2-3 cups rice milk
1/2 cup organic sugar
1/2 cup agave (or more organic sugar)
a pinch of Real Salt
1 teaspoon guar gum (optional)
1 Tablespoon vanilla and/or the insides scraped from 2 vanilla beans
zest of 2 lemons
juice of 4 lemons
Whisk or blend all ingredients together well. Freeze according to directions on your ice cream freezer. Great with these cookies.
