I've been cooking like a robber baron's housemaid for the last four days. I cooked for my friends when they were in town, and then I had another friend and her son over for dinner Sunday night, and cooked for them. I'm not complaining, I love to cook for more than just Ed and I - I'm a volume cooker. I always have leftovers when I cook for us, which is great, but I also love to cook for a lot of people.
Ed and I have been trying to eat better - lots of fresh fruit, veggies, chicken, fish, etc. - and I have to tell you, it's a LOT of work prepping all that stuff. I can see why people reach for pre-packaged foods and go out to eat.
I've always liked to cook and still do a lot of it in the truck, but it's much easier to cook at home - I have beaucoup counter space. I have more utensils. I have restaurant grade pots and pans (thanks to my step-father). I have a pantry the size of a walk-in closet, and the fridge is HUGE compared to the one I have in the truck.
I don't have room for many kitchen items in the truck, so I make do with the basics. But I'll be taking a few things from home when I go back on the road; the mini-chopper for sure, and a few wooden spoons.
And after seeing the photo I took at Bowery Kitchen Supplies in Chelsea, I think I'm going to be in the market for a new knife. Oh, yeaaahhhhhh.

I get hungry when I read your food posts! You are right about all of the work involved in preparing greens before cooking them. Anne was on a roll with greens a few weeks ago and I couldn't believe how long it took to prepare and cook them. I kept hinting that she could make a nice big pot of gravy with less effort.
You remind me that I've been wayyy too lazy lately with the truck food. Ugh.
