Coq Au Vin

- 2 pounds boneless-skinless chicken breast halves, cut into 1-inch peices shopping list
- 2 medium red bell peppers, cut into strips shopping list
- 2 cups merlot or other red wine shopping list
- 1 cup frozen loose-pack petite white onions shopping list
- 1 cup frozen loose-pack sliced carrots shopping list
- 2 ribs of celery, chopped shopping list
- 1 can (6 ounce) garlic tomato paste shopping list
- 1/4 cup cognac shopping list
- 2 strips precooked bacon, cut into 1 inch pieces shopping list
- 2 tablespoons zesty herb marinade mix (McCormick) shopping list
How to make it
- In a 4 to 5-quart slow cooker, stir together chicken, pepper strips,wine, onions, carrots, celery, tomato paste, cognac, bacon, and herb marinade mix until combined.
- Cover and cook on LOW heat setting for 5 to 6 hours.
- Serve with steamed potatoes and /or green beans (optional)
