    These were terrific. The recipe is easy to follow. They were gone in an instant, some didn't even make it to the table. I omitted the nutmeg and unfortunately I didn't have mushrooms on hand. Thank you Lishakay for sharing your recipe

    Used b/s thighs instead of breasts which was a bit tricky. Made a small pocket in the thicker end so was only able to stuff one slice of Sicilano salami, one basil leaf and maybe a heaping tsp. of a Italian blended cheese mix. Did the egg wash and bread crumbs. Cook time was perfect. Easy peasy and I really liked it. Served with fresh tomatoes from the Farmer's Market, basil and EVOO.

    I thought this was pretty tasty! I used mozzarella cheese because that is what I had and I did dust with breadcrumbs (Italian) although I didn't do the egg wash. They stuck to the cooking spray just fine. I used my cast iron grill pan so this could go straight into the oven. 15 minutes plus the other 5 was just right for mine. The pepperoni added just the right amount of spicy for me. One of these totally filled me up. I added a couple of pictures and a thread in IMI 7/25/14
