Marinara N Mozzeralla Chicken Casserole

- 4 oz rigatoni shopping list
- olive Oli shopping list
- kosher salt shopping list
- 1 med onion, chopped shopping list
- 2 T chopped garlic shopping list
- 8 oz mushrooms, sliced shopping list
- 1.5 lbs boneless skinless chicken breasts, rinsed, patted dry, and cubed shopping list
- 2 tablespoons olive oil shopping list
- 1 jar marinara sauce, any variety shopping list
- 1/3 c. white wine shopping list
- 1.5 tablespoons parsley shopping list
- italian seasoning shopping list
- 1 bullion cube, crushed shopping list
- 1/4 c parmesan shopping list
- 3 oz pepperoni shopping list
- 2 c. mozzarella cheese (grated) shopping list
How to make it
- Preheat oven to 350F.
- Boil the pasta in water with kosher salt and olive oil while you chop the onion and slice the mushrooms.
- Put a skillet with the olive oil on the stovetop at medium, cut the chicken, and add to the skillet.
- Season chicken with italian seasoning and add garlic and onion to skillet
- Cook it through, stirring occasionally.
- Drain and rinse pasta when al dente
- Put drained pasta in a casserole dish.
- Add all the ingredients except the mozzarella.
- Stir thoroughly.
- Top the casserole with mozzarella.
- Back uncovered for 45-60 minutes or until done.
- The mozzarella should brown LIGHTLY.
