    Recipe by Dariana: Roasted Tomato Salsa
    I don't like this recipe. Will have to figure out somehow to save it.
    Too much onion. Not enough tomato after coring and roasting. Tomato comes up almost mush at 25 minutes bake and even a short whiz in the food processor makes sure it is mush. Nothing like the picture indicates of nice squared up tomato pieces.
    Pepper skins never charred.
    And the roasting pan is a burnt mess. Should have said to use parchment paper.
    Texture is not right with the raw onion pieces and tomato mush mixed. Might need to spend some more time in the food processor to break down everything well. Then add some raw fine chopped tomatoes.
    Recipe not recommended!

    Chopped up the conglomerate a little finer in the food processor and added another 1 1/2lb raw fresh tomato chopped then pulsed a couple of times. Looks and tastes better. At least now I'm not tempted to throw it out.

    That is a lot of onion. I put onion in my salsa but VERY little. I put too much one time tried it and almost gagged. I learned my lesson quick!
