Gongura Shrimp/Prawns Biryani

 Hai friends today I am coming with yummy and tasty recipe called "Gongura Shrimp/Prawn Biryani". This is very very tasty biryani. Those who likes spicy and tangy will love this biryani. This has both combo of spicy and tangy taste. This we can prepare with chicken , veggies and even pickles too. I tried everything. I really enjoyed the gongura avakayi biryani. This recipe my sister did it. In this recipe I used  frozen gongura .We can use both fresh and frozen gongura. The gongura i preserved during fall. The froze gongura we can use for 6 months old too. Ok lets go the recipe





Ingredients:

Gongura paste-1 cup

Basmathi Rice-2 cups

Shrimp-2 cups

Onions-2

Green chillies-6 to 7

Tomatoes-3

Salt to taste

Chilli powder to taste

Ginger garlic paste-2 tsp

Curry leaves few

Oil-2 tsp

Ghee-2 tsp

Mint- handsful

Coriander-handsful

Cashew-1/2 cup

Whole spices -elachi,cloves,cinnamon,bay leaf,shah jeera,big elachi,ja patri,Marati mogga

Biryani masala-1 tsp

Water required

Sugar-1 tsp


Preparations:

Cut the onions into lenghtwise.

Method:

Place the deep bottomed pan and heat it . Add oil   and fry the onions

Mix it well

Add salt , Add masala powder Add turmeric too Mix it well

Cook the onions till it turns transparent

Now the onions cooked well .Take out from the pot and keep this aside

Now in the same pot add the oil and ghee  heat it. When it gets heat add the cashew and whole spices

Add the slit green chillies and fry it add curry leaves , turmeric ginger garlic paste too. Mix it well.

Add 3 big pieces of tomatoes mix it well and cook till it becomes soft

Now the tomatoes are soft

Here are the marinated shrimp to marinate add the salt, chilli powder, ginger garlic paste to the shrimp

 and keep aside for 30 minutes

Add to the pan and mix it well.

Cover it and cook for 2 to 3 minutes

Now add the gongura paste mix it well . Now cook it till the oil comes out.

Add required amount of water ,Add the chopped mint and coriander 

Add salt , chilli powder little sugar , biryani masala too

When the water starts to boil add the soaked rice add fried onions too and mix it well

Cover it and cook  till the rice is cooked well

Now the biryani is ready

Serve with onion raita and yummy yummy gulab jamun(optional)

Mutton Mandi

 Hai friends today I am coming with yummy tasty recipe called "Mutton Mandi". This is very tasty and yummy biryani. This has unique ingredients. It gives unique flavours.  I really love the taste and flavour. I followed few recipes and tried . 

In this I used dry lemon. That we can make at home . Cut it into half squeeze the juice and keep the lemon in oven and cook for  2 minutes. It will get dry.




Ok lets go the recipe

Ingredients:

Masala:

Green cardamom-3

Cinnamon stick-2 

Cloves-6 

Cumin seed-1tso

Pepper corn-1/2 tsp

Dry Ginger -Small piece

Coriander seeds-2 tbsp.

Ja patri little

Nutmeg small piece

Fennel Seeds-1/2 tsp

Dry lemon small piece

Dry red chillies-4


Marination:

Mutton-2 lbs

Mandi Masala

Salt

Turmeric

Green chilli paste-5-6

Lemon juice-1piece

Saffron water-1/8 cup


Main cooking:

Basmati rice:2 cups

Oil-1/2cup

Bayleaf-2

Cardamom-2

Cloves-3

Cinnamon-1inch

Onions-2

Tomatoes-2

Green chilles-4

Preparation:

Take the spices as shown here(Forgot to show dry ginger here)

Add in the jar and blend to the powder

Here you Mandi Masala is ready

Take 2 lbs mutton. Take 4 tsp mandi masala  add turmeric , salt, lemon juice, oil , little soaked saffron 

and little water  mix it well

Add mutton and mix it well. Marinate for atleast 4 hours or overnight.


Method:

Place  cooker add oil ,ghee and heat it. When it gets heat add spices 

To this add chopped onions , chillies and turmeric fry for 3 to 4 minutes

When tomatoes are cooked add marinated mutton and fry for 2 minutes

Add salt and mix it well

Add 2 cups of water

Pressure cook for 6 to 7 whistles

Now the mutton is ready

Now take the big mutton pieces for the fry . keep this aside

Soak the basmathi rice for 30 minutes

Now add the basmati rice to the  mutton gravy. Mix it well

Now add 2 cups of water and salt(Mutton gravy is approximately 2 cups)

Add 1 tsp mundi masala too

Add coriander cook this till the rice cooked well in low heat

Fry the Mutton pieces

Add 1 tsp crushed  green chillies or paste

Add mandi masala too  Add Kashmiri chilli powder

Add little salt too Fry for 1 minutes

Add the mutton pieces and fry for 3 to 4 minutes

Now fry is ready

Fry cashew pieces in the ghee and keep this aside

Now the rice is ready

Add fried mutton pieces on the top

Add fried cashew ,soaked saffron and chopped coriander   too

Cover it and cook for 2 to 3 minutes in low flame(Here can use the coal smoke)

Now Mutton Mandi  is ready

Veg Pulav(Without Grinding Any Masala)

 Hai friends today I am coming with yummy tasty and easy recipe called "Veg Pulav".This is very simple easy and tasty pulav. I love this very much.In this Veg Pulav there is no need to grind the masala paste.This pulav dont need Tomato and Coconut too. In this pulav we can use potatoes,soya,beans,carrot,Cauliflower too. I tried with all veggies. We can use what ever veggies are in handy.Ok lets go the recipe





Ingredients:

Basmathi Rice-2 cups
Onion-1
Veggies-carrot,beans,cauliflower.potatoes-1 cup
Corainder handsfull
Pudina Handsfull
Spices-elachi,cloves,cinnamon,big elachi.japatri.Star anis,bay leaf, marati mogga
Salt to taste
Turmeric-1/4th tsp
Chilli powder taste
Gibger garlic paste-1 tsp
Oil-2 tsp
Ghee-1 tsp
Water-3 cups

Preparations:

Here are the whole spices we need Elachi,cloves,cinnamon,bay leaves,star anis,Ja patri.

Chop the vegetables carrot,beans and cauliflower.

Slice the onion too.

Clean the basmati rice well with water .Drain the water and add the fresh water and soak for 30 minutes.


Method:


Place the deep bottomed or pressure cooker and heat it.Add oil and ghee

Add the spices and fry well

When the spices fried well add the sliced onions and fry till transparent

When onions turns transparent add 1 tsp of ginger garlic paste and fry for 1 minute

Add  the veggies and fry it

When the veggies cooked 50 percent add the chopped coriander and mint(I used frozen mint)mix it well

Add the soaked rice and fry for 1 minute

Add turmeric, salt and chilli powder the masala should coated well to the rice and add required amount water
pot-1 cup rice-1 1/2 cup water
pressure cooker-1 cup rice-1 cup water


Cover it and cook for 10 minutes(or until rice cooked well)

Now the pulav is ready.

Serve it hot with yummy yummy raita.
