Herbed Roast Beef

- 1 beef top round or rump roast about 3 pounds leave fat on top shopping list
- 1/3 cup Dijon mustard shopping list
- 1 ½ teaspoon thyme crushed shopping list
- 1 teaspoon rosemary crushed shopping list
- 1 teaspoon seasoned pepper shopping list
- 1 teaspoon garlic powder with parsley shopping list
- ½ teaspoon seasoned salt shopping list
How to make it
- Brush all sided with mustard
- Mix all herbs and seasonings in a small bowl
- Put herbs all over roast.. Top and bottom, pushing in
- Roast at 325 in a shallow pan, FAT SIDE UP
- Roast till temp reaches 135 or 140
- Let sit for 15 to 20 minutes, covered with foil
- Slice against the grain thin
- Serve with baked potatoe wedges and a low cal veggie
- This is not that high of calorie or fat… And it’s BEEF!
- Great for the beef lovers who are on a diet!
