Scrumptious Baked Chicken Parmesan

- 4 - 6 med/large Boneless, skinless chicken breasts shopping list
- Seasoned salt shopping list
- garlic pepper shopping list
- italian seasoning shopping list
- 1 med. white onion, sliced in thin rings shopping list
- 4 - 6 pads margarine or butter shopping list
- 1 (or 2 - depending on size of chicken breasts) Jar(s) Classico garlic & ripe olive spaghetti Sauce (or Homemade tomato sauce) shopping list
- 1 tub fresh whole mushrooms, brushed clean shopping list
- 1 t garlic shopping list
- 2 bay leaves shopping list
- 2 cups shredded parmesan cheese, halved shopping list
- 1 cup shredded italian blend cheese, halved shopping list
- 1 package spaghetti noodles shopping list
- olive oil shopping list
- 2 T margarine shopping list
- kosher salt shopping list
- *SAUCE note: I always make my own sauce for spaghetti, etc, but the jarred sauce works really well in this one, tastes homemade after being combined and cooked with the other ingredients. A real time saver! shopping list
How to make it
- Preheat oven to 350
- Season both sides of chicken breasts with seasoned salt, garlic pepper, and Italian Seasoning
- Drizzle with olive oil
- Place in casserole dish and cover with lid or foil
- Bake 25 minutes
- Remove from oven
- Turn chicken
- Sprinkle half of each of the cheeses over chicken
- Lay onion rings on top of chicken
- Add pad of butter to each piece of chicken
- Smother with sauce
- Add bay leaves
- Return to oven, and bake until juices run clear - about 30 more minutes, depends on size of chicken breats (bake uncovered, or the sauce will be watery)
- While chicken is baking, bring large pot of water to boil
- Add a little olive oil, slight palmful of kosher salt and butter
- Add sphaghetti and cook according to directions
- (Most of the cooks on FN, etc. don't do this, but, I always rinse my pasta in a colander with cool water. I just don't love that starchy taste!).
- While pasta is boiling, brush mushrooms clean and saute in some evoo, butter, 1 t garlic,and white wine or white wine worcestershire.
- Remove chicken from oven when done, top with remaining cheese
- Layer noodles, chicken, sauce and mushrooms on plate.
- Serve with salad and great Italian bread with garlic & herb butter

I used to make one just like this... It was a weight watchers recipe... and it is good... you don't miss the fried chicken at all.. In fact I prefer it this way..
