Chicken In Pepper Sauce

- 2 1/2-3lbs boneless/skinless chicken(I used thighs), cut into bite sized pieces shopping list
- 2 large onions, chopped/sliced into bite sized pieces shopping list
- 8 cloves garlic, minced shopping list
- 1 lemon or 2 limes shopping list
- 2t fresh ground black pepper shopping list
- Szechuan pepper, to taste* shopping list
- 2T oyster sauce shopping list
- 1T worcestershire sauce(can sub soy sauce) shopping list
- 1/4 cup corn starch shopping list
- olive oil shopping list
- chicken stock, as needed shopping list
- kosher or sea salt* shopping list
- fresh cilantro, optional shopping list
- *I used a great Szechuan infused sea salt blend that I get from thespicelab.com. shopping list
How to make it
- In medium bowl, add chicken, lemon or lime juice, black pepper, oyster sauce, Worcestershire sauce and Szechuan pepper.
- Toss to combine well.
- Add cornstarch and toss again to coat. Set aside.
- In wok or similar stir fry pan, heat oil over medium heat until hot.
- Add garlic and cook, stirring constantly, until fragrant and soft.
- Immediately add onions and cook for another couple minutes until tender.
- Immediately add chicken and entire contents to hot pan(add a touch of the chicken stock, if needed, to keep the ingredients moving and mixing, well)
- Cook just until chicken is done.
- Garnish with fresh cilantro, if desired.
