Cream of Brie Soup

- 1 stick butter shopping list
- 8 leeks, white part and chopped shopping list
- 4 cups chicken stock shopping list
- 1/2 cups flour shopping list
- 4 cups half and half shopping list
- 1 1/2 lb. Brie, chilled and cut into cubes without rind shopping list
- salt and pepper to taste shopping list
- 2 tbls. chives, chopped for garnish shopping list
How to make it
- Melt 1/4 cup butter in skillet over medium heat.
- Add leeks and cook until tender
- Add stock
- Bring to boil
- Reduce heat and simmer about 25 minutes
- In batches, puree in blender
- Melt 1/4 cup butter in saucepan over medium heat
- Add flour stir until blended
- Mix in half and half, 1 cup at a time, whisking all the while
- Add 1/4 cup cheese and blend until melted
- 1/4 cup at a time, add remaining cheese, blending until melted
- Mix in leek puree
- Thin with more stock if needed
- Salt and pepper to taste
- Garnish with chive
