Last month, I celebrated my birthday, my 29th birthday!  Oh wait, I think I’m just getting too old that I simply stop counting since my 29th birthday!  What did I do on my birthday?  Besides enjoying a lovely dinner with my family in the evening, I baked myself a birthday cake!  This Chocolate Orange Bundt Cake, to be exact.

How to Make Chocolate Orange Bundt Cake - Super Easy Recipe http://uTry.it

Some of you might think that it’s not right that I have to bake my own cake for my birthday.  But actually, I don’t mind at all.  In fact, it’s quite the opposite.  I quite enjoy spending time in the kitchen, even on my birthday!  Plus, this Chocolate Orange Bundt Cake is super easy to prepare, I promise.  It’s pretty much a foolproof recipe to any beginning bakers out there.  It’s super easy to make, thanks to this secret ingredient!  Although this secret ingredient doesn't usually show up in my pantry (as I mostly bake from scratch), it is easy to find and it might appear in the pantry of many homes!  Watch my video tutorial above to find out what it is!

How to Make Chocolate Orange Bundt Cake - Super Easy Recipe http://uTry.it

This cake turned out to be very moist and tender.  It’s packed with decadent dark chocolate flavor and refreshing orange zest.  Dark chocolate and orange flavors are simply the perfect classic combination, in my humble opinion.  I made a chocolate crust on top for a contrast of texture as well.  Each bite, is simply heavenly!  If you’re still looking for a dessert recipe to end your Valentine’s Day dinner with the perfect sweet note, this is THE recipe to make!

How to Make S’more Ice Cream Pie

Yesterday marked the first day of Fall!  The weather has been comfortable and mostly cooled down.  But it’s still nice and warm in the afternoon so my Kids are stilling craving for cool desserts most of the time.  The solution?  This scrumptious S’more Ice Cream Pie!

How to Make S'more Ice Cream Pie (No-Bake Dessert) http://uTry.it

S’more is one of my Kids’ favorite treats.  I don’t make them too often, so it remains as a special and occasional treat for them.  But before I am ready for the cozy campfire and traditional S’more, this S’more Ice Cream Pie is the best transitional treat in between the Summer and Fall.  It combines the best of both world with the comforting gooey and charred marshmallow on top as well as refreshing ice cream filling.  Plus, who doesn’t like magic chocolate shells and chocolate graham cracker crust?  Yes, these are all the components of this pie.  The perfectly sinful and delicious combination, all in one easy-to-prepare pie!  If you haven’t watch the video tutorial above, please check it out.  You’ll agree that this pie is super easy to put together.

How to Make S'more Ice Cream Pie (No-Bake Dessert) http://uTry.it

This recipe calls for a total of 3 cups of softened vanilla ice cream.  You can use homemade ones or store bought ones.  However, when I was making this pie, I realized that I didn’t have enough vanilla ice cream while preparing for the 2nd layer!!!  As much as I prefer my homemade ice-cream recipe over store bought ones, I also didn’t want to drive to the store for just 1/2 a cup of ice cream!  So, I improvised and substituted with coffee ice cream instead.  It turned out quite delicious with a more complex of flavor.  Next time, I’m going to try with a layer of chocolate ice cream as well!  So, by all means, explore and experiment with different flavors of ice cream when you make this pie!  Just like everything else in life, we need to learn to be flexible.  My new motto of the week, “Keep Calm and Eat Pie!”

For the coming weeks, I’ll be posting some traditional recipes for the Chinese Mid-Autumn festival as well as fun treats for Halloween.  If you have any recipe request or suggestion, please feel free to leave a comment below and I’ll try my best to post them before the festivals.  Remember, Eat, Drink, and Be Happy!  Thank you for stopping by today and I’ll see you next week!

How to Make Mochi Ice Cream 雪糕糯米糍

Have you ever tried Mochi Ice Cream 雪糕 糯米糍 before?  These little gems are one of my childhood favorites.  They used to be occasional treats when I was young.  Besides it’s considered a little pricey for me when I was a kid, and that there weren’t that many places that sell them back in the good old days!  So, I cherished them whenever I get my hands on these delicious treats!  Fast forward to now, they are more widely available and not as expensive as in the past.

How to Make Ice Cream Mochi 雪糕 糯米糍 http://uTry.it

However, the good news is, I will show you how you can easily make them at home, with the help of my recipe and tutorial!  Best of all, you can create them using your favorite ice cream flavor!  That way, you can enjoy any flavor that your heart desired!  Mochi Ice Cream is a confection made from Japanese Mochi (pounded sticky rice dough) filled with a scoop of ice cream.  They might seems complicated to make, but actually quite simple.  Check out my video tutorial above for more tips and tricks.  There are quite a few steps and chilling time, but all quite straight forward to follow.

How to Make Ice Cream Mochi 雪糕 糯米糍 http://uTry.it

In the mochi dough, I used a mix of glutenous rice flour as well as regular rice flour.  The glutenous rice flour gives this treat the signature chewy texture while the regular rice flour yield the tender and soft texture for the mochi skin, even after freezing! Therefore, it's important to use both type of flours and not just one. With that said, you should always let your Ice Cream Mochi rest at the room temperature for a few minutes before serving.  That way, the mochi skin and the ice cream will have a chance to soften up before you bite into one.

How to Make Ice Cream Mochi 雪糕 糯米糍 http://uTry.it

In today’s Mochi Ice Cream, I filled them with an Easy Mango Ice Cream, which I will also show you how to make in my video, as well as Roasted Strawberry and Matcha Green Tea Ice Cream!  They are all homemade with natural and organic ingredients. Check out the recipe links at the end of the post if you're interested to make your own.  Otherwise, you can use any store bought ice cream as well.

Aren't they gorgeous?  I love how beautiful and colorful they turned out.  They make me feel happy just by looking at them, not to mention, they are refreshing and delightful to enjoy in the hot summer days!  Hope you’re enjoying summer in full blast!  If your kiddos are already back to school, these would definitely be their favorite after school snacks!  Thank you so much for stopping by today.  Remember, Eat, Drink, and Be Happy!  Stay tuned for more fun and delicious recipe next week!

How to Make Unicorn Poop Rainbow Sour Lemon Meringue Cookies 檸檬彩虹蛋白曲奇:

Are you ready for another magical and whimsical recipe?  A recipe that involves a mysterious, fascinating, and imaginary create!  Yes, I'm talking about the Unicorn! After all, everything associated with the Unicorn has been so gorgeous and adorable, even with its byproduct such as... its poop!?

How to Make Unicorn Poop Rainbow Sour Lemon Meringue Cookies 檸檬彩虹蛋白曲奇 with all natural coloring. http://uTry.it

Sorry, I just couldn’t help it!  I had so much fun making these Sour Lemon Meringue Cookies with my Little Girl.  We were laughing, joking, and goofing around in the kitchen as we bake and enjoy each other's company…and these cookies, of course!

How to Make Unicorn Poop Rainbow Sour Lemon Meringue Cookies 檸檬彩虹蛋白曲奇 with all natural coloring. http://uTry.it

If you haven’t watched my video tutorial yet, you’ve got to check it out.  I guaranteed that you won’t be disappointed! I’ll show you step by step procedures on how to create the perfect rainbow swirls that shaped these cookies.  They are actually easier than you think.  Plus, you’ll get my tips and secret on how to make the perfect meringue cookies!

How to Make Unicorn Poop Rainbow Sour Lemon Meringue Cookies 檸檬彩虹蛋白曲奇 with all natural coloring. http://uTry.it

These rainbow colored Sour Lemon Meringue Cookies are made from all natural food coloring deprived from fruit and vegetables (I’ll link my food coloring tutorials below this post).  If you don’t have the time to make your own coloring, I’ve found out that my local health-food store/supermarket do carry some all natural coloring options.  I’ll list the product links below this post so that you can check them out as well.

How to Make Unicorn Poop Rainbow Sour Lemon Meringue Cookies 檸檬彩虹蛋白曲奇 with all natural coloring. http://uTry.it

If you’ve baked meringue cookies before, you know that they don’t like moisture!  So, we bake them at low temperature for a long time.  Plus, we need to be careful on the flavoring option as well.  Since I made these in lemon flavor, I use lemon zest to give these cookies the refreshing lemony aroma.  But for the tartness, I used citrus acid (which is really sour and in powder form) instead of fresh lemon juice.  That way, I won’t be adding too much moisture into the batter.

These cookies are so light, crispy, and packed with lemony aroma.  The sweetness and tartness is perfectly balanced!  Give them a try and you’ll fall in love with them.

Crispy Matcha Green Tea Waffles (香脆綠茶窩夫)

St. Patrick’s Day is only a week away!  Today, I want to share a fun and easy recipe with you.  Check out these Crispy Matcha Green Tea Waffles (香脆綠茶窩夫)!  I love the natural green hue from the matcha powder and the festive shape of the waffles!

Crispy Matcha Green Tea Waffles (香脆綠茶窩夫) for St. Patrick's Day http://uTry.it

The waffle batter is quite simple to prepare.  Check out my video tutorial above if you haven’t done so.  The key to make a beautiful waffle is to use room temperature ingredients so that your batter will be nicely incorporated.  It’s okay to have a few small lumps in your batter.  Because if you over-mixed your batter, your waffles might turn out chewy, and there’s no way to fix it!

Crispy Matcha Green Tea Waffles (香脆綠茶窩夫) for St. Patrick's Day http://uTry.it

You can serve these waffles for breakfast, snacks, or afternoon tea.  The green tea flavor in this particular recipe is not overly strong.  If you want a more pungent matcha aroma, you can add up to 1 tablespoon more of matcha powder in your batter.  I personally don’t want the matcha flavor to be too strong though, especially when I am also dusting additional matcha powder on top when I serve them.   No matter if you like the aroma light or strong, serving these waffles with the warm maple syrup is a must!  The slightly earthy flavor from maple syrup compliments the green tea aroma nicely.

As you can see from my video, I recently order this waffle maker online.  The shape of the whole waffle reminds me of the shamrock. Alternatively, you can cut them into smaller heart shapes!   Best of all, the machine is easy to use and the waffles came out nice and crispy!  Check out the link at the end of this post to find out where to get yours!  What special treats are you making for St. Patrick’s Day?  Leave a comment below to let me know.  I can’t wait to hear from you!

Coffee Jelly 咖啡啫喱

Have you ever tried Coffee (flavored) Jelly?  It’s a popular treat in Asia Countries, especially during the warmer seasons of Spring and Summer.  The very first time I had it was years ago when I traveled to Japan.  By following my video tutorial and recipe, you can easily make it at home now!  Much easier than flaying across the globe, isn’t it?  Don’t get me wrong, I still enjoy travelling!

How to Make Coffee Jelly 咖啡果凍 http://uTry.it

This Coffee Jelly is a light and refreshing treat to prepare for parties and/or everyday enjoyment.  I like my homemade version because I can control the sweetness in my dessert and use the coffee beans that I love.  I usually like my coffee dark, strong, and with low acidity level.  After all these years of drinking coffee in the morning (probably the only way to really wake my mind up), I realized grinding the coffee beans right before brewing yields the best earthy and rich aroma from the beans.  If you’re not doing that yet, I really encourage you to invest in a coffee grinder and grind up the beans right before brewing!  It’s totally worth the time and efforts!

How to Make Coffee Jelly 咖啡果凍 http://uTry.it

As always, I don’t like my dessert overly sweet.  Therefore, the sweetness in this Coffee Jelly recipe is only minimal.  If you prefer a sweeter taste, you can add a little bit more sugar to adjust it to your own preference.  Or even add a splash of agave before serving.

How to Make Coffee Jelly 咖啡果凍 http://uTry.it

In today’s video tutorial (see the link above), I demonstrated 2 ways of serving this Coffee Jelly treat.  One is in the small individual serving glass, topped with freshly whipped cream, a coffee bean, and a spring of mint for garnish.  It’s gorgeous enough to serve for parties and gatherings, but extremely easy to prepare.  It’s such a delightful dessert that serves the duty of both after meal coffee and dessert at the same time!

How to Make Coffee Jelly 咖啡果凍 http://uTry.it

The second way to serve this Coffee Jelly is to chill the mixture in a container, cut it up into small cubes, and add a splash of evaporated milk to serve.  I personally prefer the later version because I always love a little creaminess in my coffee.  Notice the pinch of salt that I added in this recipe?  This will help balance the flavor and to offset the acidity in your coffee.  I hope you enjoy today’s recipe and tutorial.  Stay tuned for more fun a delicious recipe next week!

Strawberry Milky Lollipop 士多啤梨牛奶棒棒糖

Have your kids started their Spring Break yet?  I know my kids couldn’t wait to have some time off from school.  They want to feel free and not have to worry about homework, exams, book reports, etc.  Today, I’ve a super fun and cute recipe for you to welcome Spring Break!  Check out these Strawberry Milky Lollipops!  Aren’t they the cutest things you’ve seen lately?  Best of all, they are really yummy as well.

Strawberry Milky Lollipop 士多啤梨牛奶棒棒糖 http://uTry.it

I made these Strawberry Milky Lollipop over the weekend with my Baby Girl.  If you’re looking for some fun activities to do with your kids on their days off, this recipe would be a fun and delicious project.  These lollipops are also a perfect treat if you’re planning a kids party as well.

Strawberry Milky Lollipop 士多啤梨牛奶棒棒糖 http://uTry.it

The flavors of these homemade Strawberry Milky Lollipops remind me of these Strawberry and Cream lollipops that I loved when I was young.  Better yet, my homemade version is made with real strawberries and no artificial flavors or coloring.  Since there are only a few ingredients in these lollipop candies, the strawberry flavor truly comes through.

Strawberry Milky Lollipop 士多啤梨牛奶棒棒糖 http://uTry.it

If you haven’t done so, be sure to check out my video tutorial at the top of this post on how to make these cuties!  I’ll show you step by step on how to make the traditional lollipop shapes and the strawberry shaped ones as well.

Strawberry Milky Lollipop 士多啤梨牛奶棒棒糖 http://uTry.it

An alternate to shaping the lollipop is to cut the rolled candy into tiny dots (as shown in the picture above.)  I personally prefer these smaller ones as they are perfect for 'portion control!'  I’ll list all the ingredients and tools used in this recipe at the end of the post for your reference.

“Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze - Valentine’s Day Dessert

Do you like surprises?  I think it’s a lot of fun and quite exciting to get a pleasant surprise from family and loved ones.  This Valentine’s Day, why not give your significant other a sweet surprise?  Let me present to you this gorgeous and delicious “Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze!

“Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze - Valentine’s Day Dessert http://uTry.it

I’m not sure why, but chocolate and strawberries always make me think of Valentine’s Day!  In my humble opinion, I think they compliment each other really well.  To me, they are both romantic and sexy ingredients!  So, why not combine the two together for Valentine’s Day desserts, right?

“Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze - Valentine’s Day Dessert http://uTry.it

Check out my video tutorial above and I’ll walk you through step-by-step on how to make this amazing cake.  First, I started working on the “surprise” part of the cake, which consists of 2 sheets of strawberry cakes.  I added my homemade beet root natural food coloring to (try to) turn the cake pink.  However, the pink hue slightly faded after the first round of baking.  And the coloring mysteriously disappeared completely after the 2nd round of baking inside the bundt cake!  Oh well!  So, you might want to add more coloring than I did.  I’ll post the details and suggestions in the recipe below for your reference.

“Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze - Valentine’s Day Dessert http://uTry.it

Even though the heart shaped cake inside didn’t stay pink as I intended it to be, it’s still a gorgeous and stunning cake to serve and enjoy.  And it’s really a surprise when you slice into the cake to reveal the heart shape inside!  Just keep in mind that when you add the heart shaped cake into the bundt pan, make sure to put it up-side down as it’ll be the right direction after you flip the bundt cake over.

“Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze - Valentine’s Day Dessert http://uTry.it

This chocolate bundt cake is rich in chocolate flavor and really moist!  I’m using my favorite Valrhona cocoa powder in the cake batter.  I’ve tried so many different brands of cocoa powder in the past, but seriously, Valrhona is the best!  In case if you’re wondering, no, this is NOT a sponsored post.  I just love this product and wanted to share with you.  So you don’t have to waste your hard-earned money on ingredients that don’t work as great!  I’ll list the ingredients below this post for your convenience.  The fresh strawberry glaze on top of this cake is really refreshing and delightful.  As I said, chocolate and strawberry really compliment each other well.

I hope you’ll try out this recipe and make this “Surprise Inside” Chocolate Bundt Cake for your loved ones this Valentine’s Day!  Stay tuned for more fun and yummy recipe!  Have a wonderful weekend ahead!

Classic Tiramisù – For Valentine’s Day

Have you check out my last blog post and video on how to make the parchment pastry bag and white chocolate decorations?  If not, click here to check it out!  I’m very excited to share today’s recipe with you.  It’s one of our family’s all time favorite dessert: Classic Tiramisù!

Classic Tiramisù – For Valentine’s Day http://uTry.it

Tiramisù is an Italian (no-bake and layered) dessert usually made with ladyfingers, espresso, rum, egg yolks, mascarpone cheese, and cocoa powder, etc.  Check out my video tutorial and you’ll see how easy it is to prepare.  If you have concern consuming raw egg yolks, you may use pasteurized egg yolks instead.  You can find them in most major supermarkets in the States.  This Tiramisù is packed with wonderful espresso and chocolate flavors, along with a hint of rum.  We love this dessert because it’s not too sweet and has the right balance of flavors.

Classic Tiramisù – For Valentine’s Day http://uTry.it

Tiramisù means “pick me up” in Italian.  Why?  Because it’s texture is tender, soft, and fluffy.  The mascarpone cream in between the layers is silky smooth and melts in your mouth.  To ensure your cake will have the right texture, you need to start with the right ladyfingers.  Make sure to use the crispy one from Italy and not the soft, cake-y one from the U.S.!

Also, be sure to check out my video tutorial on the “dipping time”.  Last but not least, after assembling the cake, let it rest in the refrigerator for at least 8 hours before serving!  I usually leave it in the fridge overnight.  That way, the ladyfingers will have enough time to soften and soak in all the flavors from the other ingredients.  Trust me, your patient will be rewarded!

How to Make Parchment Pastry Bag – for Cake Decorations

In just a few short weeks, it’ll be Valentine’s Day.  Do you and your sweetheart celebrate?  I usually make a special dinner and dessert at home to celebrate.  If you will be preparing a special dessert at home, I have a wonderful recipe for you coming very soon on the blog soon.  You’ve guessed it right, it’s the Classic Tiramisù that you see in the pictures below.  But before that, I wanted to show you how to make the white chocolate decorations on top first!

Instead of using a regular pastry bag to pipe the chocolate decorations, a smaller one that’s made with parchment paper would be a better option in this case.  That way, you can use just a small amount of melted chocolate or icing instead of a big batch.  Besides, you can also cut out the size of the tip to tailor to your needs.  Remember! The bigger the cut, the thicker the line/drawing it will be for your decorations.  I’ll also post the link below on how to temper chocolate for your reference.
