Christmas Cranberry Pork Loin Roast

- 1 nice boneless pork loin roast (about 5 pounds) shopping list
- 1 teaspoon salt shopping list
- 1 can whole cranberry sauce shopping list
- 3/4 cup favorite barbecue sauce shopping list
- 3/4 cup apple or pineapple juice (have always used apple) shopping list
- 1 tablespoon cornstarch shopping list
- 2 tablespoons cold water shopping list
How to make it
- In saucepan combine all ingredients except cornstarch and water
- Simmer for 10 minutes
- Mix cornstarch and water
- Add to ingredients in saucepan, stir for a few seconds
- Place pork roast in baking pan
- Pour simmered ingredients over roast
- Your choice on whether to cook the roast covered or not
- Place roast in a 325 degree oven
- I have cooked the roast uncovered until done AND
- I have cooked the roast covered until the last 20-30 minutes, then I uncover and let the outside get a little gooey and thicker, either way will be fine. It turns out the same, covered or uncovered.
- I baste it with the drippings a couple of times during cooking
- When done, remove roast from pan
- Using a little water, cornstarch, or flour, make a delicious cranberry gravy from the drippings in the pan
- You really cannot go wrong on cooking this roast. I have cooked it many times, and it always comes out just the same. Delicious with every bite!
