Baked Parmesan Tomatoes Florentine

- 10 oz frozen chopped spinach shopping list
- 2 med/small ripe tomaotes shopping list
- 1/2 tub fresh mushrooms, sliced shopping list
- 2 T butter shopping list
- 3 T garlic shopping list
- garlic pepper shopping list
- seasoned salt shopping list
- worcestershire sauce shopping list
- juice from a lemon wedge shopping list
- dash red pepper flakes shopping list
- 2 T real mayo shopping list
- 4 T sour cream shopping list
- 1/2 c grated parmesan shopping list
- 1/2 c shredded mozzerella shopping list
- 1/4 c seasoned stuffing mix or bread crumbs shopping list
- 1/4 c grated parmesan shopping list
- *** As Mian dish, or bigger side for more people, double recipe, and add one onion, and one red pepper, chopped, adding to spinach mixture *** shopping list
How to make it
- Preheat oven to 350
- Butter small, square casserole dish
- Melt 2 T butter or margarine in large nonstick skillet
- Add spinach
- While spinach is thawing/cooking in skillet, slice tomatoes into 4-5 thick slices each
- Lay on paper towels to drain
- Mix together 1/4 cstuffing or bread crumbs and 1/4 c parmesan, set aside
- Add garlic, seasoned salt, garlic pepper, red pepper flakes, juice from lemon wedge, worcestershire and mushrooms to spinach
- One all spinach is cooked (about 5minutes), remove from heat
- Stir in mayo, sour cream and 1/2 c parmesan
- Place half the tomato slices on bottom of buttered casserole dish
- Add spinach mixture
- Top with mozzerella
- Top with another layer of tomatoes
- Sprinkle parmesan/stuffing mix over top of tomatoes
- Bake about 30 minutes, until lightly browned and bubbly

Back to report in on this. I followed the recipe, but omitted the red pepper flakes (didn't have any) and substituted cornbread crumbs. I used two small pieces of cornbread, equalling probably a good 3/4 cup crumbs instead of 1/8th cup as called for....more

Yeah, this is delicious. The guys raved about it. So funny to hear them give their 'critiques' lol. One who went on and on a couple weeks ago about not liking cooked tomatoes was the biggest fan! (I knew I would convert him somehow, heehee)
