*Vegetable Burritos*
Ingredients
Fresh Tortillas, White or Whole Wheat
½ cup white onions, chopped
¼ cup fresh garlic, chopped fine or minced
1 medium Sweet Potato, peeled and chopped into half inch cubes
1 medium Poblano Pepper, chopped into small pieces
1 medium Tomato, chopped into small pieces
Oil, canola, olive or avocado, enough to coat bottom of pan
Salsa, 10-12 ounces of your favorite
¼ cup fresh cilantro, chopped
1 cup cheese, cheddar or jack
Salt & Pepper to Taste
Directions
While pan is heating, prepare vegetables. Add enough oil to coat the bottom of sauté pan. Cook onions until slightly soft (about 2-3 minutes).
Add sweet potato, poblano pepper, tomato and any other veggies you like. Add cilantro last and cook over medium heat until al dente (about 8 minutes).
Add salsa and continue heating. Season to taste. Spread out tortilla and add vegetables. Top with shredded cheese. Wrap and allow cheese to melt in a warm pan for a few minutes. Eat warm and enjoy.
*You can use any of your favorite vegetables and customize this recipe to your own family. Serves 4-6.

I just happened to come across this great tasting recipe today and thought that I'd share it with you all, as it sounds to be real delish!
I went to the Moore Hospital and had a couple chest Xray's done today. My dr. should have the results of them sometime next week. Then, I went grocery shopping.. and then came home..
The weatherman is calling for snow for us sometime over the weekend here.. Unbelieveable, since it's been such a gorgeous and warm day outside today. But, this is Oklahoma, and the weather is always changing..so they say!
