    I know it's been a while since anyone posted in this recipe, but I was looking for a recipe for Mint Nanaimo Bars and came across this. I make both traditional and gluten free Nanaimo bars all the time.
    Eggs are very important in the crust, you need it to bind it together, just keep the bars refrigerated and they will be fine.
    Custard powder is an essential part of the traditional bar, it is what creates the yellow filling. If the recipe says to make a vanilla custard from scratch, it is not a Nanaimo Bar.
    Nanaimo Bars are named for the city of Nanaimo in BC, Canada, where they were first created. I know it sounds silly, but that is the truth. I am from BC and know that for fact. Check out the City of Nanaimo website and they will give you more information. It is something they are very proud about. Butter Tarts and Nanaimo bars are two very Canadian treats. If you haven't tried either, you are definitely missing out!
