    I'm please to hear you made my Filet Mignon With Bearnaise Sauce And Roasted Asparagus. If the sauce breaks and you don't want to add any additional fat, an ice cube whisked in works too :-)

    Chicken thighs in place of the breasts should work beautifully in the crockpot, but you will need a LOT less chicken stock. You know how little liquid it takes for crockpot cooking! Should work well though! Let me know how it turns out....we love it and we see it on the menus of AUTHENTIC Mexican restaurants!
