Oreo-Stuffed Red Velvet Crinkles


Did you have a Merry Christmas?  As always, we had a crazy busy holiday.....but full of family, friends and fun!  

One of the desserts I brought to my in-laws on Christmas Eve were these Oreo-Stuffed Red Velvet Crinkle cookies from Sprinkles Bakes.  Any dessert containing Oreos is automatically placed on the "To Bake" list at our house.  But with the red velvet cookie outside, and the layer of powdered sugar outside.....these screamed Christmas to me.  

The cookie bakes up to what the hubby described at a cake/cookie.....which meant he loved it!  Be careful how much cookie dough you put around the Oreo though.  The first few I made turned out big enough to feed a neighborhood!  And remember to do a final roll in the powdered sugar right before you stick these bad boys in the oven.......it'll give you an extra crinkle-y outside!

Brown Butter Sugar Cookies

Have you tried any of the many cookie recipes out there with brown butter?  I've seen chocolate chip cookie, snickerdoodle, and oatmeal cookie recipes all with brown butter in there.  Out of all of those, this recipe for Chewy Brown Butter Sugar Cookies from Cookies and Cups, was the one that screamed for me to try it.  A brown butter sugar cookie that has been rolled in sugar and then covered in a brown butter icing.....sounds delicious!

As you can see from the picture, I ended up not using the icing.  Don't get me wrong.....I'm sure it would be fantastic, and perhaps a little over-the-top for the holidays.....but I really felt like these cookies were sweet and rich enough all on their own.  Oh, and delicious!  Did I mention that these are crazy delicious??!!  The hubby just loved these!  I think these may make a second appearance at our house to leave out for Santa this year :)

Game Time!

We are a UCLA family!  The hubby and I met when we were both at UCLA....and my brother-in-law played football there.  So obviously we have a pretty strong opinion when the UCLA-USC game rolls around every year.  Unfortunately we've played second fiddle to USC for most of the last decade (actually we've only won once in the last 14 years)....but this year was going to be different.

The hubby and I decided to actually head to the game this year with a bunch of UCLA and USC people.  I decided my contribution to the tailgating party had to be some sugar cookies decorated using my edible printer.  Yay!  These are so much fun!

And the best part?  We won!  The worst part?  The pouring rain that we had to walk through when we left the stadium to get to our car.  Soaking wet!!  But it was totally worth it.  A great day with my sweetie :)

Pumpkin Toffee Cookies with Salted Caramel Glaze


It's Pumpkin Time y'all!  Ok, I don't know where the y'all came from, seeing that I'm a Californian and all.......but I am awfully excited that all things pumpkin are here!  The hubby's favorite dessert of all time is pumpkin pie.....and since I get sick of making the same thing all the time, I have quite of list of pumpkin desserts that I make around here.  Now, I've got a new one to add to the list.....

These Pumpkin Toffee Cookies with Salted Caramel Glaze are A-MA-ZING!  You get the deliciously soft and cake-like pumpkin cookie studded with toffee chips......and then top that with a sweet and salty caramel glaze.  What is not to like about that??  I've already made two batches of these in the last two weeks, and both times they were a hit!

TWD: Hazelnut Biscotti

For this round of Tuesdays with Dorie: Baking with Julia we've got Hazelnut Biscotti.  I wasn't sure if I really wanted to make these.....I actually love hazelnut (which apparently a lot of people don't), but I'm generally not a big biscotti person.  I loooooove coffee.....but I mainly drink iced coffee, and since biscotti seems like a hot coffee/tea kind of thing, I don't usually go for them......but I decided to give it a go.....

These are delicious!  Even without the coffee they taste fantastic......just the right amount of sweetness, and a fantastic hazelnut flavor that is enhanced by the addition of Frangelico.  A very simple recipe to put together.....I think the trickiest part was getting the dough into a somewhat log shape before the first baking.....it's super sticky!  After that is was smooth smailing.....oh and the nutty aroma was great while it was baking!

Snickerdoodles

I totally love cookies that are chock full of yummy things (chocolate chips, nuts, toffee chips, you name it) or stuffed with something yummy (hello Oreo stuffed chocolate chip cookie!!)......but sometimes, simpler is better.

These snickerdoodles are good old-fashioned snickerdoodles.....no hidden surpises......just a super yummy chewy cookie that is dunked in cinnamon sugar.  One of the hubby's favorite kinds of cookie!  This is the best snickerdoodle recipe I've tried....it's from Joanne Chang at Flour Bakery, so that's no surprise.  The cookies don't flatten out much when they bake, and they stay nice and chewy (nothing worse than a crispy snickerdoodle).

2 2/3 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon table salt
2 teaspoons cream of tartar
1 cup unsalted butter, at room temperature
1 3/4 cup granulated sugar
2 eggs
2 Tablespoons ground cinnamon

Position rack in the center of the oven and preheat oven to 350 degrees.

In a medium bowl, whisk the flour, baking soda, salt, and cream of tartar to blend.  Using a stand mixer with the paddle attachment, beat the butter and 1 1/2 cups of the sugar on medium speed until light and fluffy, about 3 minutes.  Scrape the bowl with a rubber spatula.  Beat in the eggs until thoroughly combined, about 2 minutes.  Scrape the bowl again.  With the mixer on low speed, slowly blend in the flour until incorporated, about 30 seconds.

In a small bowl, mix the cinnamon and the remaining 1/4 cup of sugar.  Drop the dough by rounded tablespoons into the cinnamon sugar and roll around to coat.  Set the coated balls of dough about 3 inches apart on cookie sheets lined with parchment paper.  Bake until golden brown on the edges and slightly soft in the center, 12 to 15 minutes.  Let the cookies cool on the sheet for a few minutes before transferring them to a rack to cool.

Calling All Superheroes!


Sorry I haven't posted in over a week......things have been a bit busy over here.  I've just finished a 10-day course of antibiotics for a sinus infection that left me feeling rather yucks.  Also, over the weekend we took our little monkeys out to Vegas for the Monster Jam World Finals.  Yep.....Vegas......the monkeys loved it!!  Our little guy keeps grabbing his ticket and tells me that he's going to go see more monster trucks!  Oh, and on top of it all, we're in escrow on a new place and are working on enrolling the boys in new schools for the upcoming school year.  Lot's of stuff going on around here!!

I made these super hero cookies for a dear friend's son's birthday party.  As you can guess, it was a superhero birthday party.  I've had the Marvel superhero cookie cutters from Williams-Sonoma since they came out, but hadn't gotten around to actually using them.....so this was a perfect opportunity!  The set actually comes with the Hulk as well......but I decided to keep it a little simpler for me and go with Iron Man, Spiderman, and Captain America.

Williams-Sonoma actually has posted their recipe for sugar cookies (get it here), and a decorating guide for these cookies with detailed instructions for each of them........geit it here.  The only thing I changed was that I used a black edible marker for doing the web design on Spiderman (instead of using black food coloring gel).

These guys take a little time to do.....but they were a huge hit!  For the little guys and the hubby too!  Enjoy!

Double Fudge Irish Cream Cookies

Ahhhh......St. Paddy's Day......one of those times where it's totally acceptable to cook and bake with booze.  I love it!

I tried these cookies out a few weeks ago, and they were a huge hit.  Jessica, over at How Sweet It Is has another hit on her hands with these Double Fudge Irish Cream Cookies.

These cookies come out chocolatey, chewy, and you can absolutely taste the irish cream.  With 8 tablespoons of it in the recipe, these are definitely not for the kiddos, but man, oh man, are they delicious!  Give them a try....but if you plan on eating the whole batch, you may want a designated driver!

Club: Baked - Speculaas


This round of baking over at Club: Baked is being co-hosted with the other online group baking their way through Baked Explorations, Baked Sunday Mornings.  How fun!  This time around we're making Speculaas....the little cookie with a funny name and lots of flavor!  Speculaas have been all the rage lately.....due to the blogosphere's obsession with all things Biscoff.  I am also totally guilty of loving Biscoff cookies, so I was very curious how theses would come out.

These cookies definitely had a similar flavor profile to Biscoff cookies, although there was a little more flavor from all the spices coming through.  And my cookies seemed to have a crunchier texture than Biscoffs.  But man oh man.......these bad boys were absolutely perfect to pair with a cup a tea or coffee.......delicious!

Toffee Whopper Oatmeal Cookies


These cookies were a huge hit!  Crispy edges, chewy centers, with oatmeal, toffee chips, and chopped up Whoppers......they've got it all!  Of course, since it's from Confessions of a Cookbook Queen, you know it's gonna be good....and gonna have tons of yummy stuff in it, right?

This was the first time I had made a batch a cookies that called for a box of instant pudding.  I know there are a million recipes out there for different kinds of cookies with pudding in the dough.....I just had never gotten around to any of them.  I'm sure that helped with the chewiness of these....I'm sold!  I'll have to try some other ones now as well!

By the way......are you wondering about the little monster guys?  Well.....in a house with two little boys (and don't forget about the hubby), there is bound to be some video gaming going on.  Well, thanks to some Christmas presents, my boys are loving the world of Skylanders.  Of course, so is everyone else apparently......because if you try to go to the store now and find some, the shelves are picked bare!  So since they're such a part of our lives, we decided they had to be in a picture :)

Happy New Year!


I can't believe that 2011 is over already!  This year absolutely flew by!  2012 will bring even more changes......we're planning on moving before summer (the moving/packing part is what I'm dreading)......we're applying to schools for next year (in the area we're moving to).....1st grade for our big guy, and preschool for the little monkey......my little sister is getting married in the U.P. in Michigan this summer (yeah!)......and there will be more travelling (hello Maui!).  You can bet that 2012 will go by just as fast!

So check out these Confetti Cookies from Momofuku Milk Bar.  To me they look like a party in a cookie!  Who doesn't love those funfetti box cake mixes?  Well, the peeps at Momofuku Milk Bar have figured out how to get that funfetti cake mix taste from scratch.  And, well, it tastes even better!

Like some of their other recipes......this one is a two-parter.  There is a birthday cake crumb mixture you will mix into the cookie dough.....absolutely worth the extra step!  The cookies come out crispy on the edges, and super chewy on the inside.  Not to mention the sprinkles and the taste of birthday cake.  

This is the third cookie recipe I've made from the Momofuku Milk Bar cookbook (I've also made the Blueberry and Cream cookies, and the Cornflake Chocolate Chip Marshmallow cookies).....and they have all been delicious!

Santa's Cookie

Have you decided what cookies to make for Santa yet?  I am a firm believer that Santa likes to get chocolate chip cookies......but how about chocolate chip cookies with a little something extra?  I've mentioned before how awesome Momofuku Milk Bar is.......I've made the Blueberry and Cream Cookies (my favorite cookies), and their Crack Pie (there is a reason it's called that).

Well, now I can add to the list, their amazing Cornflake Chocolate Chip Marshmallow Cookie.  This cookie has it all.....chocolate chips.....marshmallows......and a special cornflake crunch.  The end result of these is that you get super crunchy edges, with a delicious and chewy center.  The best of both worlds!

Biscoff Cookie Dough Balls


Time to continue my obsession with all things Biscoff.  Sadly, the hubby has not shared this obsession.....until now.  This is the first thing I've made with Biscoff where he gets it.  Super tender, Biscoff flavored, and spiked with mini chocolate chips.  So yes, you're going to have to try these!

These dough ball cookies are super duper similar to the Peanut Butter Dough Balls that I made earlier, with the Biscoff spread substituting the peanut butter.  The most important thing to remember with this type of cookie is to not overbake these.  You want them to just get baked enough....but to remain tender and almost dough-like.

A Thing of Beauty

Seriously......is that not the most gorgeous box of cookies you have ever seen?

I was the lucky recipient of this incredible box of macarons a couple of weeks ago......you should have seen the ridiculously huge smile on my face when I opened the box!!  These bad boys are from Bottega Louie (in downtown Los Angeles).....and I can't even begin to tell you how much trouble I'd be in if they were just a bit closer (downtown is about 45 minutes away from me, on a good day).

Not only were these possibly the tastiest macarons I've ever had (even tastier than 'lette macarons in Beverly Hills), but I've never seen them with such a crazily intense color palette.....it's like a rainbow in a box!  And they came in a beautiful pink box tied up with a ribbon....I think they would make the cutest hostess gifts!

Two of my favorites....the light orange one in the middle.....hello, pumpkin!!  And the brown one up in the corner that I assumed would be a plain chocolate one......chocolate with salted caramel.....delicious!!

Many many thanks to Rachel for introducing me to this awesome shop....you'd better believe that any time I'm anywhere near there I will be making a stop!

Coffee Cake Cookies


Have you ever made cookies to be served in the morning?  No?  Me neither.....well, except for my Pumpkin Cranberry Oat Cookies.  But when I saw this recipe for Coffee Cake Cookies from Bakers Royale.  I first saw the cookies on Pinterest and immediately pinned it.....what a great idea!!  And reading through the recipe......they have browned butter in them!!  Sold!!  I am truly obsessed with any recipe that has browned butter these days......so yummy......and so Fall-y to me!

Looking back at the pictures of this on Pinterest......I don't think I pressed down my streusel topping down into the cookie as much as the originals had.....but they were so good.....I don't think it mattered.  They really stay nice and cake-y......they don't get crispy like a cookie.  I took these to a friend's house for a party, and they were a hit!

Zucchini Lemon Cookies


Even though it's officially Fall (which makes me so happy!) our weekly CSA box still has a ton of zucchini and other summer squash in it.  For last week's batch of zucchini I decided to make these Zucchini Cookies that I had seen on My Baking Addiction a little while back.

These cookies use a full cup of finely grated zucchini, which in my case was about 2 fairly large zucchinis.  I made these in a whoopie pie pan that I had completely forgotten that I had.  This kept the cookies from spreading out and then turned out super soft and cake-y.  With a drizzle of lemon-y glaze on top, these will give you one last taste of summer while you're trying to use up your bounty of zucchinis.  The hubby absolutely loved these!  I had him take a bunch to work, and I'm pretty sure he ended up eating all of them and not sharing.....not that I blame him.....

Oh, one last thing.....the recipe calls for raisins......I left the raisins out of my cookies.....I think I've mentioned before my intense dislike of raisins....I will avoid them at any cost!

The Search for the Ultimate Chocolate Chip Cookie

For this round of the Crazy Cooking Challenge we are looking for the Ultimate Chocolate Chip Cookie recipe. I've got a couple of personal favorites so far......the cookie from Baked and the Jacque Torres (NY Times) cookie. But ever since I read through the Chocolate Chip Cookie Quest over at Sweet as Sugar Cookies, I've been meaning to try the cookie from Joanne Chang of Flour Bakery.

There is nothing complicated with this recipe (although it does use both all-purpose and bread flour).....the hardest part of it all will be waiting overnight to 24 hours before baking these bad boys up. From everything I've read, this resting period in the fridge is mandatory if you want the best results for your cookie. Both the Baked recipe and the NY Times recipes also require you to let the dough rest overnight for the best texture and flavor.

And the most important part......how were they? Oh my.....these really are fantastic! They are crisp at the edges but super chewy on the inside....all with a great caramel flavor that everyone agreed was just delicious! Of course, I need to do a side-by-side taste test before I officially declare this as my favorite......nut I really do think we have a winner!

Joanne Chang's Chocolate Chip Cookies
from Joanne Change of Flour Bakery via Sweet as Sugar Cookies

1 cup unsalted butter
3/4 cup light brown sugar
3/4 white sugar
1 1/2 tsp vanilla
2 eggs
1 1/4 cup all-purpose flour
1 cup bread flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cup chopped semisweet chocolate
1/2 cup finely chopped milk chocolate

Beat the butter and sugars until mixture is light and fluffy. Beat in the eggs and vanilla until thoroughly combined.

Mix together the flours, baking soda, and salt. Add both chocolates to he flour mix and toss to combine. Slowly blend the flour-chocolate mixture into the butter-sugar mixture. Mix until the flour and chocolate are totally incorporated and the dough is completely mixed.

For best results, scrape dough into a container and let rest in the refrigerator for a day before baking. The next day, heat the oven to 350 degrees F and position a rack in the center of the oven. Drop the dough in 1/4-cup balls onto a baking sheet about two inches apart. Press dough balls down on the edges and slightly soft in the center, 15-18 minutes. Remove from oven and let cool.

Biscoff Love!

Sorry I haven't posted much lately.  I'm suffering from a serious lack of sleep due to our 2 year old deciding he's not sleeping in a crib anymore.  One day, he's the greatest sleeper in his crib.....next thing I know he's like a little ninja getting out of his crib and running down the hallway.  This has not been a fun transition for Mommy and Daddy......I miss sleep......hopefully he'll get the hang of his big boy bed soon.  Ok, now onto something yummy......

I've already covered how delicious Biscoff cookies and spread are, right?  Well, I now understand how this love can turn into a slight obsession......

Check out these Biscoff Stuffed White Chocolate Chip Cookies from Picky Palate.  White chocolate chip cookies stuffed with a generous scoop of Biscoff spread that just kind of oozes out the sides.........sooooo good!  Don't bother trying to completely seal the spread inside of the cookie.....I'm pretty sure it can't be done.  And who minds a little oozing.....not me!

I'm clearly not alone in my Biscoff love....pretty much every blog that has talked about it can't seem to get enough of it.  So, if you haven't tried it yet, here's just a warning.......you're not going to be able to stop!!  You know how everyone started freaking out over Nutella when it became available over here?  Yeah, it's kind of like that.

Strawberry Shortcake Cookies


Is it Fall where you are?

Here in Southern California we've been having some crazy hot weather.....it's definitely still summer!  So hot, that our oldest son, who's now in Kindergarten, hasn't been able to play on the playground at lunch due to the inclement weather policy kicking in (anything over 100 degrees).  This week we also had our first week of soccer....not too much fun in this kind of weather.   The kids were beet red and sweating by the end of it, and that was after trying to stay in the shade and taking lots of water breaks!

So since it's still summer.....I decided to put off jumping into Fall desserts and sticking with some summery ones.  We're still getting tons of delicious strawberries, and what could be better than a yummy strawberry shortcake?  How about a strawberry shortcake cookie?  A lot more portable and lot less messy!

These were a huge hit!  They really are like eating a strawberry shortcake.  They don't sit around too well though so I'd make them the day that you're planning on serving them.  Then just watch them disappear!

PS - Of course, as I'm writing this post, a thunderstorm came in and cooled the place down....probably down in the 80's now.....who-hoo!!

Rolo Stuffed Chocolate Chip Cookies


I'm always game to try a chocolate chip cookie recipe.  Stuff that chocolate chip cookie with something yummy........I'll take another please!!

I found the recipe for these Rolo Stuffed Chocolate Chip Cookies on My Baking Addiction a while back........don't know why it took me so long to get to them, but I'm super glad I did!

The actual cookie part of these is fantastic.  A great chocolate chip cookie recipe!  In fact, next month for the Crazy Cooking Challenge, the challenge will be to find the ultimate Chocolate Chip Cookie.....hmmm......maybe I'll have to re-make these and have them be my submission?

The Rolo baked inside gives you a yummy gooey bite when you get to the middle, however, I found that if the cookie was too cool the caramel was no longer ooey-gooey.  You might want to nuke it for a couple of seconds just to loosen up the caramel a bit.  Otherwise, I thought these were fantastic!
