Easy Microwave Fudge

With the holidays upon us, it seems like everywhere you turn there are sweets galore. Whether it’s goodies from a neighbor, a dessert spread at a party, or just your own holiday baking, most of us might as well put any ideas of a diet on-hold during this time of year. If you are up for indulging a little this season, then this easy microwave fudge is the perfect sweet treat to add to your holiday baking. It takes very little time to make and it’s nice because you can fully satisfy your sweet tooth after just a small taste. That’s a win-win in our dessert book!

Our kids love helping in the kitchen and baking with them can be a lot of fun, but it can also be a really big mess.  This easy microwave fudge recipe is the perfect thing for them to assist with since it doesn’t involve the stove or oven.

To make the process run smoothly with kids we often go ahead and measure out ingredients, making it easy for little hands to pour into mixing bowls and help with stirring. 



Easy microwave fudge

Servings: At least 12, depending on the size of baking dish you use
Prep time: 10 minutes to prep ingredients so your kids can help
Cook time: Less than five minutes, plus 20-minutes to cool before eating

Ingredients

  • 3-3/4 cup powdered sugar
  • 1/2 cup cocoa
  • 1 stick melted butter
  • 1/4 cup milk
  • 3/4 cup chopped nuts (we used pecans)
  • 1 tablespoon vanilla flavoring


Instructions

1. In a large microwaveable bowl, combine powdered sugar and cocoa.
2. Stir in melted butter and milk.
3. Microwave on high for 2-1/2 minutes.
4. Stir in chopped nuts and vanilla flavoring.
5. Pour into greased pan or casserole dish.
6. Let harden (approximately 20 minutes) and cut into squares to serve.

This easy microwave fudge is so sweet and savory that you might want to keep it all for yourself, but it also makes the perfect treat to share. Spread some cheer around your neighborhood or workplace by packaging fudge squares in holiday tins or little mason jars and tie them with festive ribbon for a perfect gift.

Easy S'Mores Dip Recipe


Now here's a recipe I can't believe I've never shared before - the S'mores Dip Recipe! I've made it a million times. After I shared a peek of this one I made on Stories over the weekend, friends kept messaging for the recipe. I woke up to at least 20 messages asking for it. I was going to just forward a past post, and realized I didn't have one. 

What?! 

Well that gets rectified today! 

The S'mores Dip is SO easy to make. It can also be altered in a ton of ways. I always use grahams to dip with, but you can also get creative with fruit, pretzels, etc. 

It's a total crowd pleaser, and if you have any left over it's easy to reheat and serve again next day. 



S’MORES DIP RECIPE 

INGREDIENTS 

  • 1 bag of semi-sweet chocolate chips
  • 1 bag of marshmallows (large or small)
  • 1 box of graham crackers (I usually grab the regular and a box of the chocolate)
  • Optional: Reese’s, Snickers, other chocolate candies


**Note: I use 8x8 foil pans for this. I’ve used glass dishes and iron skillets which work just as good, but are tough to clean between the marshmallow and melted hardened chocolate. The foil pans are easy to reheat and a quick throw away when done. 


INSTRUCTIONS 


1: Pre-heat oven to 425 degrees. 

2: Line pan with a layer of your chocolate. 

3: Top chocolate with marshmallows. 

4: Bake in oven for approximately 5-8 mins or until chocolate is melted. 

5: Turn on broiler for 1 minute to toast the marshmallow. 


Serve and enjoy!

Easy 10 Minute Donut Recipe

 


I can't lay claim to these drool-worthy little circles of goodness. This was all Mr. Magnolia's doing. He was on a trip recently and they served these homemade donuts as an after dinner treat. From the first bite he was in love. 

He asked the chef,"Mrs. Becky", how to make them, and she responded that it was easier than he probably realized. She was also nice enough to share the recipe. 

Today the kids were literally jumping for joy when they saw "Daddy Donuts" were on the breakfast menu. They really are super easy and he was able to knock out a dozen before leaving for work. 

We plan to repeat these Christmas morning! 

The donuts take about ten minutes to make and require only four ingredients. Such an easy treat that has more than enough yummy wow factor for your holiday guests. 

10 MINUTE DONUT RECIPE

Serves: 5 - 10
Total Time: 10 Minutes



INGREDIENTS

- One can of biscuits (Mr. Magnolia suggests using flaky ones.)
- 2 tablespoons of butter
- 1 cup of confectioners sugar
- Vegatable Oil


INSTRUCTIONS

1: Open biscuits and flatten with fingers. Form a hole in the center. 




2: Put oil in a pan. Go for about an inch of depth. Turn on medium heat. Prep a cookie sheet and lay to the side of your pan. 




3: Place donuts in oil and flip slowly until medium brown in color. 




4: Place browned donuts on cookie sheet to dry. 




5: In a regular sized bowl warm butter in the microwave for about 45 seconds, or until fully melted.
6: Mix butter with sugar until you get a creamy frosting texture. 
7: Drizzle over the donuts and serve immediately. 



And that's it! Quick and easy homemade donuts. 

Now to break out my even stretchier stretchy pants because YUM!

Reindeer Crunch Trifle Recipe


Yesterday we shared our recap of the Holiday Open House with Findlay Rowe, but we decided this yummy little concoction deserved a post all on its own. This Reindeer Crunch Trifle is the recipe everyone needs in their lives this holiday season. 

When hosting events with Findlay Rowe, they always give us a challenge to do create something from within the store to present to guests. We love this because it gets our creative juices flowing. That and they have so much cute stuff in that store, it's fun to play with it all when we can't take it all home with us (lest we feared divorce). 

We whipped up this trifle recipe with Poppy Popcorn's Reindeer Crunch in mind. The recipe is right up our alley. It took less than five minutes to make and serve. Not to mention it is oh so yummy.

We've become masters of "faux-made" homemade recipes. We're pretty self-aware and know that our strong suits aren't in the kitchen. But we do like things to be pretty and have an extra special touch. So while we threw every "cheat" we possibly could think of when it came to this dessert - it didn't look or taste like it. 

It's debatable which took longer - to make it or to consume it? 



REINDEER CRUNCH TRIFLE RECIPE

Serves: 10-15
Total Time: 5 Mins


INGREDIENTS
  • 8 - 10 pre-made pudding cups
  • 1 16 oz pkg of Cool Whip
  • 2 cups of Reindeer Crunch popcorn
  • 12 pre-made store bought cupcakes

(You're intrigued now aren't you... ;) )



INSTRUCTIONS
  1. Scrape off the icing of your store purchased cupcakes. (Consuming optional.)
  2. Layer in the bottom of a trifle dish cupcakes and Reindeer Crunch popcorn. 
  3. On top of cupcake layer spread out a layer of Cool Whip. 
  4. On top of Cool Whip layer spread out a layer of pudding from pudding cups. 
  5. Repeat layers until trifle dish is full. 
  6. Top with Reindeer Crunch. 
  7. Serve immediately or refrigerate until ready to serve. 


This qualifies as quite possibly the easiest holiday dessert on the planet. Everything mixes together for the perfect sweet dessert, and over time the popcorn softens to give it just enough crunch and salty to add to all that sweet. 


It was a huge hit at the event. (Thank you all for being our willing taste testers!)


With the busy holidays coming up we know we will have this in rotation again and again. Kids love it. Adults love it. And while we would love to spend all day baking yummy holiday goodies we know that isn't always possible time wise. 

Yummy five minute trifles? Totally doable!

How to Make an Easy & Delicious Twelve Layer Cake

Hey y'all! I'm so excited to be guest posting here today with the Magnolia Mamas. My name is Jena and I blog over at Our Southern Roots Blog.


I live in Kentucky with my husband Juston, daughter Caroline, son Carter and our dog and cat, Dixie and Lou.  Today, I wanted to share one of my all time favorite cake recipes to make, my Twelve Layer Cake, or as some call it, Stack Cake, so let's get to it. 

Okay, I admit it...the recipe name is a bit of a lie in my case. I was only able to get eleven layers in the cake that I'm about to share with you, but the original version of this cake is 12 layers, I just always come up a liiiitle bit short when I make mine.  I'll explain why in a bit. 

Every year for my husband's birthday, I love to make him this cake. I started making him this particular cake maybe four or five years ago for his birthday. We were first introduced to it when we were staying with some great friends (who are more like family) in Alabama, Mimi and PauPau as we call them, and Mimi had a friend of hers make the twelve layer cake. Did y'all follow that? A friend of a friend we think of as family made the cake haha It was life changing, I'm telling you! 

After Mimi sharing that cake with us, I took to the internet to try and find a recipe similar to it so that I could replicate and I was successful! Unfortunately, I can't find the original source for this recipe. I found it via Google years ago and wrote it down, but I never wrote down where I found it. If I come across it I will be sure and credit the original source. 


While the cake may look or sound intimidating, it really is a breeze, just a little bit time consuming on the front end, but not too much more than any other layer cake. The first thing I did before even starting on the cake batter was to roll out some parchment paper, then lay my cake pans on top and trace twelve separate circles, then cut all of those out. I also happened to have the cutest assistant in the kitchen working with me :)

HOW TO MAKE A DELICIOUS TWELVE LAYER CAKE

*Pre-heat oven to 375 degrees*

Ingredients:
  • 4 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 sticks softened unsalted butter 
  • 2 1/2 cups granulated sugar
  • 6 large eggs
  • 3 cups milk (I used skim but any kind will work)
  • 1 1/2 teaspoons vanilla extract

Instructions

1: In either a stand mixer's bowl, or just any large bowl, cream the butter and granulated sugar together. Add the eggs in one at a time, mixing completely after each egg. Be sure and scrape down the sides of the bowl in between adding each egg as well.  

2: In a separate bowl, sift the flour, baking soda and salt together. 


3: Starting and ending with the flour mixture, alternate adding in the flour mixture and the milk to the sugar mixture, combining completely after each addition. Once that's all incorporated, add in the vanilla and your batter is complete, so now it's time to bake the layers. 


Before adding the parchment paper to my round cake pans (I think they're 8" round pans), I greased them up generously with butter. Trust me, the last thing you want is your cake layer getting stuck in the pan. The layers are so thin that getting them un-stuck would be nearly impossible while still keeping them usable, so don't be stingy with the butter. After greasing the pan, lay the parchment paper on the bottom of each pan. For each layer, you'll use approximately 1 cup of batter. This is where I messed up; I always pour in the right amount to start with and get to looking and think I should add more, then before you know it, I have an eleven layer cake instead of a twelve layer cake. Oh well. I only have three cake pans so I just cooked three layers at a time. You'll bake each set of layers for twelve minutes, maybe a little less or a little more depending on your oven. Let the layers cool in the pan once you remove them from the oven, then remove from the pan and place on a cooling rack until it's time to frost them.

Frosting ingredients:
  • 1 softened package cream cheese
  • 2 sticks softened  unsalted butter
  • 1 one pound box confectioner's sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon vanilla
1: Start by mixing the cream cheese and butter for a few minute until completely combined. Next, add in the cocoa powder and mix completely. Add in the confectioner's sugar in small batches mixing completely before adding more. Finally stir in the vanilla. If your batter is too thick, you can thin it out with milk, but I didn't need to use any. 

2: Next, it's time to start stacking and frosting.


3: At this point, before frosting the sides, it always reminds me of crepes or pancakes with chocolate icing. 

Now for the finished product...


You could add some sprinkles on top, or some pecans or walnuts...I wouldn't, but you can, haha. My husband doesn't like sprinkles and the kids don't like nuts in sweets, so I just kept it simple with no garnishes, but there you have it!

Kitchen Confessions: Gingerbread Trifle


The  holidays are the one time of year I get excited about actually being in the kitchen. There are so many yummy treats and warm comforting foods to make. Top of the list is gingerbread! It just makes the house smell SO GOOD! Not to mention it tastes all sorts of yummy. 

Today, I'm chatting over on Savvy Sassy Moms about one of my favorite holiday desserts - Gingerbread Trifle

Quick and easy holiday dessert recipe. Gingerbread Trifle recipe that is easy to make, and is the perfect holiday dessert.

It is super easy to make (because if you know me by now, I am all about the easy), and doesn't take much prep time at all. It's a total crowd pleaser, and travels well if you have to bring a dessert to a holiday party or travel on the holidays.


In just a few quick steps the Gingerbread Trifle is ready to go and ready to serve!

Kitchen Confessions: The Cheesecake Factory At Home Mixes



We love The Cheesecake Factory around here. It's probably, hands down, one of my all-time favorite restaurants. It's not somewhere we got on just a regular day and it is more of a special occasion spot, making it even more special.  My girls love it also!  Last winter we had a girls night out with Jen and her girls complete with shopping and a delicious dinner and dessert at The Cheesecake Factory.


Little Mama loves it so much and thinks that it is so special that she picked that for her birthday lunch with friends when she turned 10 this summer.  Those girls were so fun to watch as they admired all of the amazing cheesecakes in the case and trying to narrow down which ones to share.



Now, while I love their cheesecakes, y'all know us Magnolia Mamas are all about simple and easy when it comes to the kitchen  so there is probably a very slim chance I would ever try to create a cheesecake at home...until now!

The Cheesecake Factory can't share their special ingredients that make their cheesecakes the very best, but now they have created boxed mixes inspired by their legendary cheesecakes.  The Cheesecake Factory At Home Cheesecake Mixes come in several different flavors including Classic, Strawberry and my personal favorite, Salted Caramel.


I don't know about your children, but mine had a blast on Halloween.  In fact, they each brought home so much candy from trick-or-treating that I was thinking there was no way in the world we would ever eat it all!



Looking at all that candy got me thinking.  The Cheesecake Factory At Home Cheesecake Mixes work great alone or when you put your own twist on them, so an idea popped in my head for a Snickers Salted Caramel Cheesecake.  That just sounds fancy, doesn't it?!  Let me tell you, not only does it sound fancy, but it taste pretty fancy also!


The best part of it was that the entire process was so simple thanks to the mix!  The graham cracker crust was in a small package and all I had to do was combine it with melted butter and press into a pan. 



Next I followed the directions on the box for making the actual cheesecake portion and after that was done I stirred in chopped Snickers.  


Then it was ready to bake!  So very simple. 


The results, well, they were amazing.  The Mr. couldn't believe I had made this at home and the kids loved it, too!  There is one piece left and I have already placed my claim on it for an after dinner dessert tonight. 



This yummy Snickers Salted Caramel combo got me thinking about all of the other variations that could be made using The Cheesecake Factory At Home Mixes.  The Halloween candy alone had enough variety to make the possibilities endless.  I'm thinking Twix, Milky Way and Heath Bar would go great with the Salted Caramel mix and Reese's or Butterfingers would be a yummy addition to the Classic mix.  Honestly, I don't think you can go wrong with any of them and I'm just happy I now have a way to put some of the candy to good use!
