Baked Stuffed Chops

- 6 boneless pork chops (not too thin) shopping list
- 1/2 - 3/4 lb. sliced mushrooms shopping list
- 1/4 cup butter shopping list
- 1/4 cup sherry shopping list
- medium onion, diced shopping list
- flour shopping list
- 2 cans cream of mushroom soup shopping list
- 1 bag herb seasoned stuffing mix (pepperidge farm or arnold) shopping list
- milk shopping list
How to make it
- Pre heat oven to 375 F
- In a large pot, cook mushrooms & onion over med-low heat until soft & brown. Add wine; cook for a few minutes.
- Sprinkle flour until liquid is absorbed and continue cooking at low to medium heat for a couple more minutes. Add milk and scrape bottom of pan until it thickens into a sauce. (I usually eyeball this part...so add enough milk to make a sauce consistancy. Maybe about 5 oz.) Cook until thickened into sauce.
- Stir in 1 can cream of mushroom soup. Add stuffing mix to this mixture and coombine well. Cook for a few minutes, stirring occasionally, on low heat.
- In a skillet over med-high heat, brown chops in butter on both sides. (Yes, all that butter!) Do not cook them completely.
- Remove chops form pan and move them to a 13 x 9" baking dish that's been sprayed w/ cooking spray.
- Add water (about 1/2 cup) to pan drippings. Scrape up those yummy bits and let this reduce by half. Add the reduction to the stuffing mixture and combine well. Scoop out all the stuffing mixture onto each chop, covering them completely. (You'll have plenty of stuffing probably to cover the entire dish)
- Dilute last can of cream of mushroom soup w/ 1/2 can of milk. Heat on stove top & pour over each stuffing covered chop (use the full amount).
- Bake for 20 minutes or until done. Don't over cook your chops or they'll be dry.
