Grilled Sardine (Ikan Sardin Panggang Bercili)

I bought a small size fresh sardine enough for two persons, me & hubby..... cooked this dish for our simple lunch which was complemented with veg soup.

INGREDIENTS:
1 Fresh Sardine (weighed about 300g)
1 Calamasi
2 Red Bird-Eye Chilies
2 Shallots
1 clove Garlic
1 thin slice Ginger
1 Candle Nut
1 tsp Turmeric Powder
1/2 tsp Sugar
Salt

METHOD:
1. Slice the cleaned fish from side way and open up.
Rub fish with salt and calamasi juice. Marinate for abt 10 min.
2. Blend the rest of the ingredients and pour onto fish evenly.
3. Heat up griddle and place a piece of banana leaf, 1 tbsp. oil and the fish.
Grill until done on the bottom side and flip the fish.
Cook until fish is done.
4. Serve with white rice.

 Along jumpa ikan sardine segar..... besar juga lah cukup utk dua orang makan... Ikan sardin sedap panggang macam ni.... Along masak sup sayur gandingkan dgn lauk ni untuk makan tengahari.... Alhamdulillah, hubby selera makan.

BAHAN2:
1 ekor Ikan Sardin (berat ~300g)
1 bj Limau Kasturi
2 biji Cili Merah
3-5 bj Cili Padi
2 ulas Bwg Merah
1 ulas Bwg Putih
1 hiris nipis Halia
1 bj Buah Keras
1 sk Serbuk Kunyit
1/2 sk Gula
Garam

CARA2:
1. Ikan di bersihkan dan di hiris dari sisi, jangan putus dan supaya melebar spt gambar.
Lumurkan garam dan jus limau kasturi. Perap 10 minit.
2. Blend kesemua bahan2 yg lain dan lumurkan pada ikan.
3. Panaskan kuali leper, letak sehelai daun pisang, 1 sb minyak dan ikan.
Panggang sehingga garing dan balikkan.
Angkat apabila kedua2 bahagian telah masak harum.
4. Hidangkan dgn nasi putih.

Ikan Tongkol Masak Kunyit Berlada (Mackerel Tuna in Turmeric Chilies)

1 st Serbuk Kunyit
5 ulas Bwg Merah*
2 ulas Bwg Putih*

1 bj Bwg Besar - hiris
1 bj Tomato - potong 6
1 keeping Asam Gelugor

CARA2:
1. Lumur ikan dgn garam dan serbuk kunyit.
Goreng sehingga masak, angkat dan ketepikan.
2. Panaskan sesenduk minyak, tumis bahan2 blend*, serbuk kunyit & serai ketuk sehingga naik bau.
Masukkan 1/4 cwn air, asam gelugor, garam & didihkan.
Masukkan ikan, bwg besar & tomato, kacau sehingga mesra rasa.
3. Hidangkan dgn nasi putih.

~ 500g Ikan
5 bj Cili Merah*
2 bj Buah Keras*
4 bj Bwg Merah*
2 bj Bwg Putih* (* tumbuk kasar)
2 bj Tomato - cincang
1 sudu mkn Kicap Manis
Garam, Gula

CARA2:
1. Lumur ikan dgn garam & asam jawa, perap sebentar.
Goreng sehingga masak, ketepikan.
2. Tumis bahan2 tumbuk* sehingga pecah minyak.
Masukkan tomato, kicap, garam & gula; masak sehingga sebati.
3. Gaulkan dengan ikan goring tadi.
4. Hidangkan dgn nasi putih.

Baked Lemon Salmon

 I was so successful with the recent Baked Lemon Shrimps which whole family enjoyed so much and therefore the boys suggested I do the same recipe with Salmon. Their food imagination is great as lemon ad salmon matched and blended very well.... it turned out so delicious!

Serves: 4 persons 
INGREDIENTS:
1 medium whole Salmon - slash the skin as shown in photo about 1cm deep
100g Butter
1 Lemon - sliced 
Seasonings - garlic salt, pepper, dried corriander, chili flakes
Vegetables - Tomato, Cauliflowers, Carrots

 METHOD:
1. Rub salmon with the seasonings.
2. Spread butter evenly in a casserole and arrange lemon slices on top.
Place salmon and vegetables on top of the sliced lemon and sprinkle more herbs.
Spread dollop of butter on the fish.
3. Bake 180C for 20 minutes or until done, do not overcook so that fish remains juicy.
4. Serve with white/butter rice or potato.

Hari tu Along ada kongsikan resepi Baked Lemon Shrimps kan.... hubby dan anak2 kata sedap.... My boys siap kasi idea suruh masak camtu juga tapi guna ikan salmon.... hmmmmm.... pandai gak budak2 ni kalau pasal nak makan sedap....heheee. Tapi memang betul lah.... sedap sesangat.... we all puas-hati dinner malam tu....

Hidangan: 4 orang
BAHAN2:
1 ekor Ikan Salmon sederhana besar - kelar2
100g Butter
1 bj Lemon - hiris2
Perasa - garlic salt, serbuk lada hitam, dried corriander, chili flakes
Sayuran - Cauliflower, Tomato, Karot

 CARA2:
1. Lumur ikan dengan bahan2 perasa sehingga rata.
2. Sapu butter di dasar casserole dan aturkan hirisan limau.
Letak ikan dan sayuran di atas hirisan limau.
Tabur lagi bahan2 perasa dan tabor ketulan butter atas ikan.
3. Bakar 180C selama 20 minit sehingga masak. Jangan terlebih masak supaya isi ikan tidak terlalu kering.
4. Hidangkan dgn nasi putih/butter atau kentang.

Ikan Masak Asam Rebus Buah Asam Kedung

Masak Asam Rebus Kunyit, ganti asam keping dgn buah Asam Kedung..... lebih sedap sebab buah ni segar dan ada rasa masam manis.... Along dapat buah ni kiriman sis Hanifah dari Sarawak... such a lovely BFF selalu ingat kat Along bab2 makan ni.... mmmmuah2.

1 hiris Lengkuas*
2 bj Cili Merah*

CARA2:
1. Masukkan kesemua ke dlm periuk dan masak sehingga mendidih dan ikan masak sepenuhnya.

Baked Lemon Shrimps (Udang Lemon Bakar)

 Super easy and quick and of course super delicious too....! Had the idea from shared video in facebook but I ended up doing it my way.... I prefer to keep the shells on as that gives extra sweet flavor to the shrimps. I seasoned it with my favourite herbs but followed the idea of baking the prawns on lemon slices! It produces delicious lemon sauce once done.... all it takes is only 15 minutes in the oven! Try it yourselves....

I didn't weigh the shrimps when I made it.... so use your own judgement.

Serves: 2-3 persons 
INGREDIENTS:
Shrimps - cut a slit at the back of each shrimp 
100g Butter
1 Lemon - sliced 
Seasonings - garlic salt, pepper, dried corriander, chili flakes

METHOD:
1. Mix shrimps with the seasonings.
2. Spread butter evenly in a casserole. 
Arrange lemon slices on top, followed by shrimps.
3. Bake 180C for 15 minutes.
4. Serve with white/butter rice.

 Sekali-sekala kena cari idea baru.... nak yang senang2 tapi sedap.... ok, meh cuba resepi yg amat mudah.... kalau mood malas pun boleh buat dan dapat makan sedap....hahaaa. My hubby and sons semua kata sedap, so kira pass lah kan. Sos dia sedap.... masam2 lemak memang kena dengan udang.... Buat sikit testing jer ni... lepas ni kena buat lebih sebab syok ratah2....

Udang tu agak2 jerlah banyak mana nak letak ok.

100g Butter

1. Gaulkan udang dengan bahan2 perasa sehingga rata.
2. Sapu butter di dasar casserole.
Aturkan hirisan limau, di ikuti dgn udang.
3. Bakar 180C selama 15 minit sehingga udang masak.
4. Hidangkan dgn nasi putih/butter.

2 sb Pes Cili Kering
1 kiub TomYam
2 sb Sos Tiram
4 sb Sos Tomato
2 sb Sos Cili
1 sb Kicap Manis
Sayuran campur - Karot, Cauliflower, Capsicum, Terung, Tomato, dll
1 sb Tepung Jagung - bancuh dgn sedikit air
4-5 helai Daun Limau Purut
Garam, Gula

CARA2:
1. Lumur ikan dgn sedikit garam & serbuk kunyit.
Goreng sehingga masak & garing. Ketepikan.
2. Tumis sedikit minyak dan tumis bwg putih/besar, halia, serai sehingga wangi.
Masukkan pes cili dan kiub tomyam, kacau sehingga pecah minyak.
Masukkan kesemua jenis sos, kicap, 1 cwn air, garam, gula dan biar mendidih.
Masukkan bancuhan tepung jagung dan masukkan daun limau purut dan sayuran.
Masak sebentar sehingga sayuran layu. 
3. Curahkan ke atas ikan goreng tadi.
4. Hidangkan segera.

Salmon Curry (Kari Ikan Salmon)

It is easy to find Salmon in KL anytime at any hypermarkets and it is way cheaper than in Miri. I bought a small size Salmon and tried cooking them in curry today for our Iftar day#9... it turned out delicious!

INGREDIENTS:
1 small Salmon (weighing less than 1 kg)
1 Brinjal - cut
1 Tomato - sliced 8
1 scoop Vegetable Oil
5 Shallots*
3 cloves Garlic* (*sliced)
2 sprigs Curry Leaves
1 tsp Fenugreek Mix (Halba campur)

3 tbs Curry Powder - add enough water to form thick paste
1 bowl Coconut Milk
1 tbsp Tamarind - add water to produce tamarind juice
Salt

METHOD:
1. Heat up oil in a pot & stir-fry sliced* shallots & garlic, curry leaves and fenugreek mix until fragrant.
Add in curry paste & stir until fragrant and oil surface out from the paste.
Add a bit of water from time to time to avoid burning and sticking at the bottom of the pot.
2. Add in coconut milk & tamarind juice and stir until boiled.
Add in salt, fish and brinjal. Add in tomato only after fish and brinjal are done.
Boil for several minutes before switching off the fire.
3. Serve with white rice or roti.

Alhamdulillah, di izinkan Allah dan di beri tenaga untuk menyiapkan juadah Iftar hari ini yg sudah pun jatuh hari ke 9. Dah takda modal nak masak apa sebab si AlongRiz mesti nak makan lauk ayam.... so Along masak lauk kari ikan dan goreng ayam untuk dia....hehee.
Kat KL ni mudah nak dapatkan ikan Salmon bila2 jer... harga pun murah jer di bandingkan dgn harga di Miri... di sebabkan murah, kita karikan jer lah dia.... kalau mahal sayang gak kan, mesti nak panggang ala2 western gitu.... Ikan Salmon ni lemak rasa nya, so bila di karikan memang sedap!

Ni cara Along masak kari... sempoi jer, semua bahan2 di hiris jer tak payah di tumbuk lebih sedap begini....

BAHAN2:1 ekor kecil Ikan Salmon (berat kurang dari 1 kg)
1 bj Terung - potong2

1 bj Tomato - potong 8
1 senduk Minyak Masak
5 ulas Bwg Merah*
3 ulas Bwg Putih* (*hiris)2 tangkai Daun Kari
1 st Halba Campur
3 sb Serbuk Kari Ikan - campurkan dgn sedikit air menjadi pes
1 mangkuk Santan

1 sb Asam - perah dgn sedikit air
Garam


CARA2:
1. Panaskan minyak di dlm periuk & tumis bahan2 hiris*, daun kari, halba campur sehingga wangi.

Masukkan pes kari & kacau sehingga terbit minyak, masukkan sedikit air dari masa ke semasa supaya tak hangit dan melekat di dasar periuk.
2. Masukkan santan dan air asam jawa; biarkan mendidih.
3. Masukkan garam, ikan dan terung; masukkan tomato hanya apabila ikan dan terung sudah empuk.
Biarkan mendidih beberapa minit sebelum api di tutup.
4. Hidangkan dgn nasi atau roti.

Ikan Liking dan Petai Goreng Bawang

My BFFs gave me "Ikan Liking" and "Petai" in my recent trip to Miri this month. Ikan liking is an authentic Sarawak sourish preserved fish (not sure what fish).... Petai is another Malaysian authentic stink bean which is well known for its health benefits - despite the strong odour ones can get 'addicted' to it....hehe. Combining both of these authentic Malaysian food yields most appetizing dish.... I had three plates of rice that night.... just could not have enough of it.....LOL! Thanks so much to my two lovely BFFs who always have something for me in every trip. I hope we will meet again after this as it was my last official trip.

Along nak perkenalkan satu lagi makanan asli dari Sarawak iaitu Ikan Liking. Ikan ni di perap dengan cili dan asam. Bila di goreng ia rangup sangat dan amat menyelerakan di hidangkan bersama  bawang & cili goreng. Along hidangkan bersama Petai Goreng Bawang, aduh rasa cam tak boleh nak berhenti makan nasi malam tu sampai 3 pinggan Along bedal... ya rabbi jarang sangat Along makan lahap camtu.....hahahaa. Terima-kasih dua orang BFFs yg kasi buah-tangan petai dan Ikan Liking sewaktu berjumpa di Miri baru2 ni.

Nak gak ke resipi.... oklah, in case ada yg nak....

CARA2:
1. Goreng Ikan Liking dgn minyak secukup nya, sehingga garing.
2. Buang minyak yg telah di gunakan dan ganti dgn minyak yg baru.
3. Goreng pula hirisan bawang besar, cili padi & petai sehingga layu.
4. Hidangkan kesemua nya dgn hirisan limau jika suka.

Tilapia Masak Lemak Cili Api

 Fresh water fish cooked in spicy green broth is so typical Malay dish in Perak....

INGREDIENTS:
1 Tilapia Fish - clean & cut
3 Shallots*
1 Green Chili*

Some Chili Padi*

1 pc Turmeric Root* (*pounded)
1 tsp Turmeric Powder
1 bowl Thick Coconut Milk

1 Lemongrass - bruised

1 piece Dried Tamarind
Salt


METHOD:
1. Place all in a pot & stir all the time until boiled.
Boil further until fish is cooked.
2. Serve with white rice.

Oghang Peghak kalau tak pandai makan Masak Lemak Cili Api, bukan oghang peghak tulen ler....heheee.... Boleh di katakan apa saja pon boleh di masak Gulai Masak Lemak Cili Api. Along pon dah post bermacam2 jenis Gulai lemak kat blog ni tapi lum tunjuk lagi masak ikan Tilapia.

Telur Terubuk Masin (Salted Fish Egg)

Salted Longtail Shad Eggs are very popular in Sarawak and quite pricey. Deep fry it and serve with fried onions and chilies to accompany white rice or rice porridge.

Lampam Asam Kunyit

My auntie (Acu) gave me a freshly caught carp during my visit to Sg Petani recently. It was huge so I fried half of it and cooked this dish out of the remaining half. My hubby and I love this kind of healthy dish - well balanced spicy, sweet and sour taste fragranced with lemongrass and galangal flower.

 Recipe in English will be provided if there is any request.


BAHASA MALAYSIA VERSION
Sedap nya masak asam rebus-rebus ni... buat nya ikan tu segar dari sungai. Rezeki Along dapat seekor ikan Lampam segar dari MakCu. Along teringin nak makan goreng & cicah air asam dan juga teringin nak masak Asam Kunyit. Ikan tu cukup besar, jadi Along potong dua, sekerat goring dan sekerat masak asam. Selera kami dua laki bini makan hirup-hirup....hehee.

Nak masak rebus ni kena pandai imbangkan rasa masam dan pedas nya. Jangan terlalu masam supaya tidak hilang rasa manis ikan yg segar. Meh tengok camna Along masak lauk ni....

Seared Garlic Salmon (Salmon Goreng Berlada)

 My family love salmon and particularly this version which is seared in butter and olive oil. Serve with pasta or rice along vegetables.

INGREDIENTS:
1 Medium size Salmon - slice & cut into one serving size 
1/2 Lemon - squeeze juice 
1 tbsp Black Pepper Corns - pounded 
4-5 cloves Garlic - pounded 
Salt
Butter, Olive Oil

METHOD:
1. Rub salmon with salt, lemon juice, pounded garlic & black pepper.
Marinate for 5 minutes.
2. Heat up griddle and melt butter and olive oil.
Place salmon pieces and leave to cook (do not flip until it is done and crispy on the surface).
Flip and cook the other side until lightly browned.
3. Serve with rice, garlic bread or pasta.



BAHASA MALAYSIA VERSION
Anak-anak Along suka sangat makan Salmon, terutama kalau di goreng simple macam ni.... di perap sebentar dan di goreng sehingga kulit nya rangup.

BAHAN2:
1 ekor sederhana Salmon - hiris & potong utk saiz 1 hidangan setiap keping
1/2 bj Lemon - perah jus
1 sb Lada Hitam Biji - tumbuk
4-5 ulas Bwg putih - tumbuk
Garam
Butter, Minyak Zaitun

CARA2:
1. Lumur salmon dgn garam, jus lemon, bwg putih & lada hitam secukup nya.
Perap selama 5 minit.
2. Panaskan kuali pemanggang dan cairkan butter & minyak zaitun.
Masak salmon sehingga kulit nya garing (jangan di balikkan sehingga betul2 masak).
Balikkan sehingga masak sebelah lagi.
3. Hidangkan segera dgn nasi, garlic bread atau pasta.

Fish Soup (Sup Ikan)

 We had fresh fish from kampung so cooking them into simple soup is really nice as they are still 'sweet' and I don't want to overwhelm them by too much spices or additional flavours. Balance it with Sambal when serve with rice for hot touch!

INGREDIENTS:
1 medium size Fish - cut into pieces
4 Shallots*
1 clove Garlic*
1" Ginger*
1 tsp Black Pepper corns* (* pounded)
1 small Carrot - dice
1-2 Potato - peeled & diced
1-2 Tomato - cut
Some chopped Chinese Celery & Spring Onion
Salt

METHOD:
1. Heat up a scoop of oil & stir-fry pounded ingredients until fragrant.
2. Add in water, salt and let it boil.
Add in potato, carrot and wait until half cook before adding in fish.
Once fish is done, add in tomato & cook for another few minutes.
3. Sprinkle fried shallots & chopped celery/spring onion when served.
Goes well with white rice.



BAHASA MALAYSIA VERSION
Nak masak sup ikan kena guna ikan yg segar supaya rasa nya manis dan tidak hanyir. Along suka sup ikan yg tidak terlalu berempah dan di hidangkan dgn sambal belacan apabila makan dgn nasi.

1 st Lada Hitam Biji* (*tumbuk)
1 btg Karot - potong
1-2 bj Kentang - kupas & potong
1-2 bj Tomato - potong
Daun Bwg/Sup - cincang 
Garam

CARA2:
1. Panaskan sedikit minyak & tumis bahan2 tumbuk* sehingga wangi.
2. Masukkan air, garam & masak sehingga mendidih.

Ikan Masak Asam Pedas Rebus

 A simple and healthy kampung dish.... in my PIL's house, this is being cooked for almost everyday as long as there are fresh fish supply from the sea outside the monsoon season... The fish is so fresh and 'sweet' straight from the daily captive into the pot... You will never get fed up but instead will be at risk of doubling your plate!


 
Yesterday we received a box of fresh fish sent through a bus nicely packed in a cooler box from my hubby's parents.... such a loving thought.... The village people called this Sea Chicken (literally translated from the local language). It has soft & melt-in-the-mouth flesh!

Sea Chicken / Ikan Perenchong

BAHASA MALAYSIA VERSION
Alhamdulillah, hajat hati nak makan lauk ala kampung, Asam Pedas Rebus yang sedap tercapai akhir nya.... Nak masak lauk ni, syarat nya mesti jenis ikan tertentu sahaja dan yang penting sekali ikan tu mesti yang segar. Dalam dok berangan2, tetiba sampai sekotak ikan kiriman mertua... ikan nya amat segar dan masih berlendir baru di tangkap pagi tu. Apa lagi, Along pun terus masak lauk idaman ni.....aduhhh Along makan nasi malam semalam bertambah2... selera sungguh.

BAHAN2:
1 ekor Ikan sedehana besar - potong2
3 bj Cili Merah*
1 bj Cili Hijau*
Cili Padi* - ikut pedas masing2
1/2 bj Bawang Besar*
1 biji Tomato Masak Ranum*
1 btg Serai* (* belnder)
1 btg Serai - ketuk
1/2" Halia - hiris bulat
1/2" Lengkuas Muda - hiris bulat
1 btg Bunga Kantan
1 Asam keping
1 st Pes Asam Jawa Adabi
1 st Serbuk Kunyit
1 st Gula
Garam
Sedikit Asam jawa / Jus Limau utk bilas ikan

METHOD:
1. Cuci ikan bersih2 dan bilas dgn asam jawa atau jus limau.
2. Masukkan kesemua bahan2 ke dalam periuk dan masak sehingga mendidih dan ikan masak empuk.
Imbangkan rasa garam & asam.
3. Hidangkan dgn nasi & ulam2an.

Fish Head Curry (Kari Kepala Ikan) Again

To enjoy really delicious fish head curry, the fish head must be free of scales and properly cleaned. I hate it when scales get stuck in between my teeth and therefore investing little extra time to clean them will pay off eventually. The best part of fish head is the lips and the eyes.... that's my taste anyway.... it is not weird as many other people share the same liking.... all parts of the head are edible except the bone of course... LOL!

My curry recipe is simple but I can assure you will come back with a second plate.... as my hubby did every time!

INGREDIENTS:
1 Fish Head
1 laddle Vegetable Oil
5 Shallots*
3 Garlic* (*sliced)
2 sprigs Curry Leaves 
1 tsp Mustard Seeds
½ tsp Methi Seeds
5-6 tbs Hot Curry Powder - add enough water to form thick paste 
1 big bowl Coconut Milk
1 tbsp Tamarind - add 4 tbsp water to produce tamarind juice & discard seeds 
1-2 Tomato - cut 4 
Salt

METHOD:
1. Heat up oil in a pot & stir-fry sliced shallots, garlic, curry leaves, mustard seeds & methi seeds. 
Add in curry paste & stir until fragrant until oil surface out from the paste, adding some water if it sticks to bottom of the pot.
2. Add in coconut milk & tamarind juice. 
When boiled, add in fish head and salt.
Stir frequently until the fish head is cooked.
Add in tomato and cook until slightly soft.
3. Serve with white rice.

Ada tiga ekor kepala ikan dalam freezer sebab hubby suka beli Ikan Pelayar... Isi nya sedap di goreng tapi kepala nya sekali sekala je boleh makan... orang kata makan kepala ikan boleh nyanyuk.... betul ke? Wallahuallam.... Buat kari memang terangkat tau.... Along paling suka makan bibir & biji mata dia....hehee. Tips dari Along, kalau nak masak kepala ikan, cuci sisik2 tu sehingga bersih... leceh ler, terbantut selera kalau tengah makan ada sisik ikan lekat kat gigi.

Kari yang best mesti kaw pedas & secukup rasa garam & asam nya. Susah nak cari kari ikan yang sedap kat restoren kat Miri ni.... tak leh lawan ler yang masak sendiri....hehe. Resipi Along simple jer tapi yang penting pandai imbangkan rasa nya. Lagi best bila makan nasi ada ulam2an dan sambal tempoyak.... adeiiii dua pinggan nasi licin pun tak sedor.

BAHAN2:
1 ketul Kepala Ikan
1 senduk Minyak Masak
5 ulas Bwg Merah*
3
ulas Bwg Putih* (*hiris)
2 tangkai Daun Kari 

1 st Biji Sawi
½ st Biji Halba
5-6 sb Serbuk Kari Pedas - bancuh dgn sedikit air 
1 mangkuk Santan
1 sb Asam Jawa - + sedikit air, perah jus & buang biji nya
 1-2 bj Tomato - belah empat
 Garam

BAHAN2:
1. Panaskan minyak & tumis hirisan bawang, halia, daun kari, biji sawi & halba.

Masukkan pes kari & kacau sehingga pecah minyak, campur sedikit air jika melekat di periuk.
2. Masukkan santan & jus asam jawa, kacau sehingga mendidih.

Masukkan kepala ikan & garamdan kacau sehingga masak.
Akhir sekali masukkan tomato & masak sebentar lagi.
3. Hidangkan dengan nasi putih.
