Corn Flakes Coating Mix For Fish Or Poultry

- DRY COATING MIXTURE: shopping list
- 1/2 cup (125 ml) corn flakes cereal (finely chopped with a food processor) shopping list
- 1/2 cup (125 ml) dry bread crumbs (OR japanese panko bread crumbs) shopping list
- 1 tbsp (15 ml) dried parsley shopping list
- 1/4 tsp (1 ml) garlic powder shopping list
- 1/4 tsp (1 ml) paprika shopping list
- 1/4 tsp (1 ml) celery salt shopping list
- 1/4 tsp (1 ml) dried thym shopping list
- 1/4 tsp (1 ml) dried basil shopping list
- 1/4 tsp (1 ml) dry mustard (powder) shopping list
- Pinch of cayenne pepper or more to taste shopping list

- 4 chicken fillets or fish fillets (boneless) shopping list

- 2 large eggs shopping list
- 2 tbsp (30 ml) milk shopping list
- 1/4 to 1/2 ( 50 to 125 ml) cup all purpose flour shopping list
How to make it
- Preheat oven to 400 degrees F.
- Mix the dry coating mixture ingredients together and reserve.
- Leave whole or cut the chicken fillets or fish fillets in 1 1/2 inch pieces. Season with salt and pepper.
- Whisk the eggs with the milk with a fork.
- Dip the chicken or fish in the all purpose flour, remove excess and dip in the egg/milk mixture and then in the dry coating mixture.
- Place coated chicken or fish on a ligthty oiled baking pan.
- Bake from 7 to 8 minutes on each side and serve.
- NOTE: You could fry the coated fish or poultry in oil in a frying pan until brown on each side.
