Grilled Citrus Chicken Under A Brick

- 1c fresh orange juice shopping list
- 1/3 c fresh lime juice shopping list
- 1/4c fresh lemon juice shopping list
- 2TBSP EVOO shopping list
- 1TBSP chopped fresh basil(they suggested oregeno) shopping list
- 3 tsp salt ,divided shopping list
- 2tsp finely chopped rosemary shopping list
- 7 garlic clove-rough chop(they suggest 1:( ) shopping list
- 1 whole chicken butterflied shopping list
- 1 tsp hungarian sweet pepper( i used regular paprika) shopping list
- 1 tsp black pepper shopping list
- nonstick vegetable spray shopping list
- 1 1/2 oranges shopping list
- 2 foiled bricks or cast iron skillet. I have a SAMMY PRESS. shopping list
How to make it
- Whisk juices,evoo,basil,1tsp salt,rosemary,& garlic in glass baking dish. Add chicken to marinade. turn to coat. chill 2 hours but best if marinaded for 24hrs.
- mix remaining salt,paprika & pepper in a sm. bowl.
- Spray grill w/ nonstick spray.
- Prepare bbq-med heat.
- Slice 1/2 orange into 1/4"slices
- removechicken from marinade;pat dry
- loosen skinfrom chicken breast & slide 1 or 2 orange slices btw skin&breast
- loosen skin from thighs&slide 1-2 orange slices btw skin&thighs
- rub paprika mixture on both sides of chicken
- place chicken skin side down on grill
- place weights atop chicken
- cover&grill until skin is crispt&brown-about 15 min.
- remove weight
- using tongs,turn chicken
- replace weights
- cook until cooked through about 30 m(they said 20 but it wasn't done so let it go 10 more m & was perfectly juicy!)
- let chicken rest for 15m
