How to make it

  • CHICKEN:
  • Combine the breadcrumbs, Parmesan cheese, and parsley in a bowl.
  • Set aside.
  • Preheat the oven to 375 degrees F.
  • Fry the bacon, drain and add to the crumbs.
  • Melt the butter.
  • Add the minced garlic, worcestershire and dry mustard.
  • Heat garlic through.
  • Coat breasts with butter mixture.
  • Place in suitably sized baking dish (dependent on size of breasts).
  • Press crumb mixture into the breasts.
  • Bake for 25 minutes.
  • **Start the sauce
  • Combine olive oil, vinegar, garlic, basil and cream in a saucepan.
  • Whisk together until heated through.
  • Beat the egg yolk lightly.
  • Add a small amount of the yolk to the sauce, whisking constantly, so yolk does not cook.
  • Whisk in remainder of yolk.
  • Stir sauce until desired thickness.
  • DO NOT BOIL.
  • Pour over breasts before serving OR serve separately in a bowl with a ladle.
