Wednesday is Pie Day!

The other day I was at HomeGoods and found a little cookbook called, "Mini Pies" for only $3.99. I couldn't resist buying it because I thought these bite size treats looked mighty tasty. 
If you can't find it at your HomeGoods store, Amazon has it for a couple dollars more here.

All the recipes are made in either a standard size or a mini muffin pan. I already had some Granny Smith apples in the fridge so I decided to give the "Caramelized Apple Tart" recipe a whirl.
 I never quite thought of myself as a pie baker, but these little pies were pretty easy to put together.
And oh boy, these were SO yummy!
I plan to keep these in the freezer and pull them out, one at a time, when I feel the need to have a little something sweet!

Party Time!

This weekend I had my brother and sister-in-law over to celebrate her birthday. I decided to make a Strawberry Cake from a recipe I found in Southern Living Magazine. It was supposed to be a triple layer cake, but since I only have two 9-inch cake pans, I converted it to a two-layer cake. No one seemed to really care how many layers it was when they were eating it! For the recipe, you can click here.

Fall Baking

It's a nippy autumn day here today and I felt like warming up the house by doing some baking.
Our favorite basic cookie around here are Oatmeal Raisin cookies. Over the years I've tried many different recipes for this type of cookie.
Mixed the ingredients all together with a wooden spoon hundreds of time. Using the same wooden spoon I used since I was a newlywed.
And dropped them by evenly spaced rounded tablespoons on a cookie sheet. But throughout all those recipes I've tried, I always come back to the same one.
My secret recipe can be found under the lid of the Quaker Oats carton. I never have to search high and low to find it or try to recall which recipe box or cookbook it is in. I can always rely on Mr. Quaker to keep my favorite recipe safe and sound for me under his hat!
