Chicken Tikka Sandwiches



Ingredients:
  • 2 chicken breast (washed, set aside)
  • 2 tblspn chicken tikka seasoning
  • 3 tblspn lemon juice
  • 1 tsp salt
  • cooking oil
  • 4 slices white bread
  • 3 tablespoons butter, softened
  • 1 medium onion (thinly sliced)

Directions:
  • Combine chicken breast with ingredients: chicken tikka seasoning, lemon juice & salt. marinated in the fridge atleat for 2 hours.
  • bake chicken breast in to oven for about 10 to 15 minutes or untill the chicken is browned on all sides and tender, set aside.
  • trim the edge of the bread, spread with butter and grill on pan until bread is crisp and golden.
  • Chop the chicken breast into slices and lay on the bread
  • Now add onion as per preference, on top of the chicken.
  • Cover with another slice of bread.

Easy Cinnamon Roll





Ingredients:
1 sheet frozen puff pastry, thawed
For the filling:
  • 50 g butter or margarine
  • 50 ml sugar
  • 1 teaspoon cinnamon
  • Raisin as needed
Directions:
  • Mix the ingredients for the filling together
  • Spread onto the puff pastry, as little or as much as you like
  • Roll up, cut into pieces
  • Bake at 200˚C  until the puff pastry is golden brown and cook throughly, about 20 minutes. Since I made mini rolls they baked faster. Bigger or normal sized rolls will take longer to bake.

Chicken tikka wings



This is almost ours every weekend snack. very simple and easy to make yet very tasty, and the most important thing is, everybody luvs it.


Ingredients:
500 gr chicken wings cut into two pieces (washed, set aside)
2 tblspn chicken tikka seasoning
3 tblspn lemon juice
1 tsp salt
2 eggs
bread crumbs
cooking oil

Directions:
* Combine chicken wings with all the ingredients except eggs, bread crumb and cooking oil. marinated in the fridge atleat for 2 hours.
* In a medium bowl, beat the eggs, Dip chicken wings in eggs, then coat with bread crumbs.
* deep fried until crisp and golden color, enjoy!

Tofu in soy sauce (semur tahu)





Ingredients:


* 4 blocks of tofu, deep fry until half-cooked
* 4 shallots, sliced
* 3 cloves of garlic, sliced
* 2 tblsp oil
* 3 cloves
* 1 tsp of white pepper powder
* 2 whole cardamoms
* 1 tomato, diced,
* 2 tblsp of ketchup
* 5 tblsp (or to taste) kecap manis (sweet soy sauce)
* 1 1/2 cups water
* sugar and salt to taste

Direction:

* Heat oil in the pan, add sliced shallots and garlic, stir fry until fragrant.
* Add white pepper powder, cloves, cardamoms, tomato and ketchup, sugar and salt continue to stir fry for about 1 minute.
* add sweet soy sauce, and tofu stir well, and lastly add water.
* Simmer, uncover until the water evaporate to half and a bit thickened.
* Remove from heat and Sprinkle with fried shallots.

Sambal goreng kentang (Spicy fried potatoes)



I had half package of chicken gizzard left over in the freezer. so I tried to make this sambal goreng kentang instead of wasted. so here is the result, spicy fried potatoes with chicken gizzard, enjoy!


Ingredients:

* 500 gr Potatoes, cut into small cubes
* Oil for frying
* 10 chicken gizzard, cut into small pieces
* 1 cm galanggal
* 1 bay leave
* 1 lemongrass

Grind ingredients:
* 5 coves onion
* 2 cloves garlic
* 8 red chillies
* 1/2 teaspoon salt and sugar
* 1 tomato

Method:


1. Grind together onion, garlic, chilies, sugar, salt and tomato.
2. Meanwhile, fried the potatoes with oil until brown or until cook through , set aside.
3. Heat 1 tablespoon oil in a large saucepan, add grind ingredients and cook for 1 minute.
4. Add galangal, bay leave, lemongrass and chicken gizzard, cook for another 1 minutes, add potatoes and cook for further 5 minutes or untill the chicken gizzard cook through.
5. Serve with white rice.

Nasi goreng (fried rice)

Nasi goreng, literally meaning "fried rice" in Indonesian and Malay. Nasi goreng is a simple dish that is easily modified and can be prepared in as little as five minutes. It is so common, that every household has its own recipe. I love nasi goreng serve with a fried egg on top, together with pickles and some kerupuk (prawn crackers). Enjoy!




Ingredients:


* 1 cup cold cooked rice
* 1 tablespoons oil
* 1 egg, fried
* 1 tblsp of dried anchovy, fried
* 5 shallots, pasted
* 2 cloves garlic, pasted
* 3 red chilies, pasted
* 1 teaspoon dried shrimp paste
* 1/2 teaspoon salt
* 1 tablespoon sweet soy sauce

Direction:

* Pour a small amount of oil in a wok and fry the egg, set a side.
* fry the anchovy till golden brown n crisp, set a side
* Heat the remaining oil in the wok and fry the shallots, garlic, chilies and shrimp paste for a minute .
* Increase the heat to high and add the rice, salt, anchovy and soy sauce, adding a little oil if necessary, stirring constantly until well mixed and heated through.
* Garnish with fried egg.

Fried okra/bindhi/lady finger




A very simple dish and easy to cook.

Ingredients:

300 gr of Bindhi, washed, finely cut and set aside
1 big onion, sliced
10 green chillies, or according to your taste, finely cut
Salt to taste
Cooking oil


Direction:

Heat oil in the pan, add sliced onion and cook for about 1 minute. add bindhi, green chillies and salt. cook and stir until the bindhi soft. ready to serve.

Cheesy Baked Potato

Ingredients:
Potato Medium size
olive oil
cheddar cheese
butter

Directions:
1.Scrub the potato, and prick several time with the tines of a fork. Place on a plate.
2. Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 2 tablespoons of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.
3. Top with remaining cheese and ready to serve.

Crispy Apple Tart

Ingredients:
180 g puff pastry, thinly rolled into a circle 30cm in diameter
30 g butter, cut into cubes
4 apples, peeled
2 Tbsp sugar
2 Tbsp apricot/raspberry jam
2 apples, peeled and diced
½ tsp cinnamon powder
85 g sugar

Directions:
Make the apple filling
Place a wide saucepan on a medium heat and put in the diced apples and with the sugar. Heat and stir until they start to break down. You can mash them with the back of the spoon to help them along.
Keep stirring until most of the liquid has evaporated. Then turn off the heat and put in the cinnamon powder.
Continue to stir and mash the apple mixture for about a minute more, then set aside.
Preheat the oven to 230°C
Cut the apples
Take one of the peeled apples and cut off the sides without cutting into the core, which you can then discard. Cut the apple pieces into thin wedges and repeat this with the rest of the apples.
Place the puff pastry circle on a baking tray, …and spread the apple filling ...evenly over its surface. Next, layer the apple wedges in a circle ...carefully around the side … and finish off with an arrangement in the centre
Sprinkle a little sugar over the top of the tart. Then also place on various small knobs of butter.
Place the tart into the preheated oven and bake for approximately 25 minutes, then remove.
Put the apricot jam into a small saucepan and add 2-3 tablespoons of water. Heat on a medium temperature and stir together until the jam liquefies. Then take off the heat.
Using a brush, paint the surface of the tart with the liquefied jam. This will give it a glazed, shiny look, and add to the flavour. It is now ready to serve.

Pepes Tahu / Steamed Tofu



Ingredients:
4 medium size of tofu, mashed.
2 tbsp anchovies
4 red chille, finely cut
3 tsp small dreid shrimp
2 cloves of garlic, crushed
3 shallots, finely cut
2 medium size of tomatoes, finely cut
2 cm of galanggal finely chopped
spring onion, cut into small size
1 lemon grass
oyster oil as desired
salt and sugar to tasted.

Directions:
mix all ingredients in a bowl. then put into banana leaves or foil, steame for about 15 - 20 minutes. and ready to serve.

Too Lazy to cook, and no idea what to cook. and finally ended up with this simple dish :D yet yummy at least for me *LOL*



What u need: Anchovy and soy bean (fried).
Finely cut Green chille, shallot, garlic, tomato. salt and sugar to tasted, and a lil bit cookin' oil.
hot the oil in the frying pan, add shallot, garlic then green chille. then add tomato. and lastly add anchovy and soy bean. ready to serve.
