Poached Peaches with White Cheese Mousse

- 3 cups water shopping list
- 1 1/2 cups sugar shopping list
- 1/3 cup lemon juice shopping list
- 1 tbsp vanilla shopping list
- 6 medium peaches, halved and pitted shopping list
- For mousse: shopping list
- 1/2 cup ricotta cheese shopping list
- 1/4 cup cream cheese shopping list
- 3 tbsp confectioners sugar shopping list
- 1 1/2 tsp lemon rind shopping list
- 1/2 tsp vanilla shopping list
How to make it
- Combine first 4 ingredients in large glass mixing bowl. Microwave on high for 10 minutes. Stir until sugar dissolves. Add peach halves to syrup and microwave on high for 4 minutes. Refrigerate covered overnight.
- Beat all mousse ingredients together, cover and refrigerate.
- When ready to serve, place peach halves on serving plate cut side up. Spoon mousse into pit cavity and sprinkle with nutmeg.

Oh....this sounds lovely!!! I'll have to try this! Maybe I'll add a little rum to the poached peaches!

This was very good! I made it as written except I added a splash of rum and some cranraisins to the poaching liquid. I wouldn't call the white cheese a mousse because it wasn't fluffy, but it was very good! I love sweetened ricotta! I had this for br...more
