    Loved the idea of using fresh ingredients, but the flavors didn’t come together as I’d hoped. I ended up making adjustments to the sauce to bring out the orange flavor. I liked the combination of orange and basil. The lightly flavored sauce seems more suited for a mild white fish and really didn't do anything for us with salmon. See more in IMI.

    OMG, I just wanted to share and thank you with extreme gratitude for this recipe! My boyfriend begs for this stew weekly and got upset when I gave some to the contractors! It seems overwhelming with so many ingredients but now I see each time it's easier and easier and the steps actually add all the quality to it and it really shines! Thank you and Happy Holidays!

    Thanks for commenting on my Chicken Parmesan recipe. It is a favorite in our house too!
    This recipe can also be used to create a healthy Eggplant or Zucchini Parmesan. They are both delicious. Just wash, peel, and slice the vegetables. Frying is a short time, but everything else is the same. :)

    oh, Knwalter, I'm so happy you're trying them... I haven't made them in regular muffins tins, cus, to be honest, I've made them exactly once :) I created that recipe as I went, so just that once, so far. I WILL be making them again, cus they were outstanding, to our taste buds, but I haven't, yet. :) They should be fine in regular muffin tins but they are really rich, so one might be two servings. I would probably use about 2 heaping T and see if that covers the well. Maybe about half as much as a regular sized ice cream scoop? Does that make sense? You just want it to come up to the sides, and if you make a ball of dough, then push it in, it should spread out well. I hope you get this in time and I hope it's helpful. I can't wait to see how they turn out!

    Oh...that's fun! I'm pleased you're giving it a try. The picture wasn't the best and it is a really nice little recipe. I don't flatten the turkey breast. Once you've cut pockets in each side and stuffed it, just jiggle it all around and tie it up so it looks reasonably uniform in shape. Like a giant sausage. Then tie it nicely with some butcher's twine so it holds together while baking. Have fun and let me know how it goes!

    Oh yeah, another good one is elbow macaroni cooked in chicken stock, sweet peas, cubed cheese (I use jalapeno jack), bacon crumbles, diced fresh mushrooms sauteed in butter & garlic, and just enough sour cream or blue cheese or ranch dressing to bind (no mayo or just a tablespoon of it to help with binding.) Try it! You might like it! :)

    If you wanna make it extra cheesy, cook up a box of white cheddar elbow mac & cheese, cool, add all ingredients above but replace dressing/sour cream with 1/2 cup mayo & 1/2 cup milk & replace cubed cheese with blue cheese crumbles, season to taste & chill for several hours..
