Pepper Mushrooms

You all might be aware of the fact that mushrooms are highly nutritious. Recent studies shows that it also acts against Alzheimers disease. You should buy fresh muhrooms for getting its health benefits. Here, mushrooms would appear in the land around home, especially on rotten branches or around the "virakupura" (a room for storing firewood) etc. No body here knows that they are edible. So we should depend the canned mushrooms or buy fresh mushrooms only when some one visits the supermarkets in the city. I prepared this with canned mushrooms, I think this dish will be more tasty if you replace it with the fresh one.



Ingredients needed,
mushrooms 200 g
onion 2
tomato 1 big and ripe
garlic paste 1 tsp
ginger paste 1 tsp
green chillies 2
pepper powder 2 1/2 tsp
turmeric powder 1/4 tsp
garam masala powder 1/4 tsp
coriander leaves few chopped
salt
oil



How I Prepared,
Wash mushrooms.
Chop onion and tomato.
Marinate mushrooms with garlic ginger paste, 1/2 tsp pepper powder, turmeric powder and salt.
Keep aside.
Heat little oil in a nonstick pan, roast mushrooms on a low flame.
Allow it to brown little on either sides.
Then take them out and keep aside.
In the same pan pour little more oil, and saute onion.
when it turns brown, add tomatoes , pepper powder, and enough salt.
Allow the tomatoes to be mashed well, then add garam masala , coriander leaves and mushrooms.
Mix well.
Serve hot.

Chettinadu Pepper Chicken

Ask your kid what they think about you.You will get innocent answers.You might have heard the proverb " a friend in need is a friend indeed". But I don't believe it. Most of the time you may get flattering from them.Yeah, they are not dare to tell about your real behaviour, even if they don't like it.If they tell the truth, your friendship may break there at the moment.You may think she / he has hurt your feelings.May be some of you have such good friends other than this kind. Let me tell the truth, me too adjusting many sitting silently.Some times I would ask my kids (and H) what do they find bad in my conduct? I have learnt that is the way to correct my faults.Since kids are with us always, they notice our "outside" deportment and can easily tell about it.(People may have an inside & outside behaviours, at least we can change one).Kids below 10 and above 6 will be able to do it, I think these souls may start lying after ten, as they think saying good thing will make us happy.. :)
When my girl was 4 or 5 she used to play "Ashwamedham" which she learned from the show that was anchored by Mr.G.S.Pradeep, a famous Kairali TV artist. She thought about a lady, who was alive and from our family but I couldn't find out who was it from her answers. I just asked for a clue and she said "that lady is very useful to us, it is difficult for us to live without that lady in the house"! I felt like hearing the lessons in the primary school "Cow is a very useful animal, it gives us milk..." :) Yeah, it was about her mother and all mothers in the world! :) She might have changed her opinion when she grew (now 11) and sometimes says "ma, your character is very bad..." My strictness might have provoked her.. ;)
Don't think am deviating from the food talks. Talking too much about food (or other things) is really boring.(am not talkative, thats why I think so.. :) )So I stop here, and let's see the "chettinadu pepper chicken"...



Ingredients
Chicken pieces 1/2 kg
small onions 4
curry leaves 2 stalks
coriander leaves 2 Tbsp
coriander powder 1 tsp
pepper powder 3 tsp
turmeric powder 1/4 tsp
fennel seeds 2 pinches
cardamom 1 crushed
cinnamon sticks 1/4 " size 2 no.
cloves 3
salt
oil or ghee

Grind together,
Coconut grated 3/4 cup
pepper corns 2 Tbsp
garlic cloves 6 small
ginger 1/4 " piece



How to prepare
Heat little oil, put cardamom, cinnamon, cloves and fennel seeds.
After few seconds, add chicken with all powders and ground paste.
Cook this with enough water and salt.
When the chicken is done, reduce water on a low flame.
Heat a frying pan, pour little oil or ghee.
Saute chopped small onions, curry leaves.
When small onions are brown add the cooked chicken.
Stir slowly until the water evaporates completely and chicken is brown and dry.
Mix with coriander leaves, remove from fire.

This is the recipe of Mrs. Ammu Mathew, Vanitha. Small onions are my addition , so you can avoid it.Adding more pepper powder will give a nice dark color.

Pepper Fish Fry



Ingredients
Fish fillets 6 medium size pieces
garlic and ginger paste 2 tsp
lime juice 1/2 of one lime
fennel seeds powder 1/4 tsp
pepper powder 4 or more tsp
salt
oil



How to prepare
Clean fish and marinate using the above ingredients. Shallow fry them. Use coconut oil for frying. It will enhance the taste..!

Potato / Aloo Pepper Masala



Ingredients
Potatoes 3 medium size
onions 3
tomatoes 2
green chillies 2
coriander leaves chopped 1 tbsp
curry leaves few
pepper powder 2 tsp
turmeric powder 1/4 tsp
mustard seeds few
water 1/2 cup hot
salt
oil

grind to paste,
garlic cloves 3 big size
ginger piece 1 inch size
fennel seeds 1/4 tsp
pepper corns 2 tsp
cloves 2
cardamom 1
cinnamon 2 small sticks



Method

Boil , peel and cut the potatoes into pieces.
Heat oil in a pan,let mustard seeds splutter. Saute chopped onion until slightly brown. Then saute the ground paste till the raw smell goes.
Add chopped tomatoes and all the powders with salt.Add hot water and cook until the tomatoes are mashed well. Add potato pieces,coriander, curry leaves and green chillies.Mix well and heat it by keeping the lid closed for a while on a low flame.
Take this curry soon when it is hot with chapathi or puri!

Chicken Pepper Fry



Ingredients and Method of preparation
Chicken – ½ kg
Garlic and ginger paste – 2 tsp
Turmeric powder – ¼ tsp
Coriander powder – ½ tsp
Pepper powder – 2 tsp
Pepper corns -1 tsp- crushed
Curry leaves-few chopped
Lemon juice – 1 tsp
Garam masala powder – ½ tsp
Fennel seeds powder – a pinch
Oil – 1 tbsp
Coriander leaves
salt
Mix everything with chicken pieces except oil and coriander leaves.
Heat pan
Pour oil.
Add the marinated chicken pieces with curry leaves.
Cover.
Stir occasionally.
Cook till the chicken pieces are done.
Remove the lid.
Stir on low flame till the masala cover the chicken pieces.
Garnish with coriander leaves,onion pieces etc.
