Pepper Mushrooms

You all might be aware of the fact that mushrooms are highly nutritious. Recent studies shows that it also acts against Alzheimers disease. You should buy fresh muhrooms for getting its health benefits. Here, mushrooms would appear in the land around home, especially on rotten branches or around the "virakupura" (a room for storing firewood) etc. No body here knows that they are edible. So we should depend the canned mushrooms or buy fresh mushrooms only when some one visits the supermarkets in the city. I prepared this with canned mushrooms, I think this dish will be more tasty if you replace it with the fresh one.



Ingredients needed,
mushrooms 200 g
onion 2
tomato 1 big and ripe
garlic paste 1 tsp
ginger paste 1 tsp
green chillies 2
pepper powder 2 1/2 tsp
turmeric powder 1/4 tsp
garam masala powder 1/4 tsp
coriander leaves few chopped
salt
oil



How I Prepared,
Wash mushrooms.
Chop onion and tomato.
Marinate mushrooms with garlic ginger paste, 1/2 tsp pepper powder, turmeric powder and salt.
Keep aside.
Heat little oil in a nonstick pan, roast mushrooms on a low flame.
Allow it to brown little on either sides.
Then take them out and keep aside.
In the same pan pour little more oil, and saute onion.
when it turns brown, add tomatoes , pepper powder, and enough salt.
Allow the tomatoes to be mashed well, then add garam masala , coriander leaves and mushrooms.
Mix well.
Serve hot.

Spicy Roasted mushrooms

Canned mushrooms are tasteless, according to my DH.. He has much sweet childhood memories of tasty mushroom thoran or roast , prepared by plucking fresh mushrooms from the land around home. You might have heard from other bloggers before, during child hood, you spent your long holidays in your Grandma's house (mostly mother's side) and in a morning, after a night's thunder and lighting , you went out with Grandma to pick newly sprouted mushrooms... :) Grandmas say koon / mushroom sprouts once after it thunders..! I haven't seen any body cooked mushrooms in my home and often said to us children, don't pluck it, it is poisonous! But after marriage, I happened to eat mushroom thoran from S's family and after that I started searching for mushroom recipes and did much experiments... Since S didn't like the "watery-tasted" mushrooms, I always tried to cover it with lots of masalas.. :) And this one is such a dish, spicy roasted mushrooms...



Ingredients used

Mushrooms cut into 4 pieces 1 1/2 cups
shallots 5
garlic cloves 2 big size
ginger piece 1/2 " size
pepper powder 3 tsp
chilli powder 1/2 or 1 tsp
fennel seeds powder 2 pinches
turmeric powder 1/4 tsp
garam masala 1/2 tsp
tomato 1/2
curry leaves few
coriander leaves chopped few
green chillies as desired
oil 1 Tbsp
mustard seeds
salt



How I prepared

Grind together, shallots, garlic and ginger. Mix this paste with turmeric powder, chilli and pepper powder, fennnel seeds powder, 1/4 tsp garam masla and salt.
Add mushrooms into this and marinate well.
Heat little oil in a pan. Let mustard seeds splutter.Add mushrooms. After few seconds turn over them.
Later stir them for a while. Crush the tomato pieces with salt and add it to this.Mix and cook covered on a low flame.
After 2 minutes open the lid and mix well by stirring continuously. Add curry leaves and green chillies as per taste and stir..
Let the masala cover mushrooms completely and the water absorb.
Sprinkle remaining garam masala over it and garnish with coriander leaves. You can use juice of half lime instead of tomato.

Mushroom And Baby Corn Manchurian



Ingredients
Mushrooms 1 1/2 cups chopped
baby corns 1 1/2 cups chopped
onion 2
ginger 1 " piece
green chillies 4
garlic and ginger paste 2 tsp
maida / all purpose flour 1/2 cup
cornflour 2 Tbsp
pepper powder 4 or more tsp
spring onion chopped 2 Tbsp
celery chopped 1 Tb
soya sauce 4 Tbsp
chilli sauce 1 tsp
tomato sauce 1 Tbsp
salt
oil



How to prepare
Mix maida, cornflour, garlic ginger paste, 1 tsp pepper powder in little water to make a thick paste. Add chopped mushrooms and baby corns in to this. Mix well.Heat oil in a frying pan and shallow fry them until slightly golden brown.
Chop onion and ginger. Heat oil , saute onion until lightly brown. Add ginger and green chilly slits. When the smell of ginger comes, add fried mushrooms and baby corns into this. Add celery, spring onion, 3 Tbsp soya sauce, chilli sauce,remaining pepper powder and stir well. Cover and cook on a low flame for a while. Stir again, remove from fire, add 1 Tb soya sauce and tomato sauce. If needed add salt. Cover and let it set for half an hour.

Macaroni With Tuna and Mushroom



How to prepare Macaroni with tuna and mushroom
macaroni 250 g
mushroom 1 can
tuna 1 can
tomato paste 1 table spoon
onion 2
garlic and ginger paste 2 teaspoons
pepper powder 2 teaspoons
soya sauce 1 table spoon
pepper sauce 1 teaspoon
tomato sauce 2 table spoons
coriander leaves chopped few
salt
oil

Cook macaroni and keep aside.
Chop onion and mushrooms. Heat oil, saute onion till soft. Then saute garlic and ginger paste for few seconds. Add mushrooms, tomato paste,and tuna and stir for one minute. Then add soya sauce , pepper sauce , macaroni and pepper powder into this. Stir well. Add tomato sauce and coriander leaves and mix, remove from fire.

Mushroom Masala



Ingredients
Mushroom 400 g
Turmeric powder ¼ tea spoon
Chilly powder one tea spoon
Coriander powder two teaspoon
Grated coconut half cup
Onion one medium
Tomato one medium
Green chilly one or two
Garlic and ginger paste one tea spoon each optional
Curry leaves and coriander leaves few
Mustard seeds one tea spoon
Oil one table spoon
Garam masala one tea spoon
Salt

How to prepare
Fry coconut till brown using little coconut oil.
Blend this with little water and two cashew nuts.
Heat oil.
Let the mustard seeds splutter.
Add chopped onions.
Sauté till transparent.
Add all powders, salt and chopped mushrooms.
Mix very well till the whole powders cover the mushrooms.
Then add chopped tomatoes, green chillies, curry leaves and stir.
Pour blended coconut solution into this.
Boil.
Sprinkle little garam masala and chopped coriander leaves over this.

Mushroom with egg

This is a simple and delicious recipe for making mushrooms! A bachelor's special for their dinner preparations. This one had got much appreciations from readers when I published in other cooking sites in net.. Hope you enjoy! :)



Ingredients
Mushroom - 2 cups(cut into pieces)
Onion(medium) - 2 nos(chopped)
Tomato - 1 no(chopped)
Garlic pods - 2 nos(crushed)
Ginger - A small piece(crushed)
Green chillies - 2 nos
Turmeric powder - 1/2 tsp
Chilly powder - 1 tsp
Garam masala - 1/4 tsp
Eggs - 2 nos
Curry leaves - A few
Coconut oil - 2 tbsp
Salt - As reqd

Method
1)Heat oil in a pan.
2)Splutter 1/2 tsp of mustard seeds.
3)Saute onion in this till golden.
4)Fry garlic and ginger for 2 mins.
5)Add tomato, green chillies, turmeric powder, chilly powder, salt and curry leaves. Stir well.
6)Add mushroom, stir and cook by adding little water.
7)Cook until no water remains.
8)Break two eggs, add into this mixture, stir well and let it dry.
9)Add garam masala.
10)Garnish with coriander leaves.
