Green Chile Red Pepper Corn Bread Cobbler

- 2 tbs. olive oil shopping list
- 2 medium onions, diced shopping list
- 6 green Anaheim, or 4 poblano chiles, thinkly sliced shopping list
- 2 red bell peppers, thinly sliced shopping list
- 1-2 tbs garlic, minced shopping list
- 2tsp. cumin shopping list
- salt and pepper shopping list
- 1/2 lb. grated cheddar cheese shopping list
- 8 ounces cream cheese, cut into chuncks shopping list
- biscuit topping: shopping list
- 1/4 cup honey shopping list
- 1 cup milk shopping list
- 1 egg shopping list
- 3 tbs. melted butter shopping list
- 1 cup yellow cornmeal shopping list
- 1 cup flour shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp. baking soda shopping list
- 1/2 tsp. salt shopping list
- sliced tomatoes, fresh tomato salsa, or sour cream shopping list
How to make it
- Grease a 8x12 baking dish
- Heat olive oil in a large skillet over medium flame, add onions and cook until they soften
- Add chiles, bell peppers, garlic, and cumin, continue cooking until vegetables are just tender
- Season with salt and pepper to taste
- Spread half of the chile mixture into the baking dish.
- Arrange half the cheese over mixture and then add remaining chile mixture
- Scatter the cream cheese over mixture.
- Heat oven to 400
- To make topping:
- mix the wet ingredients in a bowl
- mix the dry ingredients in another bowl
- Stir the two together until just combined
- Spread evenly over the chile cheese mixture
- bake for 25 minutes
- Scatter remaining cheddar over topping and bake another 5 mintues
- Serve with sliced tomatoes, tomato salsa, or sour cream

Results: Had a bunch of friends over for a bbq and they all loved the cobbler. No leftovers! Plus it is easy to make and gave me time to mingle with the guests.
