Corn and Avocado Salsa

- 3 ears fresh corn, husks and silks removed shopping list
- 2 avocados-pelled, pitted and cubed shopping list
- 1 red onion, finely diced shopping list
- 1 red bell pepper, seeded and diced shopping list
- 1 Tbs. minced garlic shopping list
- 1 Tbs. ground cumin shopping list
- 1 tps. crushed red pepper flakes shopping list
- 1/4 cup chopped fresh oregano shopping list
- 1/3 cup red wine vinegar shopping list
- 2Tbs. olive oil shopping list
- 1/4 cup fresh lime juice shopping list
- salt and pepper to taste shopping list
How to make it
- 1. Place the corn in a lareg pot with enough water to cover, and bring to a boil. Cook until kernels are tender but crisp, about 5 minutes. Drain, and cool in cold water. Use a knife to scrape kernels from cobs.
- 2. Place kernels in a medium bowl. Stir in avocados, red onion, bell pepper, and garlic. Add cumin, red pepper flakes,and oregano. Mix in vinegar, olive oil, and lime juice. Season with salt and pepper.
