Pina Colada Cake

- 1 pkg. white cake mix shopping list
- 1 small pkg. coconut cream or vanilla instant pudding shopping list
- 4 eggs shopping list
- 1 cup flaked coconut shopping list
- 1/2 cup water shopping list
- 1/3 cup Bacardi dark rum shopping list
- 1/4 cup oil shopping list
- Frosting: shopping list
- 8 oz crushed pineapple in juice shopping list
- 1 small pkg. coconut cream or vanilla instant pudding shopping list
- 1/3 cup Bacardi dark rum shopping list
- 9 oz Cool Whip shopping list
How to make it
- Blend all ingredients except coconut in large bowl. Beat 4 minutes
- with electric mixer. Pour into 2 greased and floured 9-inch layer
- pans.
- Bake at 350 for 25-30 minutes or until inserted toothpick comes
- out clean. Cool in pan for 15 minutes, then remove to rack to
- finish cooling.
- Fill and frost, then sprinkle with coconut.
- Chill. Refrigerate any leftover cake.
- For frosting, combine all ingredients except Cool Whip, and beat
- until blended. Fold in thawed Cool Whip.
