How to make it

  • In a 2 quart saucepan over medium-low heat, combine butter, sugar and corn syrup.
  • Heat to a full boil, stirring constantly with a wooden spoon. Boil for 3 minutes, stirring constantly.
  • Slowly pour in Eagle Brand milk, stirring constantly. Continue cooking over low heat until candy thermometer reaches 220-228 degrees.
  • Remove from heat and stir in vanilla. Beat until creamy. Immediately stir in toasted coconut and mix well.
  • Spoon by tablespoonfuls into circular mounds onto buttered wax paper. Flatten slightly. With the end of a wooden spoon, poke a small round hole into the center of each cookie.
  • Cool completely.
  • Melt the chocolate chips and drizzle thinly in stripes over cookies. Let chocolate harden at room temperature. Store in a airtight container.
  • To toast coconut: Spread coconut on a baking sheet and toast in a preheated 350 degree oven, stirring occasionally until lightly browned, 5 to 6 minutes.

    Oh holy crap, this recipe is perfect- they taste even better than the boxed ones. My only warning to all of you is that you must wash the pot and any spoons you use immediately because when this stuff cools it turns into cement. As a result, it can be a bit difficult to form and flatten, but they're more than worth it. These are more dangerous than pringles, you just can't stop!

    With two girlscouts We have about $80 worth of these cookies in our freezer....it would be nice to make a homemade version so that we could eliminate the hydrogenated oil. Thank you for sharing this-it is my fav GS cookie as well!

    My daughter and I made these this afternoon. I'm not sure what we did wrong, but ours could be used as a weapon. Maybe we cooked them too long? Anyone have any ideas??

    oh my god, this recipe sounds incredible, I only have a problem, although I love coconut my family doesn't, can I substitute it for other ingredient?
