Alternative Shepherds Pie

- 5 cups mashed potatoes shopping list
- 3 tablespoons unsalted butter shopping list
- 3/4 teaspoon salt shopping list
- 1/4 tsp black pepper shopping list
- 1/4 cup fresh parsley, snipped fine shopping list
- 1/2 cup cream cheese, softened (feel free to substitute neufchatel) shopping list
- 1/4 cup olive oil, or any cooking oil shopping list
- 2 medium onions, chopped shopping list
- 2 teaspoons dried basil shopping list
- 1 1/2 teaspoons dried tarragon shopping list
- 2 cups chopped broccoli shopping list
- 1 cup chopped bell pepper shopping list
- 1/2 pound tofu OR 1 cup of cooked garbanzos shopping list
- 2 cups sliced mushrooms shopping list
- 2 cups corn shopping list
- 1 1/4 cups sour cream shopping list
- 1 1/2 cups grated cheddar cheese shopping list
- paprika shopping list
How to make it
- Preheat the oven to 350 degrees.
- Combine the mashed potatoes, 2 tablespoons of the butter, 1/2 teaspoon of the salt, black pepper, parsley, and cream cheese. Set aside.
- Heat half the oil over medium heat and saute' the onions until the begin to turn translucent.
- Cut the tofu into 1/2 inch cubes and add to the pan with a bit more oil.
- Add the broccoli, bell pepper, basil, and 1 teaspoon of the tarragon. Season with salt and pepper. Remove from heat.
- Pour the vegetable & tofu mixture into a 9 x 13 inch pan.
- Heat about 1 tablespoon of the butter in a skillet and cook the mushrooms and the remaining 1/2 teaspoon tarragon. Remove from the heat.
- Add the corn and sour cream to the mushrooms. Layer on top of the vegetables in the pan.
- Cover the mushrooms with the mashed potatoes.
- Top the potatoes with the grated cheese.
- Top the grate cheese with a sprinkling of paprika.
- Bake, covered, for 30 minutes, and then uncovered for 10-15 minutes, until browned a bit on top.
