Diabetic Chocolate Chip Pumpkin Bars

- 1 cup flour shopping list
- 1 cup whole wheat flour shopping list
- 3/4 cup sugar shopping list
- 1/2 cup finely chopped pecans or walnuts shopping list
- 2 teasp. baking powder shopping list
- 1 teasp. cinnamon shopping list
- 1/2 teasp. baking soda shopping list
- 1/2 teasp. salt shopping list
- 1 (15-ounce) can pumpkin shopping list
- 4 eggs slightly beaten or (1 cup frozen egg product, thawed) shopping list
- 1/2 cup canola oil shopping list
- 1/4 cup fat-free milk shopping list
- 1/2 cup miniature semi-sweet chocolate chips shopping list
How to make it
- preheat oven to 350' F
- lightly coat 15 x 10 x 1 inch baking pan with cooking spray
- In large bowl combine flour, ww flour, sugar, pecans, baking powder, cinnamon, baking soda, and salt
- in medium bowl combine pumpkin, eggs, oil and milk.
- add pumpkin mixture and 1/3 cup of the chocolate chips to flour mixture.
- stir until just combined
- spread evenly in baking pan
- sprinkle the remaining chocolate chips over the top
- bake about 25 minutes or until a toothpick comes out clean
- cool on a wire rack
- cut into bars
