Chicken with Basil Sauce

- CHICKEN: shopping list
- 4 large chicken breast filets shopping list
- 1 cup breadcrumbs shopping list
- 1/2 cup parmesan cheese shopping list
- 1 tablespoon fresh parsley, minced shopping list
- 1/4 pound bacon, chipped shopping list
- 3 ounces butter shopping list
- 2 garlic cloves, minced shopping list
- 2 teaspoons worcestershire shopping list
- 1/2 teaspoon dry mustard shopping list
- basil SAUCE: shopping list
- 1/2 cup extra-virgin olive oil shopping list
- 1/4 cup red wine vinegar shopping list
- 1 clove garlic, minced shopping list
- 1 cup fresh basil leaves, chopped shopping list
- 1/2 cup heavy cream shopping list
- 1 large egg yolk shopping list
How to make it
- CHICKEN:
- Combine the breadcrumbs, Parmesan cheese, and parsley in a bowl.
- Set aside.
- Preheat the oven to 375 degrees F.
- Fry the bacon, drain and add to the crumbs.
- Melt the butter.
- Add the minced garlic, worcestershire and dry mustard.
- Heat garlic through.
- Coat breasts with butter mixture.
- Place in suitably sized baking dish (dependent on size of breasts).
- Press crumb mixture into the breasts.
- Bake for 25 minutes.
- **Start the sauce
- Combine olive oil, vinegar, garlic, basil and cream in a saucepan.
- Whisk together until heated through.
- Beat the egg yolk lightly.
- Add a small amount of the yolk to the sauce, whisking constantly, so yolk does not cook.
- Whisk in remainder of yolk.
- Stir sauce until desired thickness.
- DO NOT BOIL.
- Pour over breasts before serving OR serve separately in a bowl with a ladle.
