Pantry Weekend
This weekend I finally got around to cleaning out my pantry because I was running out of room to store things. I threw out any expired food items I found, donated a bag things to the food pantry, and the rest I decided to cook up to eat! (Gee, I wonder why I didn't do this sooner?)
This bread is a Beer Bread mix that I bought at a home party a while back. There's something about the smell of baking bread in the fall. Tomorrow I'm going to make a pot of soup to go along with the bread. This morning I decided to make a veggie omelet using some of the green peppers my daughter gave me from her garden.
And I found a box of hash brown potatoes in the pantry, so I cooked them up to go along with the eggs.
In the summer I like to keep a package of pasta salad mix on hand to make a quick side dish when it's warm outside. Well, I found TWO packages in the pantry, so I prepared both of them to serve with my lunches and dinners for the next few days. In fact, this will taste great with the leftover panko-breaded tilapia and sweet potato that I'm having for dinner tonight. So what are you serving for dinner tonight?

Pizzi
"Pizzi" is what my daughter used to call pizza when she was a little girl. Sometimes we still refer to it as Pizzi. I found these 6-inch pizza pans at Homegoods a while back and thought I would put them to use last night. I didn't have any pizza dough on hand, but I did have a couple of small cans of Pillsbury Grands Jr. Buttermilk Biscuits (5 rolls per tube) in the fridge, so I used those to make the crust. Spray each pan with PAM and then using your fingers, press the biscuit dough onto each pan (2-1/2 biscuits per pizza).
Spread canned pizza sauce on each crust using the back of a spoon and then top with your favorite toppings. (I used green peppers from my daughter's garden and onions.) Finally, top with shredded mozzarella cheese. Bake the pizzas in a preheated 400-degree oven for 9-12 minutes or until crust is golden. Enjoy!

Lunch Anyone?
BLACK BEAN TOSTADAS
2 servings
1 cup canned black beans, rinsed & drained
6 Tbls mild salsa
1/2 tsp ground cumin (I didn't have this, so I used a dash of cayenne and a pinch of dried cilantro)
4 corn tostada shells
4 Tbls refrigerated guacamole (or you can use your own guacamole recipe like I did)
1 cup chopped romaine lettuce
1/4 cup chopped tomato
2 Tbls chopped green onion (I didn't have green onions, so used Vadalia onion instead)
Grated cheddar cheese (optional)
In a medium saucepan, stir together beans, salsa, and cumin. Heat thru and mash slightly. Meanwhile heat tostada shells according to package directions. Divide bean mixture evenly among tostada shells. Spoon 1 tablespoon of the guacamole onto each tostada. Top with lettuce. Sprinkle with tomato and green onion.

258 calories, 12 grams fat, 37 grams carbohydrates, 11 grams fiber, 8 grams protein,

It was a beautiful sunny day here on Mother's Day and even more so since I got to spend it with my daughter and son-in-law.
They took me out for breakfast at Honey-Jam Cafe. It was VERY crowded, but the food was well worth the wait.
I had the Veggie Scrambler with hash browns and the most delicious pancakes.
I loved the color palette of the flowers in the containers at the front door - especially the addition of the pussy willows they used to add some height. I had a great day! Thank you N and J.

Party Time!
This weekend I had my brother and sister-in-law over to celebrate her birthday. I decided to make a Strawberry Cake from a recipe I found in Southern Living Magazine. It was supposed to be a triple layer cake, but since I only have two 9-inch cake pans, I converted it to a two-layer cake. It's going to be a gorgeous weekend here in the midwest - sunny with temperatures in the mid 60's. I think (and hope) that Spring is right around the corner. I'd love to be able to put the shovel away and start thinking about flowers and green grass and birdies again.

I was supposed to meet a friend for lunch today, but she came down with an awful bug. I think it's that same bug that's been going around for months now. When will it end?!
So I decided to go out anyway and treat myself to a bowl of Loaded Baked Potato Soup, a Harvest Salad and a pretty magazine at Corner Bakery. Yum!
