Roasted Garlic Soup

- 4 bulbs of garlic shopping list
- 1/4 c. of olive oil shopping list
- 6 tbsp. of unsalted butter shopping list
- 1/3 c. of dry sherry shopping list
- 1 c. of heavy whipping cream shopping list
- 1 tbsp. of lemon juice, or to taste shopping list
- 4 chopped leeks shopping list
- 1 chopped onion shopping list
- 6 tbp. of all-purpose flour shopping list
- 4 c. of chicken broth shopping list
- salt to taste shopping list
- 1/4 tdp. of freshly ground white pepper shopping list
- 2 tbsp. of chopped fresh chives shopping list
How to make it
- First by cuttin gof the tops of each garlic head.
- Now place the garlics into a baking dish.
- Sprinkle Olive oil over these and bake at 350 degrees around 60 min.
- Let this cool.
- Now take knife and press on garlic, and then mince.
- Add butter to heated pan and saute garlic, leeks and onions approx. 8 min.
- Now add flour and cook approx. 10 more min.(stir)
- Add hot broth and sherry to this letting simmer over medium flame.
- Let this cool and puree mixture in food processor.
- Pour back in hot pan and add slowly the cream.
- Let this thicken(approx. 10 min)
- Sti in lemon juice.
- Finally, season with the salt and pepper!
