How to Make Chocolate Lava Cakes 朱古力心太軟



What is your all time favorite dessert?  Let me rephrase it.  If you can only enjoy just 1 type of dessert for the rest of your life, what would you pick?  I’m sure my whole family would have the same answer….THIS, Chocolate Lava Cake 朱古力心太軟!

If you get to taste this cake, I’m sure you would have agreed to my previous statement.  This Chocolate Lava Cake is rich, decadent, and so satisfying.  The edges of the cake is slightly crunchy, similar to the edges of a good brownie.  And the center of the cake is light and tender.  When you spoon into the cake, you’ll see the warm chocolate 'lava' oozing out!  The cake itself is not overly sweet but definitely rich and deep in chocolate flavor.  I love pairing it with a scoop of homemade Vanilla Bean Ice Cream for a contrast of temperature and texture.

This cake might look fancy and difficult to make, but it’s quite easy to prepare.  I have a foolproof recipe for you and if you follow my tips and tricks in the video tutorial, you can definitely make it too.  If you make this dessert for your sweethearts, you’ll definitely melt their hearts!  Shhh….no one has to know it’s actually so easy to make.  Let them think you spend all day in the kitchen to make this for them!  Since this recipe yields 4 cakes, it might be too many for a romantic dinner for 2.  If you are not planning to bake all 4 cakes, you can prepare the batter the same way and keep unbaked ones in the ramekins in the fridge until you are ready to bake.  So, if you’re planning a romantic Valentine’s Day dinner at home, you can prepare the batter ahead of time and bake off the cakes at a later time.

Cinnamon Pull-Apart Star Bread (Tang Zhong Method 湯種法)

So sorry for the lack of posts in the past few weeks.  I was going to share this recipe with you before Christmas so that you can make it and share it with your family during the holidays!  Oh well, I guess things don’t always turn out the way we have planned.

This Cinnamon Pull-Apart Star Bread might look fancy, but it’s actually quite easy to shape.  Simply follow my tips and tricks in the video tutorial and I’m sure you’ll agree.  I created this recipe using my favorite bread making method: Tang Zhong Method 湯種法!  Tang Zhong Method is a natural way to make soft and fluffy bread.  Best of all, the bread will stay soft even after a few days.  Read more about Tang Zhong Method 湯種法 here if you’re interested to learn more.

This Cinnamon Pull-Apart bread is scrumptious as is, or you can sprinkle some powdered sugar on top to make it extra pretty!  I love that you can see the layers and layers of cinnamon sugar in between the bread.  It totally reminds me of the infamous cinnamon rolls from the mall!  This bread is best served warm, in my opinion.  If you have any leftover bread, simply wrap it up tightly with plastic wrap and store it at room temperature.  To reheat, unwrap and place the bread on a baking pan, loosely tent with a foil and warm it in a 350 F preheated oven for 10 to 15 minutes.  To heat it up in the microwave, simply warn each wedge of bread for 20 seconds.

How to Make Popovers with Herb Butter (Foolproof Recipe)




Are you ready for the holidays?  My kids are almost out of school for their Winter Break and we’re already getting excited for the time off.   I personally can’t wait to hang out and spend time with the family.  We’ll have relatives visiting from overseas and everyone in the family is looking forward to that as well.  How about you?  What are your plans for the holidays?  Leave me a comment below and let me know.

For our holiday meals, my family prefer Prime Ribs over poultry or pork.  This past Thanksgiving, I even spared Mr. Turkey and made a Prime Rib Roast instead.  Besides all sorts of roasted vegetables, I also made these Popovers with Herb Butter as a side dish.  Everyone enjoyed them so much.  They are quite similar to Yorkshire pudding, which its batter consists of  eggs, flour, milk, etc.  I guess you can call these individual Yorkshire puddings?  But the traditional Yorkshire pudding often consists the roast beef’s dripping in the batter while these Popovers don’t.  However, these Popovers still packed with wonderful flavors and aromas from herbs and butter in the batter (and on the side).

These Popovers are simply amazing.  The crust is golden brown and crispy while the inside is fluffy and airy.  It’s heavenly when you serve them warm with a dab of Herb Butter.  Check out my video tutorial for tips and tricks on how to prepare both!  These popovers are pretty much fail proof if you follow my tips.  Your family will definitely love them and be prepare that they’ll ask for seconds.  My recipe makes exactly 12 popovers.  I’ll list the popover pans and other tools that I used at the end of the post for your convenience.

How to create a 3D Winter Wonderland - Classic Sugar Cookies with Royal Icing

These 3D cookies are made out of Classic Sugar Cookies and decorated with Royal Icing.  Not only these cookies are crispy (with a hint of butter and vanilla), they are also more sturdy and can hold up to the decorations better than other kind of cookies.   According to my Little Girl, these cookies are perfect for dunking in a cup of hot cocoa! Does she talk like a foodie or what?!  In addition to these Classic Sugar Cookies, I also made a variation of a chocolate flavored ones.

In this 3D Winter Wonderland, you will find Christmas Tree, Snowman, Reindeer and Santa’s Sleigh that are all made of cookies.  As shown in the video above, they are cut from from a 3D cookie cutter set that I bought online from awhile ago.

In addition to Snowman and Christmas Trees, I also created a few gift box/present cookies to place in front of the Christmas Tree!  We’ve got to have some presents for the holidays, right?  The great news is that you don’t need a cookie cutter to make these gift boxes.  Check out my video tutorial and I’ll show you step by step on how to make them.  They are easier to make than they look, and they are super delicious with a layer of chocolate sugar cookie stacked in the middle!

How to Make Baked Apple Hand Pies 蘋果批 (餡餅)



Are you enjoying the cooler temperature and the scenery of fallen red and golden Maple leaves?  I sure love them both.  But what I love even more are all the warm and hearty recipes that fit for Fall!  There should be no surprise that dessert always makes the top of my list!  These adorable and heart-warming Apple Hand Pies are definitely my favorite Fall dessert.  They are also both of my kids' favorite!  What a surprise!?  It’s seldom that they both love the same item or a dish!  So, I’m happy to bake up these cuties more often!

Many hand pie recipes are deep fried.  However, I don’t like to deep fry for obvious reasons.   To me, deep fry usually involved absorbing too much unnecessary oil and calories!  Besides, I don’t want to deal with a large pot of left-over oil and greasy smell in the kitchen as well.  So, I opt for a baked version!  These baked Apple Hand Pies are just as scrumptious and decadent, if not better, than the deep fried version!

The crust of these Apple Hand Pies is buttery and flaky, the apple filling is slightly sweet and tart, and very juicy.  The combination of earthy cinnamon and refreshing apples is simply heavenly!  These hand pies are fun to eat and very portable.  You can easily pack them for picnic or bring them to parties for sharing.  I shared them with some friends and they all loved them!

“Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze - Valentine’s Day Dessert




Do you like surprises?  I think it’s a lot of fun and quite exciting to get a pleasant surprise from family and loved ones.  This Valentine’s Day, why not give your significant other a sweet surprise?  Let me present to you this gorgeous and delicious “Surprise Inside” Chocolate Bundt Cake With Strawberry Glaze!

I’m not sure why, but chocolate and strawberries always make me think of Valentine’s Day!  In my humble opinion, I think they compliment each other really well.  To me, they are both romantic and sexy ingredients!  So, why not combine the two together for Valentine’s Day desserts, right?

Check out my video tutorial above and I’ll walk you through step-by-step on how to make this amazing cake.  First, I started working on the “surprise” part of the cake, which consists of 2 sheets of strawberry cakes.  I added my homemade beet root natural food coloring to (try to) turn the cake pink.  However, the pink hue slightly faded after the first round of baking.  And the coloring mysteriously disappeared completely after the 2nd round of baking inside the bundt cake!  Oh well!  So, you might want to add more coloring than I did.  I’ll post the details and suggestions in the recipe below for your reference.

Even though the heart shaped cake inside didn’t stay pink as I intended it to be, it’s still a gorgeous and stunning cake to serve and enjoy.  And it’s really a surprise when you slice into the cake to reveal the heart shape inside!  Just keep in mind that when you add the heart shaped cake into the bundt pan, make sure to put it up-side down as it’ll be the right direction after you flip the bundt cake over.

This chocolate bundt cake is rich in chocolate flavor and really moist!  I’m using my favorite Valrhona cocoa powder in the cake batter.  I’ve tried so many different brands of cocoa powder in the past, but seriously, Valrhona is the best!  In case if you’re wondering, no, this is NOT a sponsored post.  I just love this product and wanted to share with you.  So you don’t have to waste your hard-earned money on ingredients that don’t work as great!  I’ll list the ingredients below this post for your convenience.  The fresh strawberry glaze on top of this cake is really refreshing and delightful.  As I said, chocolate and strawberry really compliment each other well.

How to Make Parchment Pastry Bag – for Cake Decorations



In just a few short weeks, it’ll be Valentine’s Day.  Do you and your sweetheart celebrate?  I usually make a special dinner and dessert at home to celebrate.  If you will be preparing a special dessert at home, I have a wonderful recipe for you coming very soon on the blog soon.  You’ve guessed it right, it’s the Classic Tiramisù that you see in the pictures below.  But before that, I wanted to show you how to make the white chocolate decorations on top first!

Instead of using a regular pastry bag to pipe the chocolate decorations, a smaller one that’s made with parchment paper would be a better option in this case.  That way, you can use just a small amount of melted chocolate or icing instead of a big batch.  Besides, you can also cut out the size of the tip to tailor to your needs.  Remember! The bigger the cut, the thicker the line/drawing it will be for your decorations.  I’ll also post the link below on how to temper chocolate for your reference.

Mango Crêpe Cakes 芒果法式薄餅千層蛋糕 – To Celebrate Mother’s Day




Mother’s Day is just a couple of weeks away.  Any plans on how to celebrate the mothers in your life?  How about preparing a gorgeous and scrumptious cake for her?  This Mango Crêpe Cakes (芒果法式薄餅千層蛋糕) will sure put a smile on anyone’s face.

So far, I’m totally enjoying this wonderful mango season by preparing all kinds of mango treats.  From Mango Pudding, Mango Mochi Roll, Mango Panna Cotta, to Mango Shaved Ice, etc, all refreshing and delicious.  But this Mango Crêpe Cakes surely is the most special and spectacular among all!

In this recipe, I used the Ataulfo mangoes.  The Ataulfo Mangos are also known as Manila Mangos or Champagne Mangos.  The flesh from the Ataulfo mango is very tender and smooth.  It’s very refreshing, sweet and have a pleasant floral tone, which is perfect for this dessert.  On the other hand, Tommy Atkins mangoes (which are more commonly found in the U.S.) are overall bigger in size, and the skin color is a combination of red and green even when fully ripen.  Also, the flesh is more fiber-ous and firmer.  Therefore, please only use Ataulfo mangoes for this recipe.

There are 22 layers of mango crêpes in this cake, each crêpe alternate with a layer of mango cream.  And there’s a layer of thinly sliced fresh mango in every 5 layers of crêpe.  It might sound complicated, but actually quite easy to prepare.  Check out the video tutorial above and you’ll agree with me!  However, I must warn you... since there are quite a few steps involved, the prep time for this cake is rather time consuming.  This is partly due to the cooking and layering of the crêpes.  But fear not!  The steps are nothing too difficult at all.

My recommendation to you is to prepare the crêpes a day ahead and assemble the cake on the next day.  Sounds like a labor of love?  It surely is, but so does the job of being a mother, isn’t it?!  Therefore, I think Mom deserves a gorgeous cake like this!  And I can assures you, this cake tastes even better than it looks!

Classic Bundt Cake--From Scratch

It’s amazing how a few little edible gems and some fresh mint leaves can turn this simple cake into your best holiday dessert!  It’s gorgeous enough for the celebration, yet simple enough for everyday enjoyment.  Best of all, this cake can feed a village!  And yes, I make this cake quite often.

This Classic Bundt Cake is wonderful when it’s freshly out of the oven.  You get the slightly crispy edges along with moist and tender interior.  But as I said, it’s a huge cake, and a small family like mine definitely won’t finish it all in a day, no matter how much we love cake!   The great news is, this cake freezes really well.   I usually let it completely cool to room temperature.  Slice the whole cake into desire thickness (usually around 1 1/2-inch).  Then, lay the slices flat into a tightly sealed freezer safe ziploc bag, and into the freezer they go.

 When I’m ready to serve them again, I take the desire number of slices I want.  Then, they go straight onto a non-stick saute pan.  You don’t need to grease the pan nor defrost the cake ahead of time.  Put on low heat and warm up the cake on both sides until the edges turn slightly golden brown and crispy.  You’ll get a nice crispy outer crust and super tender interior!  I say, they’re even better than the day it came fresh out of the oven!  Give this method a try and I’m sure you’ll love it too!

The very first time that I shared my Sandwich Bread using the TangZhong Method (白方包湯種法) was when I first started blogging, you can see the post here.  Many years have gone by and there are also a few changes that I’ve made toward making this bread (wow, can’t believe I’ve been blogging and sharing my recipes for almost 5 years!)  The biggest change from the previous recipe is that the loaf pan size was too small for my family these days, as their consumption of sandwich bread grows.

I know many of you have tried the previous recipe and loved this bread.  I can’t praise TangZhong Method (湯種法) enough as it yields the softest bread that you’ll ever feel.  Best of all, the softness lasts for a few days.  Yet, it’s all natural without using any weird ingredient that you cannot pronounce.  The secret is all in the method of how to make it.  I've shared a few videos in the past on how to shape different buns (see links at the bottom of this post) with fillings inside, using this basic bread dough.  Yet, I have not shared the process of making the dough.  Many of you emailed and messaged me to request a video tutorial with the step-by-steps on how to make this bread from start to finish.   So here we go....your wish is granted!

One thing I want to emphasize is that bread making is quite time consuming.  You have to set aside at least 3 1/2 hours from start to end.  However, all of the steps are easy to follow and there are many idling time.  You can work on other things while you wait, such as surfing the web, watching your favorite TV show, or answering emails, etc.  There’s just no short cut when it comes to bread making.  But, I can guaranteed that you and your family will fall in love with this bread once you’ve tried it.  You can definitely taste the love in this bread.  It's so soft and pillow-y that you want to snuggle it and take a nap!
