White Chili

This is a wonderful soup for a cold winter day! Or any time you want something alittle hot and spicy! I love chicken with just about anything - so why not a chicken chili?!?!
Ingredients
- 4 (16oz) cans Northern beans shopping list
- 2 Medium onions shopping list
- 1 Tbsp olive oil shopping list
- 3 (4.5oz) cans green chiles, undrained shopping list
- 4 cloves minced garlic shopping list
- 2 tsp ground cumin shopping list
- 2 tsp dried oregano shopping list
- 6 cups chicken broth shopping list
- 5 cups cooked, chopped chicken breast shopping list
- 3 cups shredded pepper jack cheese shopping list
- 1/2 tsp pepper shopping list
- 1 cup chopped fresh cilantro shopping list
How to make it
- Saute onions in skillet with olive oil on med-high heat until tender
- Add green chiles and next 3 ingredients
- Cook 2 minutes, stirring constantly
- Add beans, broth, and onion mix in large soup kettle with chicken and simmer
