Ingredients

How to make it

  • Melt 1/4 cup butter in skillet over medium heat.
  • Add leeks and cook until tender
  • Add stock
  • Bring to boil
  • Reduce heat and simmer about 25 minutes
  • In batches, puree in blender
  • Melt 1/4 cup butter in saucepan over medium heat
  • Add flour stir until blended
  • Mix in half and half, 1 cup at a time, whisking all the while
  • Add 1/4 cup cheese and blend until melted
  • 1/4 cup at a time, add remaining cheese, blending until melted
  • Mix in leek puree
  • Thin with more stock if needed
  • Salt and pepper to taste
  • Garnish with chive
