for bulk cooking but I can always throw a little more into the pot!

Tuesday – (make 4 freeze 2) Chicken pot pie, rolls (freeze 2 batches), tossed salad (NGC)

Meal Plan Monday

January 2nd - 8th

We are a Christian homeschooling family of 7.
At the end of December I decided to go back to my tried and true method of cooking which involves browning about 10#'s of ground beef & cooking 10# of chicken after the first grocery trip of the month. Each month I do something different with the ground beef this month I will be making about 10#'s of meatballs to use over the next few months.

Sunday - Duggar Tater Tot casserole & corn
Monday - Chili with tamales & cornbread
Tuesday - tacos, refried beans
Wednesday- Beans, Rice & Cornbread
Thursday- Spaghetti with meatballs (making 10# of meatballs today!), garlic bread
Friday - Bean & Cheese burritos with corn and fruit cocktail
Saturday-  Duggar Cincinnati Chili with peas

Meal Planning Monday - Vegetarian week in honor of the Watters


In honor of those folks that sold us a 'new to us truck' at a really good price we are having vegetarian week! Sorry Watters, we couldn't make it all the way to vegan we like cheese too much!

Monday- Beans, rice & cornbread


Tuesday- Potato & Beans enchiladas with homemade refried beans


Wednesday- Spaghetti Squash Lasagna with garden sauteed Swiss chard (Spaghetti Squash & Chard are from the garden)


Thursday - L/O's or cheese pizza


Friday - Farmer's Market Veggie Quesadilla with Spanish Rice (pepper & squash are from the garden)


Saturday - Split Pea Soup with homemade bread
Sunday - Church Fellowship
Sadly, we are not very self sufficient this week.

A couple of weeks ago I put cream peas on my menu plan and I wanted to clarify that item: Cream peas are a heritage vegetable and they are very much like black eyed peas and prepared similarly they have milder taste then black eyed peas. We grow them in our garden.

We are in the process of trying to lower our meat intake while we increase our protein intake by adding more low fat/cholesterol beans & lentils.

Menu Madness at Rooster Hill: Camping


Well, we are camping and when we camp I try to make my life simple and enjoyable by cooking the same easy things on each trip. This will both make it simple for me but it will also build memories for the kiddos!

Review: Carpio's Cahsew Chicken

This recipe is great! Thanks Kaylene I hope all of you looking for good and tasty crockpot meals like it as much as we did. We served it over rice and will have egg rolls to accompany it!

So here's Kaylene's recipe folks.....

Cashew chicken.
You need :1 c. diced cooked chicken
1 c. finely diced celery
1/2 c. finely diced onion
1 can cream of mushroom
1 can bean sprouts (opt.)
**1 tsp. soy sauce (I added about 2 more teaspoons)
1 cup cashews Coarsely chopped
1 can Chow mien noodles.
Directions:Place all ingredients except chow mien in 3 1/2 qt slow cooker, Cover and cook on low 5-6 hours, high 2-3 hrs.Serve over chow mien***= Kaylene never puts bean sprouts in hers, she always forgets them.**= the Chow mien is about $1.34 for a carton, just drop in water for 3 min, just like ramen (you may be able to even substitute)

I make this dish for hope group all the time. This will make about 4 serving, i just double it.oh and instead of soy sauce i use Braggs aminos, it has literally about 1000 mg's less sodium. I really hope you like this.
