Kek Chiffon :)

 Assalamualaikum. 


Sempena Maulidur Rasul, I made Nasi Tomato and Chiffon cake. My kids really love Chiffon cake, bila ada this cake maka tak lakulah nasi tomato ummi hehe. 

So this is my first debut of chiffon cake..it turned out quite well, lembut, gebu dan sedap wpon krg sket rasa pandan tue..heheh. Reason being, i didn't use air daun pandan..i used pandan flavour instead..:D 

But the most important thing, the kids loved it. skjp je dah nak habis satu loyang. ;)



Nway for the recipe (dah lama tak share recipe :D), i took out from Aneka Hidangan Kek book. it's so reliable! First time buat kira menjadilah jugak. :D

Bahan-bahan:

300g gula kastor (i used normal sugar ;P)
240g tepung serbaguna 
125ml minyak jagung (i used sun flower oil..)
7 biji telur (asing putihnya)
1/2 cawan air daun pandan (i used pandan flavour :D)
3 sudu kecil baking powder
1/2 sudu kecil garam 
1/2 sudu kecil krim tartar (i omitted it..:D)
sedikit pewarna hijau

Cara Membuat:

Panaskan ketuhar pada suhu 180degree celcius. Lenserkan acuan chiffon/loyang dengan marjerin.

1. Putar putih telur, krim tartar dan sebahagian gula hingga kembang.
2. Dalam bekas lain, pukul kuning telur dan baki gula hingga kembang. Masukkan minyak jagung dan adun hingga sebati.
3. Kemudian masukkan tepung, airdaun pandan, garam, baking powder dan pewarna hijau. Kacau hingga sebati.
4. Masukkan adunan putih telur dan kacau secara kaup-balik perlahan-lahan.
5. Tuangkan adunan ke dalam acuan. Bakar dalam oven selama 45 minit.

Sorry for these not so good quality mobile pic..so lazy to use DSLR nowadays! and the cake's appearance  is bad too. I never ever good at cutting cake..or should i blame the knife? :p

Yummy Lamb Curry

Assalamualaikum. Salam 21st Ramadan!

Today i'm sharing this dish but yet nothing fancy. It's just my first time cooked Lamb curry. LOL. I made it during our good friends came for Iftar together at our place on last saturday. It turned out very good! Got comment like 'Terbaekkk' from our honourable guests. hihi. And I also cooked Nasi Minyak, made bread pudding with custard sauce and dadih while Yati brought along yummy spagetti. Alhamdulillah..suka tengok semua orang makan bertambah-tambah even waktu sahur! :D

Actually, i googled the recipe and tumbled on sham jallaludin's blog. The original recipe used mutton but i used lamb rib..hihi apa je la yang ada dalam stok kan..but according to Yati, guna lamb rib lagi sedap. ;)

so here is the recipe:

The ingredients:

Daging kambing (mutton) cut into medium pieces ( i used cut lamb ribs)
about two inches of ginger, sliced into small strips
1 large onions. sliced
10 shallots. sliced
5 garlics. sliced
Rempah tumis 4 sekawan. a few of each cinnamon stick, star anise, cardamom and cloves.
Curry leaves
meat curry powder ( i used alagappas brand)
salt, dried chilli paste, coconut milk. prepare three thickness. One very creamy, one medium thick and one very watery. ( i used the medium think only ;))
some potatoes. cut into 4-6 pieces

The method:

1. Heat up your wok with oil. Once the oil is hot, put in the large onion, shallots, ginger, garlic, salt ( i leave salt to last step), curry leaves and 4 sekawan. Let it fry for a while.

2. Add about two big spoons of chilli boh and add two tablespoons of curry powder. ( i put 4 tablespoons) Mix them well.

3. Add the meat and mix well so that all the meat is covered. Keep stirring. Add some chilli boh and curry powder to enhance the colour and flavour ( i skipped this as i already put 4 tablespoons beforehand)

4. When the meat has decreased in size, add water until the meat is slightly submerged. Stir well. Leave to boil so the meat is tenderised. this will take a while.

5. when the water decreases, add the watery coconut milk and stir well. (i skipped this part). Let it boiled to tenderise the meat even more. This is the time to add in potatoes. Leave it to thicken.

6. then you can add the thick creamy coconut milk if you don't think it is thick enough. But if you feel that it;s thick enough, then you can go without. Just turn the fire off and leave it to cool down. (don't forget to put salt! ;D)

7. then serve it with rice, nasi minyak or eat it with bread, naan or others.

This Ramadan I vowed not to spend too much time in the kitchen. I cooked everyday menu and just make simple dishes. I could not bring myself to prepare many or extraordinary meals for our Iftar due to long hour period of fasting. Lucky, hubby's very understanding and not fussy eater. :)

Also after what happened to our suffered brothers and sisters in Syria, Egypt, Africa and Burma seem that I can't help myself thinking of how they're doing during this holy month and what they're eating. :( Anyway, only a piece of do'a sending from bottom of my heart to all of them..:'(

Kuih Keria

Assalamualaikum

I love kuih Keria so much but as usual I don't know how to do it. In fact i'm always afraid to try especially on making kuih-muih. hihihi. So last thursday when i had asked suggestion from my friends in FB what can be done with sweet potatoes, I think most of them suggested this kuih favourite of mine. Hihi thanks to them especially Nadine who gave the recipe right-away with some tips! (Terer la you..;))

But being me who knew nothing in making kuih-muih, i had to do some research and looked for the step by step recipe at my favourite cooking website, MyResepi.

And let me share it with you here..;)

Sumber Resepi: credit to Syahmi (MyResepi)

Bahan-bahan:

500g ubi keledek putih
1 cawan tepung gandum
Sedikit garam
3 sudu besar gula dan sedikit air

Cara-cara: 

1. Rebus ubi keledek hingga empuk

2. Toskan airnya dan bubuh sedikit garam.

3. Lenyek sampai hancur sementara ubi masih panas


4. Rehatlah dulu sementara menunggu ubi betul-betul sejuk.

5. Bila sudah sejuk, masukkan tepung gandum dan uli sehingga sebati ( this part is the most challenging and tiring one for me. huhu)


6. Buatlah bentuk seperti gelang dan goreng. (patutla ada orang panggil huih keria as kuih gelang..haha i thought kuih lain..:P)

7. Setelah siap digoreng, masak gula dengan kuali lain.

8. Didihkan gula hingga pekat.

9. Masukkan kuih tadi dan kacau hingga rata. Bagi semua kuih kena gula.

10. Kacau hingga gula nampak bertali baru boleh tutup api. ( mine tak bertali pon..:D)

11. Dah tutup api, kacau lagi hingga gula kering dan kuali tidak melekat.

and done, then ready to serve! 


Alhamdulillah, It turned out 'lembut' though for me it's appearance was not 'cun' kekeke..tapi yang penting rasalah kuih keria...hihi sedappp and my kids love it so much sampai Zahin suruh buat lagi nak bawa bekal ke sekolah..hihihi..in shaa Allah, next time ummi will make them again! ;)

Pulut Kuning Express ;-)

Assalamualaikum



Last monday punye cerita. I made pulut kuning for the first time as our main menu for berbuka puasa. To compliment it i made beef curry and also mee goreng. Then hubby bought some Pakistanese kuih and water melon juice, hmm lagilah terasa macam dah bulan Ramadhan! :D

I have found a very simple recipe that can be cooked in a rice cooker. I loike! Tak yakin nak guna steamer lagi. Amatur la katakan..;P Nway, overall the reviews said it turned out good so it was really tempting me to try it. Here we goes..

Recipe by As75 (MyResepi)

2 cawan beras pulut
1 cawan santan pekat + 1 cawan air panas
1 helai daun pandan
1 sudu kecil garam
1 sudu besar minyak masak
Sedikit serbuk kunyit ( me, suka2 je pi add some yellow colouring too :D)

Cara-cara:

1. Cuci beras pulut dulu then masukkan ke dalam rice cooker. 
2. Masukkan santan, air panas, daun pandan, garam, serbuk kunyit dan kacau sebati
3. Masak dan tunggu sehingga mendidih, kacau bagi elak pulut berkerak..kemudian biarkan hingga masak.
4. Sesuai dimakan bersama rendang, kari ayam & daging, masak kurma dan sambal ikan bilis.
5. Kaedah yg sama ini juga boleh digunakan membuat pulut untuk kuih-kuih seperti serimuka, etc. (jgn letak kunyit)

Hmm easy peasy right? Rasanya pon sedap, uols. My hubby and kids suka banget! 2 cawan tak cukup ok, next time kene up..hehehe..Nanti nak buat pulut panggang ke.. lemang ke.. pon nak guna resepi As75 ni lah. Hehe. Thank you As75! ^^

For beef curry, macam biasalah resepinya but i put some kerisik a little so kasi dia pekat sikit. Tp kalau ada kerisik mmg lagi sedap la rasa dia kan..heheh..actually, nak cepat so terguna serbuk kari ikan la plok! so warna tak menarik tu yg pi pandai2 letak kerisik but it turned out darker n thicker. not bad! My hubby love it, siap tanya gini "hmm sedap aa kari ni, yang. guna serbuk kari yg mana?". hihi and i simply answered, Babas! ;D

Roasted Lemon Garlic Cod

Assalamualaikum

I have tried this new simple recipe on last monday. It was first trial and it was divine. Definitely will make it again! ;)

Ingredients: 

4-6 ounce pieces Cod fish
2 cloves garlic, crushed
1/2 tbsp butter (i put 2 tbsp of it)
1 tbsp olive oil (i used vegetable oil ;D)
Juice of 1 lemon
2 tbsp chopped flat leaf parsley ( i used dried parsley ;))

Preparations:

1. Preheat oven at 400degrees.

2. Place fish in the microwable plate/baking dish. Season it with a little bit of salt and ground black paper.

3. Place butter and olive oil in a non-stick pan. Heat on medium low. 

4. Add garlic and saute for 1 minute. Add lemon and parsley, then remove from heat.

5. Drizzle garlic mixture over top of fish. Bake for 12-1 minutes until fish flakes easily with a fork. 

For me,  I just put in my 3-1 microwave oven and press auto cook for roasted fish. It's done less than 8 minutes. Easy-peasy! ;))

Serves 4. That's all. Happy trying! :)

Kupang Berlada

Assalamualaikum

Dah lama tak makan kupang. Tiba-tiba ada pulak kupang kat kedai seafood yang selalu kami pergi di Dagenham. Ikan keli pon ada! hehe Alhamdulillah, rezeki. ;)

So dinner tadi masak kupang berlada. Simple dan disukai kami suami-isteri heheh. Kids tak makan..sebab pedas. zahin makan pedas tapi sebab nampak kupang pelik langsung tak nak makan. :D So for them i had made baby spinach masak air dan ayam goreng. :)

Anyway Ummi dan babah sedap dan berselera makan, siap ratah gitu aje kupang tu lepas makan dengan nasi. ;)

Kongsi Resepi Kupang Berlada my version ;D (credit to SueMan@myresepi)

Bahan-bahan:

500g kupang (direbus dulu)
3 ulas bawang putih*
1 labu bawang besar*
5-10biji lada kering*
Sedikit ikan bilis*
3cm halia (hiris)
1 btg serai (dititik)
1 labu bawang besar (potong bulat)
3 sudu besar Sos cili dan 1 sudu besar sos tiram
Garam dan gula secukup rasa

Cara-cara:

1. Blend bahan-bahan yang bertanda * dan tumis hingga naik minyak.

2. Masukkan hirisan halia, serai, sos cili dan tiram juga air kalau mahukan kuah lebih. Kacau rata.

3. Masukkan kupang, perasakan dengan garam dan gula. Kacau dan gaul smpi mdidih atau kuah mjadi pekat sedikit.

Hidangkan dengan nasi panas..hoho yumm! tiba-tiba teringat plak makan masa dinner tadi. hehe.

We Are Back!


Assalamualaikum.

After two weeks of Christmas break, the Eins finally started the Spring term on 9th of Jan. Their school opened one day late than other schools in this area. We guessed the school management had a good reason behind it. For us, we were just thankful of the extra holiday..not too keen to go out during these freezing days though. Also, i was not feeling well but my kids were healthy, Alhamdulillah! :)

By the way, the snow is here already! Started falling from last night without we realized it. So this morning we woke up surprised and happy to see some snow at our backyard! Subhanallah, it is still beautiful view and we are expecting more snow to fall through the rest of the day until tomorrow. Perhaps the thick blanket of snow and winter wonderland like last year if we are lucky, in shaa Allah!


The cons of this kind of weather kinda makes me worry. The Eins tend to get athmatic if they are exposed in too much cold condition. It triggers running nose and then that normally can lead to athma.  Even though i'm having bad running nose now but i think i am immuned with althma already. Alhamdulillah. Just hoping all my kids and hubby will stay healthy throughout this Winter. Amin!

Out of nowhere my mood of cooking is coming back to me. hihi so yesterday i searched recipe at my resepi and i stumbled upon Yani's Ayam percik recipe Kelate style. Ooh i was drooling ok! Ahaha.. Then after checking for ingredients, i had most of the ingredients so i gave it a try! ;) And it turned out delicious...hubby was also surprised to see the ayam percik and really enjoyed it. So did the kids! Happy mak..ahahaha.


Since i was still in the mood, i planned to make a snack for tea time. Suddenly i remembered hubby's  request..he had craved for Cakoi..uols!! Hohoho i never make it before and never think i would try hehe so i searched for it's recipe, got from Izah Daut blog but the recipe comes originally from the famous amos MamaFami. Credit to both of them. ;) But this one honestly, not turned out good. I was always not good with something which needs yeast. :P But at least i already gave it a try and did my best, right Darling? hiihi.


 For the chocolate cupcakes below, it was hubby and the Eins project!! Are not they look yummy? It was yummy!! coz it made full with love. hihi Another bonding session between hubby and the girls. I was so surprised to see the outcomes and even more surprised when hubby said they did not use any recipe. They just did it! OMG, super terer than ummi ok! i'm so proud of them!! ^^ (the Eins so into baking..everyday they watch baking clip after one and another at youTube..and even installed free baking apps in our iphones. hubby siap berangan nak bukakan derg baking shop lg in the future ;D)


Anyway the spirit to cook is still prolong in me so i hope i can try more new recipes for my small family through out this year. In shaa Allah. Amin..

HOME-MADE BURRITO OR TACO DE HARINA

Assalamualaikum

Burrito or Taco de Harina is originally come from Mexico. Hmm yariba, yariba! :P Actually, both are the same thing, the difference is only their physical presentation. Burrito is fully and roughly wrap or folded cylindrically covering whole the fillings whereas simply Taco only covers the half of the fillings. ;)

I had my first ever Taco back in Coventry in 2007. our neighbour made it and they kindly gave us some to try. It was delicious and hubby fell in love with it straightly. ;) Back then, that one was improvised by using a pocket pita bread. ;) 

By the way, we went to Halal restaurant at The Exchange Mall recently. El Mexican. Alhamdulillah the Rezq of being East Londoners. :P (East London was most populated by Muslim, hence you can get Halal food easily. Halal butchers, fast food and restaurants are everywhere. ;) ( I did joke like 'This is not London, this is Lahore!!!" :P)

By the way, we had ordered Burrito, Nachos and Orange Crush drink. Yup, just one set to save the money and afraid that the taste was only so so since it was our first time experience with the restaurant. But Masya Allah they had turned out so delish and we cannot get enough of it especially me!! So sad kene share mkn berempat hokey T_T. Wakakaka tak bersyukur kannn. Nak order lagi dah tak sempat, nak kejar masa untuk ambil Zahin kat sekolah plak..hmm tak pelah next time plak lah. ;)

It was yesterday I suddenly craved for it uols! I kept picturing the yummilicious El Mexican Burrito again and again at the back of my mind! Oh i could not help it..T_T. To go to El Mexican again is a thin chance since we just had it couple weeks ago, so unwise and unfair lar just to fulfill my desire rite..;) Maka bermulalah adegan membuat Burrito/Taco senirik!! hehehehe.

Honestly, i just made it by recalling back what i had watched closely the waiter and the waitress put and did during our visit to El Mexican. Ingat-ingat lupa. Obviously, i did not know the exact ingredients they used as all the ingredients were all ready to be put into a container. A customer will first choose the container be it a tortilla or a paper box if i am not mistaken. Lupe dah..makin pelupa lah sekarang..:( Anyway for us, we chose the tortilla one like in the pictures below..;)

Whereas the rest of pictures below are the ingredients i used and put into my very first home-made Burrito and Taco! I had made both type! ;D

For El Mexican, they put some rice cooked in Mexican style, but i did not put in mine. May be that's the reason why mine was not as good as theirs..heheh :P For the meat, i chose chicken and i just fried them in a small quantity of olive oil which had first marinated with grounds paprika, cayenne, turmeric, salt and cumin. El mexican used Tikka, Masala. Next time i should try using these two herbs as well!

boneless chicken, tortilla wrap, Elmlea Double light cream, Tesco cheese singles, Bramwells mayonnaise, lettuce,  chilli sauce (not in the pic)

making the cheese/nachos sauce first..i just mix the cream, some fresh milk, cheese singles, some fresh milk, salt and chilli sauce. Stop when the mixture turns colour to orangish..:D

regular size of Old el Paso tortillas..very soft texture and cheap too

there are many ways to cook the tortilla but i just heat it in the microwave..then put the ingredients one by one onto it. for me i put the chicken first, then followed with the rest..and the topping of course the cheese sauce and the mayonnaise! Oh i think el Mexican put theirs with minty sauce. will try next time insyaAllah!

and this is my regular 'customer' who had first bite with his Taco...and as usual he commented  "Hmm sedapppp..."
hehehe i hardly believe him because he always say so everything that i cook. :D

Well, i say it was not bad but was not as great as El Mexican's. (What you expect from this amateur cook, right? :P) But insyaAllah will try it again and again. Practice makes perfect, rite? Also, sesuai jugak ni buat bekal Zahin kat sekolah kan! ;)

Actually, i want to continue the story from the previous post but i can't as hubby's using his lappie doing Modelling where all the pictures were in the  memory card that only his lappie can access them. Instead, This PC does not have the memory card slot. No worries, insyaAllah i will try to update it later k..

Ikan Siakap 3 Rasa Ala Thai

Here it's very hard to find fresh fishes that i usually eat in Malaysia. I really miss to eat fish like ikan kembung, selar kuning, cencaru, parang, pari, sembilang and keli. Ada but mostly yg frozen punye which i don't buy sbb confirm tak sedap!

Being me who born in town like Muar and after married we stay in Melaka, fresh fishes are everywhere, fresh yet so cheap!! Not only fishes but other kind of seafood such as prawns, squids, kerang or even kupang. Klu dr Muar otw to Melaka mmg byk stall tepi-tepi jalan jual ikan je. Aihh kt sini? Nangis dululah baru dpt mkn ikan kot!

Ok actually, there is a huge wholesale market called Billing Gate market. Only hubby who had ever went there once. I never been there bcoz it's quite far from our house and it is opened only early in the morning. Best pergi pukul 5-6am baru byk choice, ikan fresh2. Tapi mmg tak kuasa nak pergi pagi-pagi buta dgn nk heret all my kids. So idokla pergi2 smpi skrg!

Until recently, our friends told us there is a seafood market in Dagenham Heathway! DH is just our neighbourhood's neighbour so without any delay we went hunting for the market after got the exact direction from Ana. Thanks to her we found the market and i was over the mood to see fresh seafood in front of me! Although not like in Malaysia and the choice are still limited but at least i can get them everyday if i want! Hehe. Betul, klu beli kt Billinggate market kene beli borong. Tak sesuai for my family yg kecik ni n our freezer yg sempit too..

So early of this month, we bought 7 seabasses for £10. It's really cheap bcoz klu kt Asda or Tesco seekor seabass cost us £4 tau!! Huhu mhl yg amat!! So apalagi borong terus smpi 14ekor maklumlah wpon ahli bait sy ni lima org je tp kuat mkn ikan esp me!! Hee my hubby tk brp mkn ikan, dia prefer ayam, daging, udang n sotong psl tade tulang! Hehe..manja tau hubby, sll i yg buangkn dulu tulang ikan utk dia ;D

So smlm ada tgl 7 ekor lg seabass. I took couple of them n then cari resepi nk msk apa. Ye la kn takkan nk grg rempah aje boring dah! Then cari2, tumble on Aznanie.blogspot.com. Popiah@Spring Rolls

Salam

Ini first time buat popiah sendiri! Hehe. Kalau kt Malaysia jangan harap saya nak buat..kalau teringin beli je kt gerai tepi jalan pada waktu petang, sure ada! Cuma sedap tak sedap tu je kene tanggung sendiri hehe.

So untuk iftar ke 19 hari ini, awal-awal lagi saya dah keluarkan pastry popiah dr freezer. Bahan-bahan intinya saya guna je apa yang ada..mince chicken, carrot, daun bawang dan bawang besar yg dihiriskan terlebih dahulu. Kemudian tumis je semua ni dan letak garam. Bila dah masak, angkat dan sejukkan seketika sebelum diletakkan di atas pastry popiah. Kemudian gulung ikut arahan di belakang paket dan goreng!

Alhamdulillah senang je rupanya. Rasanya pon sedap, sekelip mata licin. Hehe lain kali boleh buat lagi dan tak payah beli kot bila balik Msia nti. Hehe.

Esok tatau lagi nak buat apa. Daripada haritu Teringin nak makan tepung pelita atau cara berlauk tapi tak pernah buat sendiri lagi. Nak cuba asyiklah tertangguh-tangguh. Huhu. Tapi buka puasa kalini mesti nak makan manis-manis je..macam kek, puding atau agar-agar. Hehe..

Apapun berpuasa kt sini betul-betul menginsafkan. Tiada bazar Ramadhan kt sini, so nak makan apa kene try buat sendiri. Pastu jimat sbb buat dlm kuantiti yg sedikit cukup-cukup utk kami berlima. :)

Butterfly Lychee Jelly

I've been craving for lychee jelly since i first time ate it at Yati's house few months ago. It's so yummy and my taste! Ada org tak brp suka kan..;) Ever since, i wanted to try myself. Tapi aseklaa lupe.. Huhu.

But last week, i remembered to buy lychee but in can ones..(janji lychee ;p) so yesterday i made it! Itupon 2 tin dah selamat..kids nak air lychee la plak. Hehe. So sebelum habis sume, baiklah buat kan..karang kempunan lg ummi nak mkn lychee jelly. Ummi yg lebih kannn..hehe..

Hmm for me, yang Yati buat lg sedap and perfect for my taste. Rasa sbb kurang susu cair sbb kurang lemak2 rasanya gitu..huhu nasiblah sbb susu cair dah guna sket sblom tue..malas ummi nak bkk tin lain..

Nway, hubby and kids love it! Habis derg mkn, apatah lg jelly tu dlm pelbagai bentuk! Ada butterfly, teddy bear and ladybird. Sorg satu. For ummi and babah ummi ltk dlm tall glass, romantik gitu makan share satu gelas. Hehe.

Hmm Okla..rasa jgk lychee jelly tu kan cuma krg lemak je la. huhu Tak sedar lg tu padahal badan dh byk lemak2 degil ni. Hehe..tp alhamdulillah sejak msk bln puasa ni nmpk kempis sket peruts ni. Hehe tp sket je la huhu..

Okla mcm2 jg masak bln puasa ni, cuba resepi baru tp tak dan nak share kt sini. Tengok Dinie rajin buat tu ini, terus tergerak nak share butterfly lychee jelly yg buat smlm ni. Hehe..

Banana Cake

The ingredients
4 bananas (meshed)
3 eggs
1 3/4 cup of self-rising flour
1/4 cup of corn flour
1 cup of sugar
1 cup of cooking oil
1 tsp of soda bicarbonat
1 tsp of ovalette
1 tsp of vanilla essence
A pinch of salt
The methods:
1. Batter eggs and sugar until white and fluffy with hand mixer.
2. Pour the meshed bananas, vanilla essence and ovalette into the mixture and mix them throughly.
3. Then pour the flour, corn flour, soda bicarbonate and salt into the mixture. (note: use a spoon to mix them first before using the hand mixer to avoid the flour from blown all over :D)
4. Lastly, pour the cookin oil into the mixture and mix before placing the mixture into a square-shaped tin and bake in oven at 160degrees or gas 4 for 1hour. (this depend on your own oven k ;))
Alhamdulillah after three times of trying my banana cake was up to standard haha. This time i even dared to bring it to a friend's house for Yassin recitation on last saturday. Licin! Hehe.
So thank you to my friend aka my sifu Yus who left her recipe and her baking set especially the Ovalette (not sell here) before going back to Malaysia, for good!

Sambal Jawa



Since i've started my study, i kinda loose my passion in cooking. I still cook as i have to but i will make only one dish and the one that can be prepared as fast as i can now. So no more nasi lemak, nasi ayam, nasi tomato, nasi minyak/beriyani, lasgna etc. To name a few ;) nway pity my kids. Me sad too. Tak boleh kalau tak makan nasi. :'(

Anyhoo, last weekend, first time i had made sambal jawa! Co incidently, i'd made some amount of chilli paste to keep in stock on saturday, then was when the idea popped up to make sambal jawa! :D
So here the recipe of Sambal Jawa that i'm happy to share with ;)

The ingredients:

Marinated Tempe (soy cake)
Anchovies
Vermicelli (su'un)
Big/indian onion
Red/green chilli
Vegetable oil
Chilli paste
Tamarind water
Brown sugar
Salt

Steps:

1. Fry the marinated soy cake and anchovies separately till it become crispy.
2. In a pan, heat the vege oil and pour the chilli paste. Cook it until the oil comes out. Also pour some amount of tamarind water. Then stir until the colour of chilli change from bright red to darker red. Sprinkle some sugar and salt up to your liking too.
3. Simply mix the fried tempe and anchovies and su'un into it. Lastly spread the chopped onion n red n green chilli too.

P.S My daughter loves to eat tempe this way. If i just make it fried, she will not eat it. Hehe.

White Sauced Beef Lasagna

I always make lasagna again and again as per request from hubby and sometimes family too! (Suka cheese punya olang!hehe.) after all it is easy-peasy, so recently it was hubby who had made it for our iftar. Bravo!;)
Only, it's the first time we used the white sauce and the taste was undeniably better plus it was prepared with love kan..;) So the outcome turned walla and it was churned with love too!
So here it goes the recipe..;)
The ingredient:
1 bombay onion (chopped)
2 laddle of unsalted butter
400g of mince beef/chicken
Ready made lasagna tomato sauce and cream (white sauce and i used Dolmio brand)
Lasagna sheets
Mozzarella cheese (grated)
Some vege if you like
The instruction:

1. In a pot, melt the butter with medium heat, then cook the chopped onion with beef chicken until brown and tender. ( can put some water to quicken the process)
2. Pour the tomato sauce and vege then stir them evenly for about 5-10mins. Off the heat.
3. Prepare the ceramic casserole and arrange lasagna sheet into it. Then pour the tomato and meat gravy onto it and make sure it covers all the surface. ( tips: layer the sauce thinly so u can have layers of lasagna sheets;))
4. Then sprinkle the grated cheese on the gravy and start repeat no.3.
5. Once finished, this time you spread the white sauce onto the gravy and again must cover all the surface.;)
6. Repeat no.3 with no.5 & 6 (selang-selikan) until no more space left in the casserole. The final layer should be layered with grated cheese.;)
7. Preheat oven for 10mins and then bake for 45mins at 160degree C.
8. Then serve it best when its cool and with the white sauce. Yummy!:)

Agar-agar Rainbow

I made agar-agar rainbow or jelly rainbow during our 14th Iftar. I got the recipe informally from one of The sisters i just met during yus's house warming last month. So ingat-ingat lupa gitu..so I simply improvised it here and there.hihihi.
1/3 of packet striped jelly
2 cups of water
1 cup of granulated sugar
1 egg
1 cup of fresh milk
2 Tbs of custard flour
A little essence of vanilla
A little cocoa powder, red and green colour
The method:
1. Soak the striped jelly for awhile then cook in the pot with two cups if water and 1 cup of sugar.
2. Mix the custard flour into a cup of fresh milk and filter them by using a sieve.
3. Pour the mixture into the pot and stir Them evenly until boiled.
4. Divide the mixture into 3 bowls. Put each with cocoa powder, red colour and green colour. ( u can divide into 4, 5 or even 7 as well ;P)
5. Prepare the casserole which one end is a little higher than the other. Then start pouring each mixture one after another. ( cocoa mix, red, green and repeat the process)
6. Once finished, cover the casserole with cling film and cool it in the fridge as long as you want!:)
The outcome was Walla walaupon tak segebu yang i nak. (hihi banyak songeh plak ek :P) May be next time kene tam-bah telur kan, tak gitu?;)

Sticky Chicken Wings






8 large chicken wings

For marinating:

2tbsp honey
3 tbsp dark brown sugar
3 tbsp tomato ketchup
4 tbsp soy sauce
2 garlic cloves, crushed
1-2 tsp sundried tomato paste
Pinch dried chili flakes to taste

To prepare:

1. Mix the marinade ingredients in a bowl and add chicken wings, turning so they are coated. 

2. Cover and chill for 30 minutes or overnight if you have time.

3. To cook on a preheated barbecue, spread over direct heat for 6-8 minutes, turning at least twice, then give them 10-15 minutes over indirect heat, turning often until burnished or cook through.

4. If using a conventional oven, spread out on a lined baking tray and cook for about 45 minutes at gas 6, 200'C, fan180'C turning halfway through the cooking time.

Easy-peasy! Nway I used no.4 method. ;)

We loved it to the bits and surely will do it again n again..hihi. And Next Iftar I'm gonna make chicken rice with this chicken style..;)

Strawberry Smoothie


We had strawberry Smoothie for Iftar yesterday. I wanted to finish up the strawberries that we picked ourselves at a farm. Will try to update about it insyaAllah.
Lemme share the recipe! So long since I last shared one eh ;)
Some Strawberries
Two seedless clementines
One third tin of carnation evaporated milk
Some sugar, cool water and ice cubes ( no exact measurements. It's up to you ;))
Then blend all of them together n it's ready to be served. Here it goes my first hommade Smoothie ever.Kesian.. Hihi tp yg ptg Hubby kata sedap!! Yay!! ;D

HOT FRIED FUSILLI WITH MOZARELLA CHEESE


Feel so long not updating any cooking experiment in this blog. I'm afraid i would loose my interest. ;p Actually, i just have a mood to take picture of my experiment today so there it was! A hot fried fusilli with mozarella cheese. Resepi suka hati so bagi nama pun suka hati lah. :D

As usual, if i cook i will try to cook as simple as i can. ;)

The ingredients:

Small quantity of cooking oil and butter
Some paste of garlics, onions and anchovies
Some paste of chilli
3 Tbs of oyster sauce
Some of sirloin beef
Some medium size of prawns
Some carrots, baby corn, coriander leaves
Some fusilli pasta (boiled to cook n toasted)
2 eggs
a pinch of salt n black pepper
mozarella cheese

The method:

1. Preheat the cooking oil in the wok. Then saute the garlic, onion and anchovie paste until golden and smelled.

2. Pour chilli paste and beef. Fry them for a while or until the beef are cooked.

3. Put some oyster sauce and prawn and stir them evenly.

4. Put into it butter, salt and black pepper before pouring the pasta into it.

5. Then put veges into it and give them a stir.

6. After a while, put the eggs, mozarella cheese and stir them evenly.

7. Taste, and add whats should be addded..then it's ready to serve! ;)

Lastly, I'm happy that i'm sharing this humble recipe...hihihi.

NASI MINYAK BY ZAHIN'S REQUEST

Last friday, Zahin had asked me to cook Nasi Minyak again. Yea, she had asked for it earlier but i didn't have mood to cook Nasi Minyak yet at that time. :( But when she asked while she was sick, it really touched my heart. So this time i made an attempt to cook but the very simple Nasi Minyak for her and glad that it suited to her liking. (Before that she had refused to eat anything). Also i made chicken curry without a coconut milk to be eaten with Nasi Minyak. :) 


I'm sure everybody knows how to make Nasi Minyak and chicken curry but still i want to share how i did it in here. ;)

Ingredients:

3 cups of Basmathi rice
4 cups of water (this depends on your rice, mine doesn't need too much water)
4 red shallots (sliced finely) *
2 garlics (sliced finely)*
1 ladled of Ghee oil
2 star anise*
1 cinnamon stick*
2-3 cardamom pods*
2-3 cloves*
1/2 tomato (sliced finely)
salt to taste
Raisins or other like cashews (optional)

Directions:

1. Wash, rinse rice well and drain it. Put it aside.
2. Heat Ghee oil in a electric rice pot and fry all with * until soft and fragrant
3. Add in the tomato and salt and stir all evenly.
4. Pour the rice into the pot and pour water, add the raisins and keep stirring evenly for a while. Off the heat.
5. Cook the rice on electric cooker like cooking the ordinary rice.
6. When it cooked, give it a stir first before ready to serve. (Gembur2 kan. :D)

I tell you, it is very simple one! :D

Yesterday we had to take Zahin to A & E at N.U.H since her condition not getting any better and she didn't sleep at all the whole night due to breath problem. So I packed a bag and brought Nasi Minyak along in case if we stranded there. We had stranded for quite long hours. Luckily, they allowed us to bring our own food inside. So all of us had eaten Nasi Minyak and Chicken Curry in the cubicle ward at Emergency walk in centre. ;D

Nway, it was tiring of waiting from 11a.m but it's all worth it when finally at 5p.m, Dr. Benjamin allowed Zahin to go home. I dunno what would happen to Iris if Zahin had to admit ward..Since Zahin's oxygen saturated level showed above 90%, doctors decided that she could go home and just gave her an inhaler, volumatic spacer device and steroids to be taken according to their directions. It's f.o.c. If only her condition got worsen, Doc asked us to bring her back immediately.
